GREEN BEANS GERMAN STYLE
My mother-in-law introduced me to this quick down-home dish almost 50 years ago when I was a new bride. The tender green beans are topped with diced bacon and a classic sweet-sour glaze. Guests always ask for the recipe. -Vivian Steers, Central Islip, New York

- Place beans in a saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain and set aside. , In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 1 tablespoon drippings. In the same skillet, saute onion in drippings until tender., In a small bowl, combine the cornstarch, salt, mustard and water until smooth. Stir into onion. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in brown sugar and vinegar. Add the beans; heat thought. Sprinkle with bacon.

- Place butter, cabbage, apples, and sugar into a large pot. Pour in the vinegar and water, and season with salt, pepper, and clove.
- Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the cabbage is tender, 1 1/2 to 2 hours.

MINESTRA (CABBAGE & BEANS)
This recipe is one from childhood. My grandmother made it with Savoy cabbage. I make it with any green cabbage. My husband is a carrot lover and I will occasionally add a few to the mix. It's a nice flavor. I've also used purple cabbage for this and mixed it with cooked rice in the end to make a filling meal.

Steps:
- Wash and cut cabbage head.
- I usually quarter, then cut in half again.
- Be sure core is removed and discarded.
- In large pot, sautee garlic in hot olive oil until tender.
- Add cabbage, chicken broth, salt and pepper.
- Bring to a boil.
- Immediately reduce to a simmer and cover.
- After about 45 minutes, add beans, then re-cover pot.
- Cook until everything is heated and tender throughout and all flavors have blended.
- You can add hot pepper flakes when serving, if desired.
- We also like to drizzle a bit of fine quality olive oil on the top of our bowls before eating.
- Enjoy with good crusty bread and you have yourself a healthy meal!

GERMAN CABBAGE AND POTATOES
Typical German comfort food. Use either Savoy Cabbage or simple green cabbage. Usually it is served with fried sausages or pork chops or topped with sliced heated kielbasa . - The original recipe calls for caraway instead of cumin.

Steps:
- NOTE: My mother cooks this with 2 cups water and mashes the potatoes and cabbage after cooking, before adding the bacon. Though this tastes good it does not look very tempting. :).
- FOR CABBAGE: Remove outer dark or dry cabbage leaves, cut cabbage into eights and cut the core away.Cut cabbage crosswise in 1/8 inch strips. Wash and drain cabbage, removing any thick "ribs".
- Wash, peel and cut potatoes in 3/4 inch dice.
- Put potatoes, salt, cumin, bay leaf and water in a large pot, cover and boil potatoes for 15 minutes until just tender.
- Add cabbage, stir thoroughly and boil over medium heat about 7 - 10 minutes, stirring occasionally. You want the cabbage to have some bite and most of the liquid to have cooked off. You might need to add a little hot water if all liquid has cooked off before the cabbage is done.
- Depending on the size of your pot it might be necessary to add the cabbage in batches. Cover the pot between batches and let reduce volume before adding rest of cabbage.
- FOR BACON MIXTURE: When potatoes are almost done heat oil in a small pan over medium heat, fry bacon until pale golden, add onions and cook until bacon is crisp and onions golden, about 12 minutes. Remove from heat and pour off most of the fat.
- TO ASSEMBLE: The cabbage should be only moist. If there is too much liquid raise heat and cook it off, stirring often. Remove from heat, add cayenne, lemon juice and most of bacon mixture. Stir to mix and adjust seasoning.
- To serve: Top cabbage with rest of bacon mixture (and parsley)as garnish.
