I first made this original recipe about 40 years ago, and it hasn't failed me yet. The thing I like about the dish is that it isn't plain. The flavorings dress up an "ordinary" vegetable, and put some real zip in any meal! This is an easy, quick dish to make, and it adds a splash of color to your table.

5 to 6 medium carrots, cut into chunks
1/4 cup butter, cubed
1 teaspoon sugar
1/2 teaspoon ground ginger
2 tablespoons minced fresh parsley

Steps:

  • In a large skillet, cook carrots in a small amount of water until almost tender; drain. Add the butter, sugar and ginger; cook over low heat until carrots are heated through and evenly coated with butter mixture. Sprinkle with parsley.

4 medium carrots, peeled and sliced
2 tablespoons honey
1 teaspoon butter
1/2 teaspoon ground ginger

2 tablespoons chopped pecans, toasted

Steps:

  • Place 1 in. of water in a small saucepan; add parsnips. Bring to a boil. Reduce heat; cover and simmer for 1 minute. Stir in carrots; cover and simmer 6-8 minutes longer or until vegetables are crisp-tender. Drain and set aside., In the same pan, combine the honey, butter, ginger and salt. Stir in vegetables; heat through. Sprinkle with pecans.

1 pound smaller organic carrots
3 tablespoons matchsticks of peeled fresh ginger
1 cup vinegar
1/4 cup turbinado sugar
1 tablespoon kosher salt

Steps:

  • Peel the carrots and cut them into batons about 4 inches long by 1/2-inch thick. Toss with the ginger and pack into clean, sterilized jars.
  • Combine 1 cup water with the vinegar, turbinado sugar, and salt in a saucepan and bring to a boil. Pour the mixture over the carrots, leaving about 1/2 inch of space at the top of each jar.
  • At this point the pickles are pretty much done but they will be at their best a day or two later. The shelf life, without hot canning processing, is about 10 days. With proper canning, it is 6 to 8 months.

3 tablespoons packed brown sugar
1/8 teaspoon ground cinnamon
1 tablespoon butter
1 tablespoon honey
1 tablespoon minced gingerroot

Steps:

  • In 1-quart microwavable casserole, place carrots and 2 tablespoons water; cover with plastic wrap. Microwave on High 7 to 10 minutes until crisp-tender. Let stand covered 5 minutes. Drain; set aside.
  • Meanwhile, in 8-inch skillet, cook pecans, 1 tablespoon of the brown sugar and the cinnamon over medium heat about 3 minutes, stirring frequently, until pecans are toasted and glazed. Remove from skillet to small bowl; set aside.

2 Tbs. unsalted butter
1 Tbs. honey
1 Tbs. finely chopped crystallized ginger
2 lb. small, thin carrots, peeled
Kosher salt and freshly ground pepper, to taste
4 Tbs. chopped fresh mint
4 tsp. fresh lemon juice
1 bunch fresh mint

Steps:

  • Preheat an oven to 400°F. Put the butter in a roasting pan just large enough to hold the carrots in a single layer and place in the preheating oven. Watch carefully to prevent burning. When the butter has melted, remove the pan from the oven and stir in the honey and crystallized ginger. Add the carrots and stir to coat them evenly. Season with salt and pepper and sprinkle with 1 1/2 Tbs. of the chopped mint. Stir again, then spread the carrots out in a single layer. Roast the carrots, stirring 2 or 3 times, until golden, glazed and tender when pierced with a fork, 35 to 45 minutes. Remove the pan from the oven and season the carrots with salt and pepper. Sprinkle evenly with the remaining 1 1/2 tsp. mint and the lemon juice and toss to coat. Make a bed of the mint sprigs on a platter and top with the carrots. Serve immediately.
