1 (750 milliliter) bottle vodka (such as Svedka®)

Steps:

  • Place ginger in a portable pitcher or container. Pour vodka over ginger; let sit for 2 days before serving.

GINGER CRANBERRY COCKTAIL (FROZEN VODKA OR GIN)

4 -inch piece ginger, peeled and roughly chopped
1/2 cup sugar
1 1/2 cups water
1 cup frozen cranberries
1 lime, juiced
2 cups vodka or gin
2 cups cranberry juice
1 cup ginger syrup, or to taste
Splash club soda
Shaved ginger

Steps:

  • For the ginger syrup: Place all syrup ingredients in a saucepan and simmer until sugar dissolves and the ginger is infused in the syrup, about 20 minutes. Strain and allow to cool fully before use.
  • For the drink: Crush the frozen cranberries in a large glass pitcher. Add the lime juice and their juiced wedges to the pitcher. Pour in the vodka, cranberry juice, and ginger syrup. Put ice in low-ball glasses and fill glasses about 2/3 full. Top off with club soda and garnish with a shaving of fresh ginger.

Steps:

  • Poke lemons with skewer or sticks to release flavor.
  • Slice ginger into small slices.
  • Place both into bottle or other appropriate container that has lid.
  • Fill jar with vodka and let sit for 2 weeks.
  • Strain and pour into decorative decanter or bottle.

1/4 cup sugar
1/4 cup water
2-inch piece fresh ginger, peeled and chopped
1/2 vanilla bean, split and seeds scraped
2 cups fresh pineapple juice
3 cups fresh pineapple juice, poured into ice cube trays and frozen
1/4 cup vanilla vodka or plain vodka
Mint sprigs, for garnish
Pineapple slices, for garnish

Steps:

  • Combine the sugar, water, ginger and vanilla bean and seeds in a small saucepan over medium heat and bring to a boil. Cook the mixture until the sugar is completely dissolved, about 1 minute. Cool at room temperature and strain.
  • Combine the pineapple juice, 1 cup of pineapple cubes, the simple syrup and vodka in a blender and blend until smooth. Pour into glasses filled with pineapple cubes, if desired, and garnish with mint and pineapple slices.

1 4-inch-long piece fresh ginger, thinly sliced lengthwise
1 bottle 750 ml vodka (about 3 cups)

Steps:

  • 1. Place ginger slices in a clean 1-quart jar. Using a wooden spoon, lightly crush ginger slices against the side of the jar. Add vodka.
  • 2. Cover jar tightly with a nonmetallic lid (or cover jar with plastic wrap and tightly seal with a metal lid). Let stand in the freezer for 4 days.
  • 3. Pour vodka through a fine mesh sieve to remove all solids. Return infused vodka to jar. Or to give as a gift, pour infused vodka into a decorative jar. Label and seal. Place jar in the freezer up to 3 months to store.

4-inch piece fresh ginger, peeled and coarsely chopped
1 cup fresh lime juice
Zest of 2 limes
3 tablespoons ginger liqueur, such as Domaine de Canton
1/2 cup cold vodka
Crushed ice
1 cup sugar

Steps:

  • Bring the sugar, 1 cup water and ginger to a boil in a medium saucepan and cook until the sugar has melted. Transfer to a glass bowl or measuring cup, cover and refrigerate until cold, at least 2 hours and up to 24 hours.
  • Put the juice, zest, 1/4 cup ginger simple syrup, ginger liqueur and vodka in a blender and blend until combined. Taste for sweetness, adding more simple syrup if needed. Add a few cups of ice and blend until slushy, adding more ice as needed. Serve in a pitcher.

3 inches piece fresh ginger, peeled and thinly sliced
2 cups water
1 1/2 cups sugar
1 lemon, zest of, finely grated
1 cup fresh lemon juice
8 cups crushed ice
2 cups vodka
8 mint sprigs, for garnish

Steps:

  • In a small saucepan, combine the sliced ginger with the water and sugar and bring to a simmer over moderate heat. Simmer for 5 minutes, then let the ginger syrup cool slightly. Transfer to a blender and puree. Strain the syrup into a large, shallow glass dish. Stir in the lemon zest and juice. Cover and freeze the lemon-ginger syrup until firm, at least 4 hours.
  • Let the frozen lemon-ginger mixture stand at room temperature for 5 minutes. Chop the mixture into large pieces. Put half of the pieces in a blender, add 4 cups of crushed ice and 1 cup of vodka and blend until slushy. Pour the vodka cocktail into 4 glasses, garnish each with a mint sprig and serve. Repeat with the remaining frozen lemon mixture, ice, vodka and mint sprigs. Serve at once.
  • MAKE AHEAD The lemon-ginger mixture can be frozen for up to 1 week.
  • NOTES
  • Cooking Club Tip: Peel ginger's thin and delicate skin by scraping down the root with a metal teaspoon. A spoon maneuvers around the nubs more easily than a pairing knife.
