Steps:

  • Preheat oven to 425°. In a small bowl, mix brown sugar, soy sauce, mustard, ginger and salt until blended. Brush over fillets; sprinkle with walnuts., Transfer to a foil-lined 15x10x1-in. baking pan coated with cooking spray. Bake 12-15 minutes or until fish just begins to flake easily with a fork.

1 tablespoon wasabi powder
1 tablespoon water
1 tablespoon rice wine vinegar
1/4 teaspoon soy sauce
4 (6 ounce) salmon fillets, skin removed
1 teaspoon Emeril's Original Essence
1 cup panko breadcrumbs
1/4 cup vegetable oil
1/4 cup toasted black and white sesame seeds, garnish
steamed long-grain white rice
1/4 cup minced shallot
1 tablespoon minced ginger
2 tablespoons orange zest
1 cup dry white wine
1 cup fresh orange juice
1/2 cup heavy cream
1 cup cold unsalted butter, cut into pieces
1 teaspoon soy sauce
salt
1/8 teaspoon wasabi powder

Steps:

  • Marinade: Place the wasabi in a small bowl and slowly add in the water, whisking, to make a paste.
  • Add the vinegar and soy, and whisk well.
  • Place the salmon fillets in a glass baking dish or ziplock bag and coat evenly on both sides with the wasabi mixture.
  • Season lightly with the Essence.
  • Place the panko crumbs in a shallow dish.
  • Turn both sides of the fillets in the crumbs to coat evenly, pressing to make the crumbs adhere.
  • Set on a waxed paper lined baking sheet and refrigerate for 30 minutes.
  • MAKE SAUCE: In a medium, heavy saucepan, combine the shallots, ginger, orange zest, wine, and orange juice and bring to a boil.
  • Reduce the heat to medium-low and simmer until reduced in volume by 2/3. Add the cream and cook until reduced by 1/2.
  • Whisking constantly, add the butter a bit at a time, waiting until each is completely incorporated before adding the next piece.
  • Continue whisking until the sauce is smooth.
  • Add the soy sauce, salt, to taste, and wasabi.
  • Serve warm with the Wasabi-Crusted Salmon. (NOTE: If not being served immediately, place in a hot water bath, covered, and stir occasionally).
  • Salmon: In a large skillet or saute pan, heat the oil over medium-high heat.
  • Add the fish and cook until medium-rare, about 3 to 4 minutes per side, depending upon the thickness of the fish.
  • Divide among 4 serving plates, drizzle with the Orange-Ginger Sauce, and dust with the seeds.
  • Serve immediately with steamed rice, and pass the remaining sauce at the table.

2 tablespoons sesame oil
2 tablespoons chopped fresh dill
½ cup rice wine vinegar
¼ cup mirin (Japanese rice wine)
1 teaspoon white sesame seeds
1 teaspoon black sesame seeds
2 cucumbers, halved, seeded, and cut into very thin slices
⅓ cup minced fresh ginger root
4 green onions, thinly sliced
4 cloves garlic, minced
¼ cup peanut oil
2 tablespoons peanut oil
4 (8 ounce) center-cut salmon fillets
Kosher salt and freshly ground black pepper, to taste
2 tablespoons honey
2 tablespoons unsalted butter
2 shallots, minced
½ cup dry white wine
3 tablespoons ponzu sauce
½ cup heavy cream
½ cup cold unsalted butter, cut into 1/2-inch pieces
Kosher salt to taste

Steps:

  • To make the cucumber salad, stir together sesame oil, dill, rice vinegar, mirin, and sesame seeds in a glass or plastic bowl; add cucumber, and toss until well coated. Cover, and refrigerate for 2 hours. Let sit at room temperature for 30 minutes before serving.
  • To prepare the ginger crust, stir together the ginger, green onions, and garlic in a sturdy, metal bowl; set aside. Heat 1/4 cup peanut oil in a small saucepan over high heat until it begins to smoke. Remove from heat, and carefully stir in the ginger mixture; set aside.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat 2 tablespoons peanut oil in a large, ovenproof, nonstick skillet over medium-high heat. Season salmon fillets to taste with salt and pepper. Sear salmon until golden brown on both sides, 30 to 40 seconds per side. Transfer to a plate, and wipe excess oil from skillet. Spread honey over top of fillets, then evenly spread with reserved ginger crust.
  • Replace salmon into the skillet, and place into the oven. Bake until the center of the salmon turns opaque, 6 to 7 minutes.
  • Meanwhile, melt 2 tablespoons butter in a small saucepan over medium heat, stir in shallots, and cook until softened and translucent, about 2 minutes. Pour in white wine, then simmer until nearly evaporated. Add the ponzu sauce and heavy cream, reduce by 1/2. Remove from heat, then whisk in cold butter pieces until dissolved; season to taste with kosher salt.
  • To assemble the dish, season the cucumber salad to taste with salt. Divide the salad evenly onto four plates, spreading it out into a 4 to 5-inch circle. Drizzle the ponzu butter onto the bare area of the plate, around the cucumber salad. Place a salmon fillet, crust-side up, on top of the salad, and serve.

SALMON BURGERS WITH GINGER-WASABI MAYO AND SESAME-CRUSTED FRENCH FRIES



Salmon Burgers with Ginger-Wasabi Mayo and Sesame-Crusted French Fries image

1 sack (16 to 18 ounces) crispy-style frozen French fries
4 tablespoons sesame seeds
1 1/2 pounds fresh salmon fillet, pin bones and skin removed
2 garlic cloves, chopped
3-inch piece of fresh ginger, minced or grated
3 tablespoons tamari (dark aged soy sauce, found on the international aisle)
2 scallions, white and green parts, chopped
1/2 small red bell pepper, cored, seeded, and finely chopped
2 teaspoons sesame oil (eyeball it)
2 teaspoons grill seasoning, such as McCormick's Montreal Steak Seasoning, or 1 teaspoon coarse black pepper and 1/2 teaspoon coarse salt (eyeball it)
Coarse black pepper
1 tablespoon light-in-color oil, such as canola, safflower, or peanut oil
1/2 to 3/4 cup mayonnaise
2 tablespoons wasabi paste
Juice of 1 lime
4 sesame kaiser rolls, split and toasted
Red leaf lettuce, for garnish

Steps:

  • Preheat the oven according to the package directions for the fries.
  • Spread the French fries out on a cookie sheet and cook according to the package directions. Three minutes before the fries are finished cooking, remove them from the oven, sprinkle with the sesame seeds, toss with a spatula to coat, and return to the oven to finish cooking and to toast the sesame seeds.
  • Cube the salmon into bite-size pieces and place in a food processor. Pulse the processor to coarse-grind the salmon; it should take on the consistency of ground beef or turkey. Transfer the salmon to a bowl and combine with the garlic, three fourths of the ginger, the tamari, scallions, red bell peppers, sesame oil, grill seasoning, and black pepper. Form 4 large patties, 1 1/2 inches thick. Drizzle the patties on both sides with the oil. Preheat a nonstick skillet over medium-high heat, add the salmon burgers, and cook for 5 to 6 minutes on each side for well done.
  • While the salmon burgers are cooking, prepare the ginger-wasabi mayo. In a bowl, combine the mayonnaise, wasabi paste, lime juice, and the remaining ginger.
  • Spread the ginger-wasabi mayonnaise on the buns. Top with a salmon burger and red leaf lettuce and set the bun tops in place. Serve with the sesame-crusted French fries.

DH, myself, and my aunt had this really tasty salmon recipe for dinner last night. It is from Bon Appetit. We all enjoyed it very much and will definitely have it again. We used 2% Greek yogurt for the yogurt sauce, which I recommend. I posted the recipe as I found it in Bon Appetit, however, DH had to cook the fish longer than 3 mins on each side. Then, because he was afraid of burning the outside of the fish, he finished it in the oven until it was not translucent. He said he basically browned the fish, then finished in the oven.

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 325 degrees. Dissolve 5 tablespoons salt in 2 quarts water. Transfer 1 cup brine to bowl, stir in sesame seeds, and let stand at room temperature for 5 minutes. Submerge fillets in remaining brine and let stand at room temperature for 15 minutes. 2. Drain seeds and place in 12-inch nonstick skillet. Cook seeds over medium heat, stirring constantly, until golden brown, 2 to 4 minutes. Transfer seeds to pie plate and wipe out skillet with paper towels. Remove fillets from brine and pat dry. 3. Place scallion whites and lemon zest on cutting board and chop until whites and zest are finely minced and well combined. 4 (6 ounce) salmon fillets
1 tsp salt
1/2 tsp pepper
2 tsp garlic powder
2 tsp onion powder
1/4 cup fresh grated ginger
3/4 cup plain bread crumbs
2 Tbsp grated orange zest
2 Tbsp grated lemon zest
2 tablespoons olive oil
Buttery Ginger Sauce
3 Tbsp grated ginger
3-4 medium garlic cloves
1 green chopped onion
1/3 cup honey
1/2 cup soy sauce
1 Tbsp brown sugar
2 sticks salted butter, cubed
Juice from 1 orange
1 lb green beans, julienne
1 red pepper, julienne
1 yellow pepper, julienne
1 green onion, chopped

Steps:

  • Preheat the oven to 400 degrees F. Season both sides of salmon with salt, pepper, garlic powder and onion powder. In a separate bowl, combine the ginger, bread crumbs and zests in a bowl.
  • Sear both sides of salmon in pan with olive oil. Spread bread crumb mixture on top of filets. Roast in oven until filets are medium rare and "crust" is golden brown (about 6 - 8 minutes).
  • Buttery Ginger Sauce:
  • In a mini food processor, mince together ginger, garlic and onion. Transfer to saucepan and add honey, soy sauce and brown sugar. Bring to a boil and simmer about 8 minutes until the sauce reduces by half. Remove from the heat and stir in the butter cubes and orange juice. Strain through cheesecloth or mesh strainer.
