GINGER-LIME GRILLED CHICKEN



Ginger-Lime Grilled Chicken image

Inspired by the flavors of Thailand, inexpensive chicken thighs are marinated in a delicious mix of ginger, fish sauce, fresh lime juice and chili garlic sauce in this flavorful weeknight dinner.

8 skin-on, bone-in chicken thighs (about 2 1/2 pounds)
1 teaspoon grated peeled fresh ginger
2 tablespoons fish sauce
1 tablespoon packed light brown sugar
2 teaspoons finely grated lime zest, plus 1 tablespoon lime juice
1 1/2 teaspoons chili-garlic sauce
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
4 firm nectarines (about 1 1/2 pounds), thinly sliced
1/2 cup torn fresh mint
1/4 cup salted roasted peanuts, chopped

Steps:

  • Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side. On a gas grill, turn off half the burners. Toss the chicken with the ginger, 1 tablespoon fish sauce and 1 teaspoon each brown sugar, lime zest, lime juice and chili-garlic sauce. Season with salt and pepper. Place the chicken skin-side up on the cooler side of the grill; cover and cook until a thermometer inserted into the thickest part registers 165 degrees F, about 20 minutes. Move to direct heat and cook, uncovered, flipping occasionally, until the skin is charred and crisp, about 5 more minutes.
  • Meanwhile, make the dressing: Whisk 2 tablespoons water and the remaining 1 tablespoon fish sauce, 2 teaspoons brown sugar, 1 teaspoon lime zest, 2 teaspoons lime juice and 1/2 teaspoon chili-garlic sauce in a large bowl. Whisk in the vegetable oil.
  • Add the nectarines, mint, peanuts and 1/4 teaspoon salt to the bowl with the dressing; toss. Divide the chicken and nectarine salad among plates.

2 pounds skin-on, boneless chicken thighs
1 cup thinly sliced red onion
2 tablespoons minced garlic
2 tablespoons minced peeled ginger
1/4 cup soy sauce
1/4 cup fresh tangerine or orange juice
Freshly ground pepper
Vegetable oil, for the grill

Steps:

  • Combine the chicken, onion, garlic, ginger, soy sauce, juice and 1 teaspoon pepper in a large resealable plastic bag. Seal and shake to coat the chicken with the marinade. Refrigerate 1 hour or overnight.

- for the marinade:
- 2 inch piece of fresh ginger - grated
- 4-5 cloves of garlic chopped
- ½ cup of italian parsley - chopped
- juice and zest of 2 limes
- 3 - 4 tbs. canola oil
- ½ tsp. salt
- ½ tsp. black pepper
- 1 tsp. ground cumin
- 1 tsp. sugar
- ½ tsp. cinnamon
- for the escarole salad:
- 1 head escarole - cleaned and torn
- 1 red onion - sliced thin
- ½ can - pitted black olives
- 2 vine ripe tomatoes - sliced
- grated romano or parmesan cheese
- salt
- black pepper
- balsamic vinegar
- olive oil

Steps:

  • For the Chicken & Marinade: Combine all of the above in a covered pot and refrigerate for at least one hour or up to overnight. Heat a large cast iron frying pan with a tablespoon of olive oil. Add the chicken pieces, skin side down, cook about 2-3 minutes before lowering heat to medium. Cook until the skin is a beautiful golden. About 10-12 minutes. Preheat Oven 350 degrees: Loosening the chicken with a spatula; flip the chicken to skin side up and transfer the pan to the oven to finish the cooking process. About another 12-15 minutes until the juices run clear. Let chicken rest at least 5 minutes before serving. For the Escarole Salad: Plate the escarole in a large serving bowl; add the red onion, tomatoes and olives; grate the Romano cheese and season with salt and pepper. 3 garlic cloves, minced

2 cups diced fresh plum tomatoes
1 cup diced green pepper

1 1/2 pounds bone-in, skin-on chicken thighs
Kosher salt and freshly ground pepper
1 tablespoon canola oil
1 bunch scallions
1 head garlic, unpeeled and halved crosswise
2 cloves garlic, peeled and finely grated
2 tablespoons fresh lime juice, plus 1 lime
1 tablespoon low-sodium soy sauce
