SUPER EASY BREAKFAST SAUSAGE LOAF

I was searching for a quick and easy breakfast for a group of picky youngsters and came up with my own super easy breakfast sausage loaf from ingredients normally found in any fridge. This can be as basic as dinner rolls/sausage/eggs/cheese...or jazz it up a bit with onions and green peppers. This can be put together the night before, frozen or made on the fly.

1 serving cooking spray
1 pound bulk pork sausage
¼ cup brown sugar
1 tablespoon butter
4 large eggs large eggs
2 tablespoons milk
1 pinch salt and ground black pepper to taste
1 (8 ounce) package refrigerated crescent rolls
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Heat a large skillet over medium-high heat and stir in the sausage and brown sugar. Cook and stir until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Transfer sausage to a bowl; wipe the skillet clean.
  • Melt the butter in the clean skillet over low heat. In a bowl, whisk together the eggs, milk, salt, and black pepper. Pour the eggs into the skillet. Allow the eggs to cook undisturbed until they begin to set, then gently stir the eggs until the curds are separate and set but not dry, 5 to 7 minutes.
  • Roll out the crescent roll dough, and line the bottom and sides of the prepared pan with 3/4 of the dough. Layer the sausage, scrambled eggs, and Colby-Monterey Jack cheese into the pan, then top with the remaining 1/4 of dough. Pinch the corners and sides of the dough together.
  • Bake in the preheated oven until golden brown, 25 to 30 minutes.

Try this sauerbraten style meat loaf. Great with a serving of mashed potatoes on the side.

2 eggs, beaten
1 c gingersnap cookies, crushed
1/2 c onion, minced
3 Tbsp dried parsley flakes
3 Tbsp balsamic vinegar
1 tsp salt
1/2 tsp caraway seeds, crushed
1 lb lean ground beef
1 lb pork sausage in a roll
1 large tomato, thinly sliced

Steps:

  • 1. In a large bowl, combine eggs, gingersnap crumbs, onion, parsley, balsamic vinegar, salt and caraway seed.
  • 2. Add the ground beef and pork sausage and mix well. Gently press the meat mixture into a loaf pan; preferably one with a insert to keep the grease at the bottom of the pan. Top with the sliced tomato.
  • 3. Bake meatloaf at 400 degrees F for 60-70 minutes or until meatloaf registers 160 degrees. Remove from the pan and cut into slices.

1-1/2 cups shredded part-skim mozzarella cheese
2 large eggs
1-1/2 teaspoons minced fresh parsley
1/2 teaspoon onion salt
1/2 teaspoon garlic salt
1 tube (10 ounces) refrigerated pizza dough

Steps:

  • In a large skillet, saute the sausage; cool. In a large bowl, combine the sausage, cheese, one egg, parsley, onion salt and garlic salt., Unroll pizza dough; roll into a 12x8-in. rectangle. Spread sausage mixture down the center of dough. Bring dough over filling; pinch seams to seal. , Place seam side down on a greased baking sheet; tuck ends under. Beat remaining egg; brush over top. Bake at 350° for 25-30 minutes or until golden brown. Let stand for 5 minutes before slicing.

3/4 cup butter
3/4 cup all-purpose flour
1 tablespoon beef bouillon granules
2 teaspoons onion salt
2 teaspoons pepper, divided
1/2 teaspoon white pepper, optional
2-1/4 cups whole milk
1 can (14-1/2 ounces) chicken broth
1 pound smoked kielbasa or Polish sausage, chopped
2 large eggs
1-1/2 cups 4% small-curd cottage cheese
9 lasagna noodles, cooked and drained
1 jar (16 ounces) sauerkraut, rinsed and squeezed dry
2 cups shredded Monterey Jack cheese, divided

Steps:

  • In a large saucepan, melt butter. Stir in the flour, bouillon, onion salt, 1 teaspoon pepper and white pepper if desired until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Add sausage; heat through. Combine the eggs, cottage cheese and remaining pepper. , Spread 1 cup sausage mixture in a greased 13x9-in. baking dish. Layer with three noodles, a third of the sausage mixture, half of the cottage cheese mixture and sauerkraut and 3/4 cup Monterey Jack. Repeat layers. Top with the remaining noodles and sausage mixture (dish will be full). , Cover and bake at 350° for 50-60 minutes or until a thermometer reads 160°. Sprinkle with remaining Monterey Jack. 1 medium onion, chopped
1/4 cup sweet pickle relish
1 tablespoon Worcestershire sauce
1 cup soft rye bread crumbs

1/4 cup prepared Thousand Island salad dressing
1 can (8 ounces) sauerkraut, rinsed and drained

Bake, uncovered, at 350° for 50-55 minutes or until meat is no longer pink and a thermometer reads 160°; drain. Sprinkle with remaining cheese. Bake 2 minutes longer or until cheese is melted. Let stand 10 minutes before slicing.
