Healthy, Low-Fat Apple-Ginger Oat-Bran Muffins image

Breakfast muffins made with heart-healthy olive oil and oat bran, and are low in fat, while still tasting delicious. Try them!!!

1/2 cup 2% low-fat milk
1 1/2 teaspoons cider vinegar
1 cup flour
1/2 cup oat bran
1/2 cup light brown sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon salt
2 eggs, beaten
1/4 cup apple juice
2 tablespoons extra-light olive oil
3/4 cup finely chopped unpeeled apple
2 teaspoons grated fresh ginger
2 tablespoons flour
1/4 teaspoon cinnamon
1 tablespoon extra-light olive oil
2 tablespoons finely chopped unpeeled apples

Steps:

  • Heat oven to 425 degrees.
  • Line muffin cups of standard muffin pan with paper liners or spray with non-stick cooking spray.
  • In a measuring cup combine milk and vinegar; set aside.
  • In a large bowl combine 7 dry ingredients. Make a well in the center; set aside.
  • In a medium bowl, combine milk and next 5 ingredients.
  • Pour wet mixture into the well of the dry ingredients and mix until just combined and slightly lumpy.
  • Pour into muffin pan.
  • Make the streusel topping by combining flour and cinnamon. Stir in oil until mixture represents course crumbs. Stir in apple. Sprinkle over batter.
  • Bake 15-18 minutes, or until tops are golden and toothpick comes out clean.
  • Cool for 5 minutes in pan on rack. Remove from pan and cool completely.

1/2 cup carrot, shredded

2 tablespoons lime juice

Steps:

  • Preheat oven to 375 degrees F.
  • Combine ginger, 2 tbsp of lime & 1/4 of sugar in a small pot.
  • Cook over medium heat for 3 minutes or until sugar has dissolved & mixture is hot.
  • Remove from heat and cool.
  • Stir in lime zest (wait until it's cool, or else the zest will cook and you will lose the bright green colour).
  • Whisk butter with remaining 1/2 cup sugar until smooth.
  • Whisk in eggs and buttermilk until blended.
  • Combine bran, flour, salt, baking soda and baking powder in a large bowl.
  • Stir in buttermilk mixture - Do not overmix.
  • Spoon batter into 12 large well-greased or paper-lined muffin cups.
  • Fill to about 3/4 full.

  • GLAZE: Prepare glaze by combining sugar, water and lime juice in a small pot.

3/4 cup bran cereal (not flakes)
1/4 cup boiling water
2 tbsp olive oil or canola oil
1 tbsp sugar
1 egg
1/2 cup buttermilk
1 tbsp grated fresh ginger
2 tbsp raisins or other chopped dried fruit
1/2 cup unbleached flour
1 tsp baking soda

Steps:

  • Pour boiling water over the bran cereal in a mixing bowl. Stir to mix and let stand 5 minutes. Add the oil, sugar, egg, buttermilk, grated ginger and raisins to the bran and mix well. In a small bowl, mix together the flour and baking soda. Stir into the bran mixture and mix well. The batter can be kept tightly covered in the refrigerator for about a week. To bake, preheat the oven to 400 degrees. Lightly oil a muffin tin if you are making all 6 muffins or place a foil muffin cup in a custard cup if you are baking just one muffin. Don't stir the batter if it has been keeping in the refrigerator. Fill the muffin tin or muffin cups 2/3 full of batter. Bake the muffins for 12 - 14 minutes or until the top springs lightly back to the touch.
