GINGER VODKA
Steps:
- Place the ginger in an airtight container. Add a few ounces of the vodka and muddle for several minutes. Add the rest of the vodka, cover and let sit for at least 24 hours, muddling the ginger again every few hours.
LIME-GINGER SLUSHY WITH MINT

- Combine the sugar, water, and ginger in a saucepan over medium heat. Gently simmer and stir for 2 minutes until the sugar is dissolved ¿ do not allow the syrup to boil or get dark. Remove from the heat, cover, put in the refrigerator, and let steep until cold.
- Strain the lime juice into a blender. When the syrup is cold, fish out the ginger slices and pour the syrup into the blender. Add the lime zest. Then add the chopped mint and crushed ice and process until slushy. Spoon the slushy into bowls, garnish with mint leaves, and serve immediately.
GINGER INFUSED VODKA
Smells great; tastes great. It's the basis for some lovely cocktails, especially the Ginger Pear Martini which is posted here separately.

- Combine the vodka and ginger root in a clean container. (Reserve the vodka bottle for storing the infused vodka later.)
- Seal the container and store in a cool, dark place for 3 days, shaking occasionally. After 3 days, pour the vodka through a strainer and discard the ginger solids. Return the strained, infused vodka to its original bottle.
- Store infused vodka in the refrigerator or freezer for up to 1 month.

ICY LEMON-GINGER VODKA COCKTAILS
These slushy, potent cocktails are easy to make in batches. They're also ideal for parties because most of the preparation can be done in advance. Thanks to Tyler Florence, TV Food Network!

- In a small saucepan, combine the sliced ginger with the water and sugar and bring to a simmer over moderate heat. Simmer for 5 minutes, then let the ginger syrup cool slightly. Transfer to a blender and puree. Strain the syrup into a large, shallow glass dish. Stir in the lemon zest and juice. Cover and freeze the lemon-ginger syrup until firm, at least 4 hours.
- Let the frozen lemon-ginger mixture stand at room temperature for 5 minutes. Chop the mixture into large pieces. Put half of the pieces in a blender, add 4 cups of crushed ice and 1 cup of vodka and blend until slushy. Pour the vodka cocktail into 4 glasses, garnish each with a mint sprig and serve. Repeat with the remaining frozen lemon mixture, ice, vodka and mint sprigs. Serve at once.
- MAKE AHEAD The lemon-ginger mixture can be frozen for up to 1 week.
- NOTES
- Cooking Club Tip: Peel ginger's thin and delicate skin by scraping down the root with a metal teaspoon. A spoon maneuvers around the nubs more easily than a pairing knife.
