1/2 cup sugar
2 tablespoons all-purpose flour
2 tablespoons lemon juice
4 cups sliced peeled fresh pears
1-1/2 cups fresh or frozen cranberries
3 tablespoons finely chopped crystallized ginger
TOPPING:
3/4 cup packed brown sugar
3/4 cup old-fashioned oats
2/3 cup all-purpose flour
6 tablespoons cold butter

Steps:

  • In a large bowl, combine sugar and flour; stir in lemon juice. Add the pears, cranberries and ginger; toss to coat. Divide among six greased 10-oz. ramekins or custard cups., In a small bowl, combine the brown sugar, oats and flour; cut in butter until mixture resembles coarse crumbs. Sprinkle over fruit. , Bake at 400° for 25-30 minutes or until topping is golden brown. Serve warm.

4 pounds pears, peeled and cut into 1/2-inch slices
1 tablespoon cornstarch
1/2 cup pear nectar
2 tablespoons sugar
1 tablespoon lemon juice
TOPPING:
1 cup all-purpose flour
2/3 cup packed brown sugar
2/3 cup blanched almonds, toasted and chopped
3 tablespoons crushed vanilla wafers
4 teaspoons chopped crystallized ginger
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup cold butter
1 pint caramel and vanilla ice cream

Steps:

  • Place pears in a large bowl; sprinkle with cornstarch and toss to coat. Combine the pear nectar, sugar and lemon juice; pour over pears and toss to coat. Let stand for 15 minutes. Transfer to a greased 11x7-in. baking dish., For topping, in a large bowl, combine the flour, brown sugar, almonds, vanilla wafers, ginger, cinnamon and salt. Cut in butter until crumbly. Sprinkle over pear mixture., Bake at 375° for 50-60 minutes or until fruit is bubbly and topping is golden brown. Serve warm with ice cream.

4 medium pears cored and thinly sliced (about 9 cups)
1/2 cup dried cranberries
1/2 cup firmly packed brown sugar, divided
1/3 cup whole wheat flour, divided
3 tablespoons finely chopped crystallized ginger
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1 cup Special K® Vanilla Almond crispy rice cereal
2 tablespoons butter or margarine, melted
3 cups low-fat vanilla frozen yogurt (optional)

Steps:

  • 1. In 8 x 8 x 2-inch baking dish toss together pears, cranberries, 2 tablespoons of the brown sugar, 2 tablespoons of the whole wheat flour, ginger, cinnamon and vanilla.2. In small bowl combine remaining brown sugar, remaining whole wheat flour and KELLOGG'S SPECIAL K Vanilla Almond cereal. Drizzle with butter. Mix until combined. Sprinkle over fruit mixture. Bake at 375°F for 25 minutes or until fruit is tender.3. Serve warm with scoops of frozen yogurt, if desired.
