Inspired by Costco's famous chicken bake, we came up with a hand-held version that's easy to make at home. The cheesy bacon-filled pockets taste great hot from the oven, but can also be made in advance and reheated wrapped in foil in a 400 degrees F-oven for 8 to 10 minutes.

1 cup shredded mozzarella
1 cup shredded provolone
1/4 cup grated Parmesan
2 cups skinless chopped rotisserie chicken meat
4 slices cooked and crumbled bacon
2 tablespoons chopped fresh chives
1/3 cup good-quality prepared creamy Caesar dressing
Freshly ground black pepper
1 pound pizza dough, at room temperature
Extra-virgin olive oil, for the dough
1 tablespoon unsalted butter, melted and cooled

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment. Combine the mozzarella, provolone and Parmesan in a large bowl and toss to combine. Transfer 1/2 cup of the cheese mixture to a small bowl and reserve.
  • Add the chicken, bacon and chives to the large bowl with the cheese. Drizzle with the Caesar dressing and season with several grinds of black pepper. Toss until everything is combined and well coated.
  • Divide the pizza dough into 4 equal pieces and rub lightly with olive oil. Roll one piece into a 7-by-9-inch rectangle. With one of the long sides closest to you, arrange a quarter of the filling in a log across the center of the rectangle, leaving an inch of space at each side edge. Fold in the sides, then fold the bottom piece of dough over the filling and roll up to enclose it, trimming away any excess dough. Pinch the seams together to seal well. Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining dough and filling, leaving about 2 inches between each on the baking sheet.
  • Brush the rolls all over with the melted butter and sprinkle with the reserved cheese mixture. Bake until the rolls are golden and the cheese topping is crusty and browned, 25 to 30 minutes. Let cool 5 minutes before serving.

The unbelievable flavour in this lovely dish is the result of blending chicken, wine, sour cream, lemon, mushrooms, onions, olives and cheese. Excellant served with mashed potatoes, noodles or rice.

4 chicken breasts, skinned,boned
3 tablespoons flour
1 teaspoon garlic, roasted
1/2 teaspoon oregano leaves, dried
1/4 teaspoon paprika

4 green onions, thinly sliced
8 mushrooms, large,thinly sliced
1/4 cup green olives, large,sliced coarsley
1/2 cup white wine, dry
1/2 cup sour cream
1 tablespoon tomato paste
1/2 lemon, juiced
1/2 cup gruyere cheese, grated (may substitute swiss)

Steps:

  • Preheat oven to 350 degrees, wash and dry chicken breasts.
  • Combine flour, oregano, garlic, paprika, salt and pepper together.
  • Dust the chicken with the flour mixture.
  • In large pan, heat oil and brown chicken.
  • In 9 x 13" pan arrange browned chicken breasts and sprinkle with onions, mushrooms, olives and lemon juice.
  • In small bowl stir together wine, sour cream, tomatoe paste, salt and pepper.
  • Pour wine mixture over chicken.
  • Bake in 350 degree oven for 35 minutes.
  • Add 1/2 cup grated gruyere cheese and bake 10 minutes longer, uncovered.
  • Lovely served with mashed potatoes, steamed asparagus and fresh baked dinner rolls.

This chicken Parmesan is done casserole style (so, no breading or frying!), but still offers up that irresistible combination of tender chicken, crunchy/cheesy coating, and flavorful sauce.

2 tablespoons olive oil
2 cloves garlic, crushed and finely chopped
¼ teaspoon crushed red pepper flakes, or to taste
6 skinless, boneless chicken breast halves
2 cups prepared marinara sauce
¼ cup chopped fresh basil
1 (8 ounce) package shredded mozzarella cheese, divided
½ cup grated Parmesan cheese, divided
1 (5 ounce) package garlic croutons

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat the bottom of a 9x13 inch casserole dish with olive oil, and sprinkle with garlic and hot red pepper flakes.
  • Arrange the chicken breasts in bottom of the dish, and pour marinara sauce over chicken. Sprinkle basil over marinara sauce, and top with half the mozzarella cheese, followed by half the Parmesan cheese. Sprinkle on the croutons, then top with the remaining mozzarella cheese and remaining Parmesan cheese.
  • Bake in preheated oven until cheese and croutons are golden brown and the chicken is no longer pink inside, about 35 minutes to an hour, depending on the shape and thickness of your chicken breasts. An instant-read thermometer inserted into the thickest part of a chicken breast should read at least 160 degrees F (70 degrees C).

The downfall of most baked chicken breast recipes is the long time in the oven that dries out the lean meat before it can fully cook through. We've solved that problem with a couple of secret weapons. The first is white wine added to the baking dish, which creates steam. (While we think it's worth using wine, you could substitute stock or even water.) The second is a piece of parchment paper placed directly on top of the chicken to lock in the moisture during baking. The result is the best boneless, skinless chicken breasts that are plump and juicy, with a minimum of hands-on time. A bunch of parsley and lemon slices infuse the dish with fresh flavor and the seasoning is neutral enough that the chicken can be used for a variety of different meals. Serve it alongside vegetables and grains, shredded into soup, spiced up for tacos or chopped on top of salad. Feel free to switch up the herbs and citrus if you have leftovers in the fridge to use up.

1 small bunch parsley
1 lemon, sliced 1/4 inch thick
1 cup dry white wine, such as Sauvignon Blanc
Four 6-ounce boneless, skinless chicken breasts
1 tablespoon olive oil
1/4 teaspoon paprika
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the parsley in the center of a 9-by-13-inch baking dish and top with the lemon slices. Pour the wine around the parsley. Brush the tops of the chicken with the olive oil and season with the paprika, 1 teaspoon salt and a few grinds of black pepper. Arrange the chicken breasts on top of the lemon slices. Cut an 8-by-10-inch piece of parchment and place it on top of the chicken.
  • Bake until the chicken registers 165 degrees F on a digital thermometer, 40 to 45 minutes. Let sit for 5 minutes before serving. The chicken can be refrigerated in an airtight container for up to 5 days.
