GLAZED RANCH CARROTS

We love these tasty ranch carrots. The side dish relies on packages of baby carrots and ranch dressing mix, so there's no time-consuming prep. -Marion Reed, Omak, Washington

2 pounds fresh baby carrots
1/2 cup butter, cubed
1/2 cup packed brown sugar
2 envelopes ranch salad dressing mix
Minced fresh parsley, optional

Steps:

  • Place carrots in a saucepan; add 1 in. of water. Bring to a boil. Reduce heat; cover and cook for 8-10 minutes or until crisp-tender. Drain and set aside. , In the same pan, combine the butter, brown sugar and salad dressing mix until blended. Add carrots. Cook and stir over medium heat for 5 minutes or until glazed. Sprinkle with parsley, if desired.

Braised in ginger ale and seasoned with chili powder and parsley, Alton Brown's Glazed Carrots from Good Eats on Food Network couldn't be easier.

Number Of Ingredients 6

1 pound carrots, approximately 7 medium, peeled and cut on the bias 1/4-inch thick
1 ounce (2 tablespoons) unsalted butter
Heavy pinch kosher salt
1 cup good-quality ginger ale
1/2 teaspoon chili powder
1 tablespoon chopped fresh parsley leaves

Steps:

  • In a 12-inch saute pan over medium heat, combine the carrots, butter, salt and ginger ale. Cover and bring to a simmer. Once simmering, remove the lid, stir, and reduce the heat to low. Cover again and cook for 5 minutes. Remove the lid, add the chili powder and increase the heat to high. Cook, tossing occasionally, until the ginger ale is reduced to a glaze, approximately 4 to 5 minutes. Pour into a serving dish and sprinkle with the parsley. Serve immediately.

This is great for a side dish either while your turkey or roast is cooking you could pop it in the oven, or cook on the grill in summer for a side dish. Or pop it in the microwave in a covered casserole dish. This recipe came from the Reynolds kitchen cookbook from 1997.

- 1 sheet (18x18") reynolds wrap , heavy duty
1 package(s) (16 oz.) peeled baby carrots
1/2 cup(s) orange marmalade
1/4 cup(s) packed brown sugar
1/2 teaspoon(s) ground cinnamon
1 tablespoon(s) margarine or butter

Steps:

  • Preheat oven to 450F or grill to medium-high. Center carrots on sheet of foil, set aside.
  • Combine orange marmalade, brown sugar and cinnamon in small bowl; spread over carrots. Dot with margarine or butter. Wrap and seal foil to form a packet, leaving room for heat circulation inside packet. Makes 4 servings.
  • Bake 25-30 minutes on cookie sheet in oven or Grill 35-40 minutes on medium-high in covered grill. Open ends of foil packet first to allow steam to escape. Then, open top of foil packet. Makes 4 servings

2 pounds carrots, peeled and cut into sticks
¼ cup butter
¼ cup packed brown sugar
¼ teaspoon salt
⅛ teaspoon ground white pepper

Steps:

  • Place carrots into a large saucepan, pour in enough water to reach depth of 1 inch, and bring to a boil. Reduce heat to low, cover, and simmer carrots until tender, 8 to 10 minutes. Drain and transfer to a bowl.
  • Melt butter in the same saucepan; stir brown sugar, salt, and white pepper into butter until brown sugar and salt have dissolved. Transfer carrots into brown sugar sauce; cook and stir until carrots are glazed with sauce, about 5 more minutes.

ORANGE-HONEY GLAZED CARROTS



Orange-Honey Glazed Carrots image

Number Of Ingredients 8

3 bunches carrots, peeled
2 tablespoons unsalted butter
2 tablespoons honey
Kosher salt
1 teaspoon minced fresh ginger
1 teaspoon grated orange zest
1/2 cup freshly squeezed orange juice
1/2 teaspoon freshly ground black pepper

Steps:

  • Cut the carrots diagonally in 1-inch-thick slices. You should have about 5 cups of carrots. Place 1/2 cup water, the butter, honey, 2 teaspoons of salt, and the ginger in a large saute pan and bring to a boil. Add the carrots, cover the pan, and simmer over medium-low heat for 5 minutes. Remove the lid and continue to cook for about 20 minutes, or until all the water has evaporated. You may want to raise the heat for the last 5 minutes.
  • Add the orange zest and orange juice to the pan, tossing with the carrots. Simmer uncovered for about 5 minutes, until the carrots are al dente (tender but still resistant when you bite) and the sauce glazes the carrots. Add the pepper and another teaspoon of salt, to taste.
