Ground Turkey Lettuce Wraps with Soy-Ginger Dipping Sauce image

These ground turkey wraps remind me of the dish from Pei Wei®.

1 pound ground turkey
1 cup shredded carrot
1 cup thinly sliced green onions
1 cup thinly sliced red bell pepper
1 tablespoon soy sauce
2 teaspoons minced fresh ginger
1 clove garlic, minced
1 dash sesame oil
1 cup cooked rice
8 leaves butter lettuce, or more as needed
⅓ cup soy sauce
⅓ cup water
3 tablespoons lemon juice
1 tablespoon minced fresh ginger
2 teaspoons minced garlic
1 teaspoon white sugar

Steps:

  • Saute turkey, carrot, green onions, bell pepper, soy sauce, ginger, garlic and sesame oil in a large nonstick skillet over medium heat. Saute until turkey is evenly browned with no pink, about 15 minutes.
  • While the turkey is cooling, combine soy sauce, water, lemon juice, ginger, garlic, and sugar for sauce in a small pot over medium-low heat. Cook, stirring occasionally, until heated through, about 5 minutes.
  • Make lettuce wraps by placing about 2 tablespoons rice and 2 tablespoons meat mixture in each lettuce leaf. Roll leaves and serve with warm sauce for dipping.

Pile stir-fried turkey mince, carrots and crunchy water chestnuts into lettuce leaf cups for an Asian inspired sharing starter or light lunch

1 tbsp vegetable or sunflower oil
500g turkey mince (preferably breast)
2 carrots , finely chopped
225g can water chestnuts , drained and finely chopped
200g green beans , finely chopped
2cm piece ginger , peeled and grated
2 garlic cloves , crushed
3 tbsp soy sauce
2 iceberg lettuces , halved and leaves separated
6 tbsp sticky plum sauce or sweet chilli sauce , to serve

Steps:

  • In a large wok or frying pan, heat the oil and fry the turkey mince until browned and cooked through. Transfer to a bowl and set aside.
  • Tip the carrots, water chestnuts and beans into the pan and stir-fry for 2 mins. Add the ginger and garlic, drizzle over the soy and stir-fry for 1-2 mins more. Add the mince and stir-fry until hot. Season to taste.
  • To serve, pile the turkey and veg into lettuce leaf 'cups' and drizzle over the plum or chilli sauce.
