This ginger peach cheesecake recipe is quick, easy, and SO GOOD! There's no crust to make, so it comes together in about 15 min, then oven, then fridge!

2-3 peaches, pitted and sliced
1 tsp sugar
2 tbsp fresh orange juice
3 (8 oz) packages of cream cheese
1 cup sugar
1/2 tsp orange zest
1/4 tsp salt
3 eggs, room temperature
1/4 cup peach nectar - they sell the nectar in cans at the store
2 tbsp unsalted butter
1 box (1 lb) Gingersnap cookies - you won't need the whole box. Feel free to munch on a cookie or two.

Steps:

  • Preheat oven to 325 degrees. Wrap the outside of a 9 - inch springform pan with foil. Butter the inside of the pan and line the bottom with gingersnaps, breaking as needed to fit. There will be a few gaps, it's okay.
  • For the filling, beat the softnend cream cheese, 1 cup sugar, orange zest, and salt together on medium-high speed until fluffy, about 3-5 minutes. Beat in 3 eggs, one at a time, until just combined, then beat in the peach nectar.
  • Pour the filling into the crust and bake for 1 hour to 1 hour and 15 minutes. You want the center of the cheesecake still jiggling slightly. Transfer to a rack and let cool completely, then refrigerate 8 hours or overnight.
  • The topping is simple. Toss 2-3 sliced peaches with 1 tsp of sugar and 2 tbsp of fresh orange juice until the sugar dissolves. Spoon the dressed peaches over the cheesecake.

1 1/2 cups crushed gingersnap cookies (about 30 cookies; 8 oz)
1/4 cup butter or margarine, melted
4 packages (8 oz each) cream cheese, softened
2/3 cup sugar
1/2 cup sour cream
1 tablespoon vanilla
4 eggs
1 can (15.25 oz) peach slices in heavy syrup, drained, coarsely chopped
3/4 cup peach preserves
1 tablespoon finely chopped gingerroot
2 teaspoons lemon juice

Steps:

  • Heat oven to 300°F. Wrap foil around outside of bottom and side of 9-inch springform pan to catch drips. In medium bowl, stir together crust ingredients. Press on bottom and 1 inch up side of pan.
  • In large bowl, beat all filling ingredients except eggs and peaches with electric mixer on medium speed until smooth. On low speed, beat in eggs until blended. Gently stir in peaches. Pour into crust.
  • Bake 1 hour 25 minutes to 1 hour 30 minutes or until edge of cheesecake is set but center still jiggles slightly when moved. Turn oven off; open oven door at least 4 inches. Leave cheesecake in oven 30 minutes longer.
  • Remove cheesecake from oven; place on cooling rack. Without releasing side of pan, run knife around edge of pan to loosen cheesecake. Cool in pan on cooling rack 30 minutes. Cover loosely; refrigerate at least 6 hours but no longer than 24 hours.
  • In small bowl, mix topping ingredients. Carefully spread over top of cheesecake. Run metal spatula along side of cheesecake to loosen. Remove side of pan; leave cheesecake on pan bottom to serve. Store covered in refrigerator.

1/4 cup gingersnap crumbs
1/4 cup pecan meal (finely ground pecans)
2 tablespoons salted butter
One 8-ounce block cream cheese, at room temperature
One 8-ounce tub mascarpone, at room temperature
1/4 cup sour cream
3 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
Pinch kosher salt
1 tablespoon dark brown sugar
Pinch ground ginger
Pinch ground cinnamon
2 peaches, chopped (about 2 cups)
2 teaspoons bourbon
1 teaspoon lemon juice

Steps:

  • Whisk together the ground gingersnaps and pecans in a small mixing bowl. Melt 1 tablespoon of the butter and stir into the mixture until combined. Place 1 tablespoon of the crumb mixture into the bottom of each of six 4-ounce jars. Press into an even, compact layer. Set aside.
  • To make the filling, place the cream cheese, mascarpone, sour cream, confectioners' sugar, vanilla and salt in the bowl of an electric mixer fitted with the beater attachment. Whip just until smooth, about 1 minute. Drop 3 tablespoons of filling into each jar. Give each jar a few gentle taps against the counter to even out the filling. Secure the lids on top of the jars and refrigerate to set for at least 1 hour.
  • To make the Georgia peach topping, place a large nonstick skillet over medium heat. Add the remaining tablespoon butter and heat until melted. Stir in the brown sugar, ginger and cinnamon. Cook until the sugar dissolves, about 2 minutes. Add the peaches and stir to coat. Add the bourbon and lemon juice. Cook, stirring occasionally, until the peaches are slightly softened, about 3 minutes more. Set aside to cool.
  • Remove the lids from the cheesecake jars. Dollop 1 tablespoon of peach compote on top of each cheesecake. Serve immediately or secure the lids and refrigerate until ready to serve.

1 Tbsp. granulated sugar
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
½ cup (1 stick) unsalted butter, melted, slightly cooled
12 oz. cream cheese, room temperature
6 Tbsp. sour cream or plain whole-milk Greek yogurt
6 Tbsp. powdered sugar
2 tsp. fresh lemon juice
1½ tsp. vanilla bean paste or vanilla extract, divided
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, divided
6 Tbsp. chilled heavy cream
½ cup peach or apricot jam
3 large peaches, thinly sliced
¼ cup (packed) light brown sugar

Steps:

  • Line bottom of a 9"-diameter pie dish or springform pan with a parchment paper round. Pulse 3 cups Wheat Thins (about 6½ oz.) in a food processor until finely ground. Add 1 Tbsp. granulated sugar and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt and pulse to combine. With motor running, drizzle in ½ cup (1 stick) unsalted butter, melted, slightly cooled, and process until combined and crumbly. (Alternatively, you can crush crackers in a large resealable plastic bag with a rolling pin until finely ground. Transfer to a medium bowl and stir in sugar and salt, then butter.)
  • Transfer mixture to prepared pan and press firmly into bottom and halfway up sides with a flat-bottomed measuring cup or glass. Chill crust in freezer while you make the filling, at least 30 minutes. Do ahead: Crust can be made 2 days ahead. Keep frozen.
  • Using an electric mixer on medium speed or a large whisk, beat 12 oz. cream cheese, room temperature, and 6 Tbsp. sour cream or plain whole-milk Greek yogurt in a large bowl until very smooth. Add 6 Tbsp. powdered sugar, 2 tsp. fresh lemon juice, 1 tsp. vanilla bean paste or vanilla extract, and ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt and beat until incorporated.
  • Using clean beaters or whisk, beat 6 Tbsp. chilled heavy cream in a small until stiff peaks form. Vigorously stir ½ cup peach or apricot jam in another small bowl with a spoon to loosen. Using a rubber spatula, fold whipped cream and jam into cream cheese mixture.
  • Spoon filling into chilled crust and spread into an even layer. Cover cheesecake and chill at least 8 hours and up to 12 hours. (If you are in a hurry, you can freeze 2 hours, then chill in refrigerator 3 hours).
  • Just before serving, toss 3 large peaches, thinly sliced, ¼ cup (packed) light brown sugar, remaining ½ tsp. vanilla bean paste or vanilla extract, and remaining ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt in a medium bowl. Let sit until juicy, 30-40 minutes.
  • Slice cheesecake into wedges, wiping knife clean between cuts, and top with peach mixture. Do Ahead: Cheesecake (without peach topping) can be made 3 days ahead. Keep chilled, or freeze up to 2 weeks.

This recipe comes from Bon Appetit. I've yet to make this cheesecake but one reviewer stated that she used 9 oz of gingersnaps....12 would have worked just as well to get the crust up the sides of the pan. After an 1 hour of baking, the middle was not set so she turned off the oven and allowed the cheesecake to cool, which worked perfectly. I can't wait to make it and I hope those who do enjoy it.
