8 tablespoons butter, room temperature
2 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
4 boneless, skinless chicken breasts
1 cup flour
3 eggs, beaten
2 cups panko breadcrumbs
oil, for frying
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 375°F (190°C).
  • In a bowl, add the butter, garlic, and parsley and mix until fully combined.
  • Shape butter into a log and wrap in plastic wrap. Freeze for 15 minutes.
  • On a cutting board, slice the chicken breasts in half horizontally.
  • Wrap in plastic wrap and pound until the chicken is ⅛-inch (3 mm) thick.
  • Divide the butter into fourths.
  • Season with salt and pepper. Place a portion of butter on the flattened chicken breast and roll it up, creating a log.
  • Coat the rolled chicken in flour followed, by eggs and bread crumbs. Repeat once more.
  • Cover the chicken in plastic wrap and chill for 15 minutes while the oil is heating.
  • Fry in oil for 3-4 minutes, until edges are golden brown.
  • Bake for 20-25 minutes.
  • Let rest for 5 minutes before serving.

1 stick unsalted butter, 4 tablespoons softened
1/4 cup mixed chopped herbs, such as parsley, chives, tarragon and dill
2 tablespoons minced raw cashews, plus more for sprinkling
2 tablespoons almond meal
1 tablespoon finely grated fresh ginger
Kosher salt
Pepper
Four 6 ounce skin-on, boneless chicken breasts
1 tablespoon vegetable oil
1 shallot, finely chopped
1 1/2 cups dry white wine
1 1/2 cups chicken stock

Steps:

  • In a small bowl, mash the softened butter with the herbs, 2 tablespoons of cashews, the almond meal and ginger. Season with salt and pepper. Using your fingers, loosen the skin of each chicken breast to form a pocket, then stuff with a generous tablespoon of the ginger-nut butter. Season the chicken with salt and pepper and refrigerate until the butter is firm, about 20 minutes. Preheat the oven to 400°. In a large cast-iron skillet, heat the oil. Add the chicken breasts skin side down and cook over moderately high heat until well browned, 5 minutes. Turn the breasts and cook for 3 minutes. Transfer the skillet to the oven and bake the chicken for 8 to 10 minutes, until just cooked through. Transfer to a platter and keep warm. 
 Melt 1 tablespoon of the butter in the skillet. Add the shallot and cook over moderately high heat, stirring, until softened, 1 minute. Add the wine and cook, scraping up the browned bits, until nearly evaporated, about 3 minutes. Add the stock and simmer until reduced to 1/2 cup, about 9 minutes. Whisk in the remaining 3 tablespoons of butter and season with salt and pepper. Strain the sauce into a bowl. Spoon the sauce onto plates. Set the chicken on top, sprinkle with cashews and serve.

8 boneless, skinless chicken breast halves
1 (8 ounce) package cream cheese, cut into 1/2 inch slices
1 (8 ounce) package Cheddar cheese, cut into 1/2 inch slices
1 cup milk
1 ½ cups Italian seasoned bread crumbs
½ cup grated Romano cheese
1 tablespoon minced garlic
¾ cup butter, melted
2 tablespoons lemon juice
½ teaspoon garlic salt, or to taste
½ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly coat a large, shallow baking dish with oil.
  • Butterfly each breast by slicing in half horizontally through the center, cutting almost but not completely through. Place one slice each of Cheddar and cream cheese in the center of each breast. Close again as if placing between the pages of a book. Set aside.

I almost never order a nut-crusted entree in a restaurant, as they often feature a sugary glaze or a too-sweet nut, like pecan or macadamia. That's not an issue here since we're going with buttery, subtly bitter walnuts, held on with a very savory 'nut glue,' made with a garlic and mustard base. This protective layer of deliciousness makes boneless, skinless chicken breast taste like it was just carved off a freshly roasted carcass.

3 tablespoons Dijon mustard, divided
2 teaspoons fresh thyme

Steps:

  • Mix garlic, 2 tablespoons Dijon mustard, and thyme together in a bowl to make the "nut glue."
  • Season chicken breasts generously with salt, pepper, and cayenne. Spread nut glue all over the chicken. Refrigerate until ready to use.
  • Toss walnuts over the chicken, press down firmly, and repeat on the other side to coat thoroughly. Refrigerate for 1 1/2 to 3 hours.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Coat the bottom of an oven-proof skillet with some olive oil. Place chicken breasts on top, reserving excess nuts if desired. Season with a pinch of salt and drizzle more olive oil on top.
  • Bake in the center of the preheated oven until walnuts are lightly toasted and an instant-read thermometer inserted into the thickest part of a breast reads 150 degrees F (66 degrees C), about 25 minutes.

4 tablespoons (1/2 stick) butter, softened
2 tablespoons chopped fresh tarragon, basil, chives or other herb
4 bone-in chicken breasts
Salt
freshly ground black pepper
Extra virgin olive oil as needed
Lemon wedges for serving

Steps:

  • Prepare charcoal or gas grill; heat should be medium-high and rack about 6 inches from fire; keep part of grill cool for indirect cooking. In a small bowl, use a spoon or fork to combine butter and herbs, or use a mini food processor.
  • With sharp-bladed knife, cut a 2- to 3-inch slit in deepest part of chicken. Fill with as much herb butter as possible; rub some under skin as well. Sprinkle chicken with salt and pepper and brush with oil.
  • When grill is ready, put chicken skin-side up on cool side of grill. After some fat has been rendered, turn chicken; if it flares up, move to an even cooler part of fire or turn so skin side is up again. When skin has lost its raw look and most of the fat has been rendered, after 20 minutes or so, move chicken directly over fire. Cook, turning now and then, until both sides are browned and flesh is firm and cooked through, 5 to 10 minutes longer. Serve hot, warm or at room temperature, with lemon wedges.
