Giant Cauliflower Cheese Puff image

Recipe comes from Molly Katzen's Sunlight Cafe. Keep this recipe in mind when you need a noteworthy brunch dish but you are not in the mood to fuss. All this requires is some cooked cauliflower and onions, and an egg mixture that gets whipped in the blender. Then put into the oven. Leftovers can be stored up to 5 days in a tightly covered container in the refrigerator and and reheated in a 350 degree oven or a microwave. The salt amount I am UNSURE of after the CHANGEOVER it said 3/4 t. salt but when I researched in online it said 1/4 t. so have changed it to 1/4 t. You can also SUBSTITUTE broccoli for the cauliflower and sharp cheddar for the goat cheese.

3 tablespoons butter
1 tablespoon olive oil
2 cups onions, chopped
1/4 teaspoon salt
5 cups cauliflower florets
6 eggs
1 cup milk
1 cup all-purpose flour
5 ounces garlic and herb goat cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Lightly spray a 9 by 13 inch pan with nonstick spray, then add the butter.
  • Place the pan in the preheated oven for a minute or so to melt the butter, then take it out and carefully tilt it in all directions to let the butter coat the bottom.
  • Set aside.
  • Place a 10 inch skillet over medium heat and wait a few minutes.
  • Add the olive oil, wait about 10 seconds, then swirl to coat the pan.
  • Add the onions, saute` for 5 minutes, then stir in the salt and the cauliflower.
  • Saute` over medium heat for 8 to 10 minutes, or until the cauliflower is just tender.
  • Transfer this mixture to the prepared pan.
  • While the cauliflower is cooking, combine the eggs, milk, flour, and cheese in a blender.
  • Whip into a smooth batter and pour it over the cauliflower mixture in the pan.
  • Bake in the center of the oven for 35 to 40 minutes, or until puffed and golden.
  • Serve hot or warm, cut into squares.

Quick cauliflower cheese image

Everyone's favourite side dish, using mature cheddar and a hint of onion for extra flavour - the perfect accompaniment to a roast

100g mature cheddar, grated
50g fresh white breadcrumbs
handful flat-leaf parsley, roughly chopped
1 large cauliflower, cut into florets
1l full-fat milk, plus a splash
1 small onion, halved
85g butter
85g plain flour

Steps:

  • In a small bowl, mix the cheese with the breadcrumbs and parsley, and set aside. Put the cauliflower florets in a large saucepan, cover with water and a splash of milk (this stops the cauliflower smelling) and bring to the boil. Cook for 2-3 mins until tender, then drain.
  • In a separate saucepan, pour in the milk, add the onion and some seasoning, bring to the boil, then take off the heat. In a small saucepan, make a roux by melting the butter slowly, then adding the flour, stirring to make a paste. While still over a low heat, add the boiled milk, discarding the onion. Using a whisk, beat the milk together with the roux and bring to the boil. Cook for 2 mins until the sauce is lovely and thick - make sure the heat is not too high, otherwise it will catch on the bottom and burn.
  • Heat oven to 200C/180C fan/gas 6. Transfer the cooked cauliflower to a casserole dish, pour over the sauce and top with the cheese and breadcrumb mix. Bake in the oven for 20 mins until golden and bubbling.

Number Of Ingredients 13

1 large cauliflower, cut into large florets
2 tbsp olive oil
pinch of cayenne pepper
40g parmesan, finely grated
50g butter
40g plain flour
600ml whole milk
1 tsp mustard powder or English mustard
1 tsp yeast extract (optional)
150g extra mature cheddar, most grated, some cubed
grating of nutmeg
3 tbsp dried breadcrumbs (panko work well)
2 tbsp crispy onions

Steps:

  • Heat the oven to 210C/190C fan/gas 7. Tip the cauliflower into a shallow baking dish and toss with the oil, cayenne and a pinch of salt. Scatter with half the parmesan and roast for 20 mins until crisp and golden. Toss the florets, then sprinkle with more (but not all) of the parmesan and roast for 10 mins more until starting to char a little. Set aside.
  • While the cauliflower is roasting, make the sauce. Heat the butter in a saucepan over a medium heat until frothy. Scatter over and stir in the flour, cooking for 3 mins until you have a sandy paste, then add the milk, a splash at a time, keeping it at a simmer and whisking between each addition until smooth. Once all the milk has been added, continue to cook the sauce gently, stirring occasionally for 15 mins until thickened and silky, then stir through the mustard powder and yeast extract, if using. Remove from the heat and add the grated cheddar, a handful at a time, until you have a thick, cheesy sauce. At this point stir in the cubed cheese and season with nutmeg and salt, if needed.
  • Pour the sauce over the cauliflower in the baking dish to fully coat it. Mix the breadcrumbs with the remaining parmesan, then scatter this over the cauliflower cheese and bake for 20 mins. Sprinkle with the crispy onions and bake for a further 10 mins until bubbling and deep golden. Serve in warm and melting scoops from the baking dish.

1 head cauliflower
3 ounces cheddar cheese or 3 ounces muenster cheese, grated
1 slice challah, shredded
2 teaspoons prepared mustard
1 tablespoon mayonnaise
2 eggs, well beaten
1 dash salt
1 dash pepper

  • Place in a 2-quart pot with 1 inch of boiled water and cook until soft, about 10-15 minutes.

1 medium cauliflower
1/4 cup butter
2 teaspoons flour
1 cup milk (or milk & water in which cauliflower has been cooked)
salt & pepper
1/4 cup fine breadcrumbs
3 eggs, separated
1 cup grated cheddar cheese

Steps:

  • Preheat oven to 400 degrees.
  • Wash cauliflower; remove stalk end.
  • Cut into quarters; remove hard stalk.
  • Divide into florets; cook in boiling salted water until tender; drain.
  • Heat butter in pan.
  • Add flour; stir over low heat 2 minutes.
  • Remove from heat.
  • Add milk gradually; stir until smooth.
  • Return to heat; stir until boiling.
