"BISCUITS AND GRAVY" - ORANGE-GINGER BISCUITS WITH SCALLION-PORK SAUSAGE GRAVY, SESAME MUSTARD GREENS AND SOY-GLAZED BACON

Provided by Whitney Chen

Time 1h30m

Yield 4 servings

Number Of Ingredients 27

1 1/2 cups orange juice
1/2 cups rice wine vinegar
3/4 cups soy sauce
1/4 cups brown sugar
1 whole star anise
3 whole allspice
1 pound bacon, sliced
3 cups all-purpose flour, plus more for dusting
4 teaspoons sugar
1 teaspoon salt
2 1/2 tablespoons baking power
3 tablespoons butter, diced and very cold
1 cup buttermilk, plus more for brushing
1 egg
2 tablespoons grated ginger
2 tablespoons orange zest
1/2-pound breakfast sausages
2 tablespoons butter
2 teaspoons all-purpose flour
2 to 4 cups chicken stock
1 teaspoon sesame oil
2 scallions, sliced
Salt and freshly ground black pepper
2 tablespoons sesame oil
1 tablespoon butter
1 bunch mustard greens, rinsed and roughly chopped
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F. Line 2 sheet pans with silicone baking mats.
  • For the bacon: Combine the orange juice, vinegar, soy sauce, brown sugar, star anise and allspice in a small saucepan over medium-high heat and reduce by half. In the meantime,
  • spread the bacon strips onto 1 prepared sheet pan in a single layer. Bake until crispy, 10 to 15 minutes. Pour the glaze over the bacon and cook another 10 minutes.
  • For the biscuits: In a food processor, combine the flour, sugar, salt, baking powder and butter. Pulse 2 to 3 times until the butter is roughly incorporated. Set aside.
  • Combine the buttermilk, egg, ginger and orange zest. Mix the wet and dry ingredients until just combined. Dump onto a floured surface and pat down into a square, about 1 inch high. Cut into desired shapes and place the other prepared sheet pan. Brush the top of each biscuit with buttermilk. Bake until the biscuits are a light golden brown, 8 to 10 minutes.
  • While the biscuits are cooking, start the gravy. Remove the casings from the sausage links. Heat a skillet over medium-high heat and saute the sausage, breaking it up in the pan until fully cooked.
  • In the meantime, in a saucepan, melt the butter over low heat. When melted, vigorously whisk in the flour. Continue to whisk the roux on medium heat for about 3 minutes. Add 2 cups chicken stock to the roux. Continue whisking until shimmering. If the gravy is too thick, add more stock until it reaches the desired consistency. Once at the desired consistency, add the sesame oil and chopped scallions. Add the sausage and season with salt and pepper. Hold warm over low heat.
  • For the mustard greens: In a large saute pan, heat the sesame oil and butter. When the butter is melted and foamy, add the mustard greens. Cook on high heat until tender and the greens begin to crisp, 7 to 8 minutes. Season with salt and pepper.
  • To serve, split open a biscuit, top with the gravy, follow with the mustard greens and garnish with a slice of the soy-glazed bacon.

WICKLEWOOD'S GINGER NUT BISCUITS (GLUTEN FREE)

Wicklewood's Ginger Nut Biscuits (Gluten Free) image

I was so pleased with these tasty classic biscuits. The texture is just like that of a non gluten free Ginger Nut, and as any coeliac knows it's the texture that usually suffers in adapting recipes. The recipe calls for 1lb 4oz of flour, however, this system doesn't like mixing pounds and ounces,,,hence "20oz flour."For a more authentic touch sprinkle some sugar on the dough just before baking.

NECTARINE-RASPBERRY COBBLER WITH GINGER BISCUITS

Nectarine-Raspberry Cobbler With Ginger Biscuits image

A cobbler is a traditional baked dish of sweetened fruit with a biscuit-dough topping. It's best to bake the fruit untopped for a half-hour or more before adding the raw disks of dough - some say they look like cobblestones - and baking them for another 15 minutes. It is the ideal home dessert, all bubbly fruit and golden crisp. This particular biscuit dough is studded with pistachios and candied ginger. Let it cool a bit before serving, with whipped cream, crème fraîche or ice cream.

Time 1h30m

Yield 10 to 12 servings

Number Of Ingredients 17

3 cups/385 grams all-purpose flour, plus more for dusting
1/4 cup/50 grams granulated sugar
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
4 tablespoons/55 grams cold unsalted butter (1/2 stick), cut into small cubes
1/4 cup/28 grams coarsely chopped pistachios
1 cup/170 grams candied ginger, diced small, about pea-size
2 eggs, beaten
1 cup/240 milliliters heavy cream or half-and-half, plus more for brushing tops
1 tablespoon granulated sugar, for sprinkling (optional)
10 cups/about 1 kilogram thickly sliced pitted nectarines (8 to 10 nectarines)
3/4 cup/165 grams light brown sugar
Zest and juice of 1 small lemon (about 2 to 3 tablespoons)
1/4 teaspoon grated nutmeg
1/4 cup/30 grams all-purpose flour
2 pints/490 grams raspberries

Steps:

  • Heat oven to 375 degrees. In large mixing bowl, combine flour, sugar, baking powder, baking soda and salt. Stir together, then add butter pieces and work into flour mixture with fingers or fork until mixture looks like moist sand. Stir in pistachios and candied ginger.
  • Combine eggs and cream and pour over flour mixture, stirring briefly until dough comes together. Turn dough out onto a work surface lightly dusted with flour. Knead dough for a minute or so, then wrap and refrigerate.
  • Make filling: Add nectarine slices, brown sugar, lemon zest and juice and nutmeg to a large mixing bowl. Toss with your hands, to ensure seasoning is distributed well. Sprinkle with flour and toss one more time. Fold in raspberries, taking care not to smash them.
  • Transfer fruit mixture to a 9-by-13-inch baking dish, cover with foil and bake for about 30 minutes, until fruit and juices are bubbling.
  • Meanwhile, roll out dough to a rough rectangle about 3/4-inch thick. Using a 3-inch biscuit cutter or a water glass whose rim has been dipped in flour, cut out as many biscuits as possible. Roll out scraps, and continue cutting out rounds until you have 12 biscuits. Place biscuits rounds on a plate, and refrigerate them for a few minutes.
  • Remove baked fruit from oven and arrange biscuit rounds evenly over the top. Brush each biscuit with about 1 teaspoon cream and sprinkle with a pinch of sugar.
  • Bake, uncovered, for 12 to 15 minutes, until biscuits are well browned. Let cool slightly before serving.

Brush with reserved egg mixture and sprinkle top with remaining 2 Tbsp. oats and 4 tsp. sugar.

1/4 cup fat-free vanilla yogurt
2 tablespoons confectioners' sugar
1 tablespoon finely grated fresh ginger, including juices
2 teaspoons minced crystallized ginger
1/2 teaspoon organic coconut extract
1/4 teaspoon almond extract
3 cups peeled, pitted and diced fresh mango (about 2 mangoes)
1 cup trimmed and sliced fresh strawberries
1/2 cup fresh blueberries
3 tablespoons fresh lemon juice
3 tablespoons cornstarch
Scant 1 tablespoon sugar
1/4 cup chopped fresh mint leaves
Cooking spray
1 egg beaten with 1 teaspoon cold water, for egg wash
3 tablespoons toasted sliced almonds
Fresh mint sprigs, for garnish, optional

Steps:

  • Preheat the oven to 450 degrees F.
  • For the biscuits: Add both flours, sugar, baking powder, chai spice, cinnamon, nutmeg, allspice and salt in the bowl of a food processor. Sprinkle with both extracts and pulse to combine. Add the butter and shortening and pulse 6 to 8 times until the mixture resembles coarse meal. Add the ice water, 1 tablespoon at a time, pulsing until the dry ingredients are just moistened. Remove the dough from the processor bowl, flatten into a disk shape, wrap tightly with plastic wrap and refrigerate for 30 to 40 minutes.
  • For the cream: Whip the cream cheese and yogurt in a medium bowl with an electric mixer until light and fluffy. Beat in the sugar, fresh ginger, crystallized ginger and both extracts until evenly combined. Cover with plastic wrap and refrigerate until serving.
  • For the cobblers: Add the mangoes, strawberries, blueberries, lemon juice, cornstarch, sugar and mint to a large bowl and stir to combine. Lightly spray 6 (8-ounce) baking bowls with cooking spray. Evenly divide the fruit mixture into the bowls and arrange on a rimmed baking sheet.
  • Roll out the reserved dough, on lightly floured marble or a flat surface, to 1/4-inch thickness. Cut the dough into 6 rounds or decorative shapes slightly smaller than the width of the bowl. Put 1 piece of dough on top of each cobbler. Brush the dough evenly with egg wash.
  • Bake the cobblers for 20 minutes, then reduce the heat to 350 degrees F. Bake until the pastry is lightly browned and the fruit is tender and bubbling on the edges, about 5 to 7 minutes longer. Remove from the oven and transfer the bowls to a wire rack. Let cool for 20 to 25 minutes before serving.
  • Dollop ginger cream on each cobbler and sprinkle with toasted almonds. Garnish with mint sprigs, if desired, and serve.
