Asparagus and Chicken Salad With Ginger Dressing image

Asparagus takes easily to many kinds of seasonings, so after you've tired of having it plain with butter or homemade mayonnaise, try this spicy dressing laced with ginger and chiles. Adding smoked chicken is a nice way to make a more substantial first course or light lunch. You can purchase smoked chicken at better butcher shops or online, but equally good is grilled chicken at room temperature, or cold poached chicken. I sometimes substitute lightly smoked ham or smoked slab bacon, simmered until tender.

Number Of Ingredients 17

1 large shallot, finely diced, about 2 tablespoons
3 tablespoons rice wine vinegar
2 tablespoons dark brown sugar
1 tablespoon Dijon mustard
Salt to taste
Generous pinch of cayenne
1 tablespoon grated ginger
2 garlic cloves, minced
2 teaspoons sesame oil
1/4 cup vegetable oil
1 pound asparagus
Salt and pepper
1 serrano chile, thinly sliced (optional)
1/2 cup roasted peanuts, crushed
3/4 pound smoked chicken, sliced
1 large lime, halved
Basil, mint and cilantro leaves, about 1/2 cup total

Steps:

  • To make the vinaigrette, put shallots in a small bowl. Add vinegar, sugar, mustard, salt and cayenne and let steep for 5 minutes. Add ginger and garlic, then whisk in sesame oil and vegetable oil. Taste and adjust seasoning.
  • Bring a large saucepan of salted water to a boil. Snap off the tough end of each asparagus spear, then cut each spear into 2-inch lengths. Cut thicker pieces in half lengthwise as necessary so all cut pieces are approximately the same size. Place asparagus pieces into boiling water and cook for 1 minute. Drain and cool under running water. Blot dry.
  • To make the salad, put asparagus in a salad bowl. Season with salt and pepper. Add chile, if using, and crushed peanuts. Dress with half the vinaigrette and toss to coat.
  • Arrange dressed asparagus on a platter or on individual plates. Tear chicken slices into strips and scatter over asparagus. Drizzle a little more vinaigrette over the salad and give it a good squeeze of lime. Garnish with basil, mint and cilantro leaves and serve immediately.

Succulent, fat, fresh asparagus is thinly sliced by hand for this raw salad - easier than you'd think, and safer than using a mandoline. It's very refreshing and bright tasting.

2 tablespoons rice vinegar
1 tablespoon grated ginger
1 teaspoon minced garlic
1 tablespoon light brown sugar
1 jalapeño pepper, seeds removed and finely diced (optional)
2 teaspoons toasted sesame oil
Salt and pepper
1 1/2 pounds fat asparagus
Salt and pepper
1/2 cup slivered scallions
Squeeze of lime juice, to taste
Mint leaves, for garnish
Cilantro sprigs, for garnish
1 tablespoon toasted sesame seeds
1 tablespoon black sesame seeds

Steps:

  • Make the dressing: In a small bowl, stir together rice vinegar, ginger, garlic and brown sugar. Add jalapeño and sesame oil, then season to taste with salt and pepper.
  • Snap or cut off the tough bottoms of each asparagus spear. With a vegetable peeler, peel each tough-skinned spear, starting halfway down from tip and peeling toward bottom end.
  • Cut the asparagus at a long diagonal into very thin slices (not paper thin - about the width of a thinly sliced onion). Place asparagus slices in a wide salad bowl. Season with salt and pepper and toss lightly. Add the ginger dressing and toss to coat well. Taste and adjust. Add scallions and lime juice and toss again.
  • Garnish with mint leaves and cilantro sprigs. Sprinkle with sesame seeds and serve.

1 /12 c wheatberries
2 c green onions
1 small bunch of radishes trimmed & quartered
1/4 c chopped peeled fresh ginger
3 Tblsp rice vinegar
2 Tblsp soy sauce
2 chopped garlic cloves
1/2 c peanut oil
1/4 c sesame oil
2 8 oz tuna steaks

Steps:

  • cook asparagus in boiling salted water 3 minutes using tongs-tranfer asparagus to bowl ice water & cool add wheatberries to salted water & simmer until tender not mushy approx 55 minutes Drain Tranfer to a large bowl Pat aspargus dry w/paper towels & cut into 1/2 inch pieces Mix asparagus, green onions, & radishes to wheatberries Combine ginger, soy sauce, galic, vinegar & oils Saute tuna steaks in 1 T peanut oil until done to liking 3-5 minutes/side Cut tuna into 1/2 inch pieces & mix into wheat berries mix Serve w/cilantro sprigs

Rice Cake:
4 Tbs. sugar
4 Tbs. rice wine vinegar
1 cup Japanese rice
1 cup water
1 pinch salt
2 Tbs. minced ginger
Salad:
1 lb. asparagus
1/4 lb. shiitake mushrooms, stemmed
1 Tbs. butter
2 shallots, minced
1 bunch chives, diced
2 1/4 cup green onions, sliced
2 tomatoes, peeled and diced
2 limes, juiced
1/4 cup XVO oil
Chili Aioli:
1/2 onion
1/2 celery stalk
1-inch piece ginger
1/2 lime, juiced
2 Tbs. sesame oil
2 Tbs. chili sambal
1 Tbs. mirin
1/4 cup soy sauce
1/4 cup rice vinegar
1 egg
Salt
Grapeseed oil
Tuna:
2 sheets nori (dry seaweed)
2 7 oz. tuna fillets (look for yellow fin #1 quality)
Tempura Batter:
1 cup flour
8 oz. soda water
pinch of baking soda
1 Tbs. sea salt
2 Tbs. sesame seeds
2 cups canola oil
1 cup soy sauce

Steps:

  • Rice Cake: Bring sugar and vinegar to a boil in a small pan. Remove and let cool. Wash rice in running water for 5 minutes. Transfer to a pot with 1 cup water, salt, and ginger. Bring rice to a boil then turn down to the lowest flame and cover. Cook rice until tender but a slight bite is left. Transfer rice to a wooden bowl and mix with sugar/vinegar mixture. Let cool slightly and press the rice into four small cakes either with a mold or by hand. Sauté rice cakes in 1 Tbs. peanut oil over high heat until crispy. Transfer cakes to 350-degree oven to heat through. Salad: Peel and blanch asparagus in boiling salted water for 2 minutes, then quickly plunge them into ice water to stop the cooking. Quickly sauté mushrooms in hot pan with butter and set aside to cool. Trim asparagus to make all equal size and cut in half. Mix asparagus with shallots, chives, sliced green onions, and tomatoes. Season mixture with lime juice, olive oil, salt, and black pepper. Chili Aioli: Combine all ingredients in blender except oil. Blend until smooth and strain through chinois. Discard solids. Add back into blender and drizzle oil in slowly. Tuna: Cut seaweed paper to fit the exact size of tuna steak and wrap it around the fish. Tempura Batter: Whisk together flour, soda water, baking soda, sea salt, and sesame seeds. Heat oil in a small deep fryer to 350 degrees. Dip nori-wrapped tuna in soy sauce, then dredge in flour mixture. Fry for 2 minutes. Drain on paper towels and season with fine salt. To Finish: Arrange salad on side of plate. Slice tuna thinly and place next to salad. Drizzle some of the chili sauce around and serve.

I just love asparagus! Friends moved here (Florida) from the Dakotas and told me they picked it out of the ditches there!! How wonderful...I'd be wading through ditches everyday! I think its a "special" veggie, something I haven't ever seen grown here. This is a nice Asian themed asparagus salad. Chilling time is not included in prep and cooking time.....You will need to chill at least an hour and a half.

3/4 cup rice vinegar
1 1/2 tablespoons gingerroot, minced
2 tablespoons sugar
1 lb fresh asparagus
2 1/4 tablespoons vegetable oil
1 1/2 tablespoons dark sesame oil (reduce if you are not a fan of sesame oil)
1 garlic clove, minced
1 teaspoon soy sauce
1/2 teaspoon salt (optional)

Steps:

  • Combine the vinegar and gingerroot in a small saucepan; bring to a boil. Boil 7 minutes or until the liquid is reduced by half. Remove from the heat, and stir in the sugar. Set aside.
  • Snap off tough ends of the asparagus. If you want to, remove the scales from the sides of the asparagus stalk -- I don't.
  • Place the asparagus in a large skillet and add cold water to cover. Bring to a boil and immediately remove from heat. Plunge the asparagus into cold water (with ice) to stop the cooking process. Drain the water off the asparagus.
  • Arrange the asparagus on a serving platter.
  • Combine the vegetable oil and next 4 ingredients, stirring well; drizzle over the asparagus. Cover and chill at least 30 minutes before adding the vinegar mixture. One hour before serving, drizzle the vinegar mixture over the asparagus. Chill for one more hour.
