"We like this homemade rye so much that I seldom buy bread anymore," writes May Ann Bonk of New Berlin, Wisconsin. "For the past 10 years, I've made this bread for our church bake sales and it always goes quickly."

Number Of Ingredients 11

1 package (1/4 ounce) active dry yeast
4 cups warm water (110° to 115°), divided
2 cups rye flour
6 tablespoons sugar
2 tablespoons caraway seeds
2 teaspoons salt
7 to 8 cups all-purpose flour
2 teaspoons cornmeal
TOPPING:
1 egg, lightly beaten
4 teaspoons caraway seeds

Steps:

  • In a 4-qt. glass bowl, dissolve yeast in 2 cups warm water; whisk in rye flour until smooth. Cover loosely with a clean kitchen towel. Let stand in a warm place for about 4 hours or until batter falls about 1 in. and surface bubble activity is reduced. Stir in the sugar, caraway seeds, salt, 5 cups all-purpose flour and remaining water; mix well. Stir in enough remaining flour to form a firm dough. Turn onto a floured surface; knead until smooth and elastic, about 8 minutes. Cover and let rest for 15 minutes., Divide dough into four portions. Cover and let rest for 15 minutes. Shape into four round loaves, about 6 in. each. Coat two baking sheets with cooking spray; sprinkle each with 1 teaspoon cornmeal. Place loaves on pans. Cover and let rise until doubled, about 45 minutes., With a sharp knife, make several slashes across the top of each loaf. Brush with egg. Sprinkle each loaf with 1 teaspoon caraway seeds. Bake at 400° for 30-35 minutes, rotating pans after 15 minutes, or until browned. Cool on wire racks.

2 (.25 ounce) packages active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
1 ½ cups lukewarm milk
2 tablespoons white sugar
1 teaspoon salt
½ cup molasses
2 tablespoons butter
3 ¼ cups rye flour
2 ½ cups bread flour

Steps:

  • Dissolve yeast in warm water.
  • In a large bowl combine milk, sugar, and salt. Use a mixer to beat in molasses, butter, yeast mixture, and 1 cup of rye flour.
  • Use a wooden spoon to mix in the remaining rye flour. Add white flour by stirring until the dough is stiff enough to knead.
  • Knead 5 to 10 minutes, adding flour as needed. If the dough sticks to your hands or the board add more flour.
  • Cover dough and let rise 1 to 1 1/2 hours or until double.
  • Punch down dough and divide to form two round loaves. Let loaves rise on a greased baking sheet until double, about 1 1/2 hours.
  • Preheat oven to 375 degrees F (190 degrees C). Bake for 30 to 35 minutes.

GERMAN DARK RYE BREAD

This is one of 2 rye bread recipes I posted in answer to a request for a "marbled rye" bread. My suggestion for making the "marbled rye" is to knead the dark rye dough together with a "light" rye dough (Recipe # 43286), before shaping the loaves. (Of course that will make 4 loaves, since each recipe makes 2 loaves).This recipe makes a wonderful dark rye bread! (90 minute prep time includes rising time).

3 cups all-purpose flour
1/4 cup unsweetened cocoa powder
2 (1/4 ounce) packages active dry yeast
1 tablespoon caraway seed
1 tablespoon salt
1/3 cup molasses
2 tablespoons butter
1 tablespoon sugar
3 1/2 cups rye flour
cooking oil
2 cups water

Steps:

  • In large bowl, combine all-purpose flour, salt, cocoa, yeast, and caraway seed.
  • Heat and stir molasses, butter, sugar, 2 cups water and 2 Tablespoons oil until warm (about 110°-115°F).
  • Add to dry mixture.
  • Beat at low speed on electric mixer 1/2 minutes, scraping bowl.
  • Beat 3 minutes at high speed.
  • Then by hand, stir in enough rye flour to make a soft dough.
  • Turn out onto lightly floured surface; knead till smooth (about 5 minutes).
  • **Cover, and let rest 20 minutes.
  • Punch down dough.
  • Divide in half.
  • Shape into 2 round or oval loaves on greased baking sheets.
  • Brush with small amount of cooking oil.
  • Slash tops with knife.
  • Cover; let rise until double (45-60 minutes).
  • Bake at 400 degrees for 25-30 minutes.
  • Remove from baking sheets, place on racks to cool.
  • **Note:If using this recipe to make a light/dark"marbled" rye loaf, knead both the light and dark doughs separately for about 3 minutes or so, then combine the light and dark doughs and knead them together for another minute or so (to produce the marbled effect).
  • Proceed with the recipe as stated.

GERMAN COUNTRY STYLE SOURDOUGH RYE BREAD WITH CARAWAY SEEDS



German Country Style Sourdough Rye Bread With Caraway Seeds image

When I lived in Germany I loved all the different types of breads that were on offer; so many different textures and flavours - lots of them with seeds, onions, cheese and grains. This has to be my all time favourite however - a light and slightly chewy sourdough rye bread with caraway seeds - the very essence of traditional German flavours! This bread has been adapted for the Bread Machine/Maker, and works EXTREMELY well when made this way. However, you can of course make it by hand in the more traditonal manner, as I like to do when I have lots of "bread making time"! This bread makes superb sandwiches and is perfect when served with soups, pates, cold meats, hams, corned beef, cheese and pickles. The "sponge" sourdough starter needs to ferment only overnight, making this a light style sourdough bread. This bread also keeps very well for up to 4 to 5 days.

50 g strong white bread flour
1/2 teaspoon fast-rising active dry yeast
3 tablespoons water
1 tablespoon milk
250 ml tepid water
2 tablespoons caraway seeds
225 g rye flour
2 teaspoons salt
2 tablespoons sugar
225 g strong white bread flour
1 1/4 teaspoons fast-rising active dry yeast

Steps:

  • To make the sourdough Sponge.
  • Mix all the ingredients together to make a smooth paste, cover with a tea towel and leave to ferment overnight at room temperature, for between 8 to 12 hours.
  • To make the bread.
  • When you are ready to make the bread, pour the water into the bucket, followed by all of the sourdough sponge and then add the caraway seeds.
  • The add in this order: rye flour, salt, sugar and then the white bread flour.
  • Finally sprinkle the dried yeast over the top and fit the bucket into the bread machine/maker.
  • Set to the rapid wholemeal setting, for a medium sized loaf (750g) with the crust setting of your choice.
  • Once the bread has cooked - take it carefully out of the bucket and leave to cool on a wire cooling rack. Remove the paddle if it is still in the bread before slicing.
  • Serve with soups, hams, cold meats, cheese and pickles or make sandwiches of your choice.

1 lb rye flour, plus extra for dusting
1 ounce fresh yeast
1 1/8 cups water, tepid
1/2 ounce salt
1 teaspoon malt extract
2 ounces butter
3 tablespoons caraway seeds

Steps:

  • Place 8oz of the rye flour and the yeast in a large mixing bowl. Add around 3/4 cup of tepid water and mix it thoroughly to make a thick batter
  • Set the dough aside to rest for around 2 hours, until the batter has risen and then fallen.
  • Add the remaining flour, remaining tepid water, salt, malt extract, butter and caraway seeds and mix together making a pliable dough.
  • Dust the inside of a rye loaf basket with flour. Shape the dough into a loaf and place in the basket. Set aside to rise for 2 hours.
  • Preheat the oven to 425°F
  • Place the risen loaf on a baking tray lined with baking parchment. Dust lightly with rye flour and bake for 30 minutes.

2 1/2 c rye flour
3 c unbleached white bread flour
1/4 c unsweetened cocoa
2 pkg active dry yeast
1 Tbsp caraway seeds
2 tsp salt
2 c water
1/2 c honey
2 Tbsp butter
safflower oil

Steps:

  • 1. Place white flour, cocoa, yeast, caraway seed and salt in large bowl. Stir to mix
  • 2. Place 2 cups water, honey and butter in a saucepan. Heat liquids until they are very warm, 110 degrees. Add to dry ingredients and mix until moistened. Beat very hard for 3 minutes.
  • 3. Stir in rye flour, enough to make a soft dough. Knead 8 to 10 minutes. Cover and let rest 20 minutes
  • 4. Knead lightly, roll out and shape to fit 2 greased loaf pans. Brush tops lightly with oil, cover and let rise for 1 hour.
  • 5. Bake at 400 degree oven for 25 minutes.

3 cups whole wheat flour
1 cup rye flour
1/2 cup rolled rye meal
2 tablespoons dried compressed yeast
2 teaspoons salt
2 tablespoons molasses or 2 tablespoons treacle
2 tablespoons oil
1 3/4 cups warm water or 1 3/4 cups beer
2 teaspoons caraway seeds (optional)

Steps:

  • Place wholewheat flour, rye flour, rolled rye, salt and caraway seeds (if used) in a bowl. Make a well in center.
  • Add the remaining ingredients to the well.
  • Mix all ingredients initially with a wooden spoon, until roughly mixed.
  • If mixture seems too dry, add a little more water/beer.
  • Kneed the mixture for 10 minutes, until smooth and elastic, adding a little more flour from time to time if the mixture is too sticky.
  • Form dough into a ball, and cover the mixing bowl with plastic wrap or a damp teatowel.
  • Leave to prove for 2 hours.
  • After 2 hours, preheat oven to 200°C.
  • Take the cover off the mixing bowl. Punch the dough down in the center.
  • Lightly oil a baking tray or loaf tin and dust with flour.
  • Shape dough into desired form (e.g. freeform oblong shape, or in square loaf tin, etc).
  • Leave alone until nearly doubled in size.
  • Place in hot oven for 45 minutes to 1 hour, depending on how crusty you like it.
  • The loaf should be cooked when it gives a hollow sound when tapped.
  • Allow to cool before serving - it is usually better the day after baking.
  • Enjoy!

Number Of Ingredients 10

2 teaspoons active dry yeast
1 1/2 tablespoons brown sugar or 2 tablespoons molasses
10 ounces beer (Pilsener style)
1 cup warm water
2 teaspoons salt
2 cups rye flour
1 1/2 cups bread flour
1 cup whole wheat flour
2 tablespoons caraway seeds
1 tablespoon yellow cornmeal

Steps:

  • 1.) In large bowl, combine 2 teaspoons of yeast, 1 1/2 tbs of brown sugar (or 2 tbs of Molasses instead) with 1 of cup of warm water and 10 OZ of beer (105F -115F to activate yeast) Mix slowly and let sit for 5 minutes.
  • 2.) Add the rye flour and Caraway seeds, mix in with a wooden spoon
  • 3.) Cover bowl with plastic wrap. Let it sit for 2 to 3 hours.
  • 4.) Add salt, whole wheat flour and bread flour. Mix in with a wooden spoon.
  • 5.) Knead the dough for 7-10 minutes. If sticky, add some flour, or if too dry add some water. (Rye dough will always be stickier than white bread though).
  • 6.) Grease a bowl with oil and place dough in bowl. Cover with plastic wrap. Let it sit until doubled. About 45 minutes. Preheat oven to 425°F
  • 7.) Prepare pan by oiling it and sprinkle some corn meal. It helps to avoid the bread getting burned at the bottom.
  • 8.) Punch down dough and shape into two breads and place into greased pans.
  • 9.) Slash top of the bread about 1/5 inch deep. Let the bread sit for 5 minutes.
  • 10.) Place dough in oven at 425 (oven has to be preheated) ( optional sprinkle on some water to get steam going every 10 minutes). Bake for 35-45 minutes. Knock on the bread; if it sounds hollow it is done. A cup of water in the oven also helps to keep the bread moist, something you want with Rye bread.
  • 11.) Place bread on wire rack and let it cool down.

1/4 cup honey
2 cups Hodgson Mill All Purpose White Flour
1 cup Hodgson Mill Rye Flour
2 Tbsp Hodgson Mill Vital Wheat Gluten
2 Tbsp cocoa powder
1 tsp salt
1 1/2 tsp Caraway Seeds, optional
1 1/4 tsp Hodgson Mill Fast Rise Yeast
2 Tbsp butter

Steps:

  • Measure warm water and honey into bread pan. Add unbleached flour, rye flour, gluten, cocoa, salt and caraway seeds. Make a well in center of dry ingredients and place yeast in well. Cut butter into four equal pieces and place in corners of bread pan. Follow directions on your bread machine using the Whole Wheat cycle.

  • 100% rye starter used to make a levain with: 50 g starter 100 g rye flour 100 g water let sit overnight. then add: 200g rye flour 300 g whole wheat flour 35 g polenta (not cooked -- the dry grains) 400 g water mush together with hands. then cover and sit one hour, then add: 50 g water 11 g kosher salt mush with hands. cover and put in fridge for 20 hours. put into two small loaf pans, very very well-greased (with butter), and smoothed gently into corners. sprinkled well with sesame seeds and push in with wet hands. cover with a tent of well-greased tin foil and baked 7.5 hours in 225 degree oven.

2 c rye flour
2 c white flour
3 c lukewarm water
2 Tbsp sugar
1 tsp salt
1 1/2 pkg dry yeast, not rapid rise
1/2 c lukewarm water for yeast
1 1/2 Tbsp caraway seeds (optional)

Steps:

  • 1. Mix 1/2 cup lukewarm water, sugar, salt and yeast together and let sit overnight.
  • 2. In the morning add the flour to the yeast. Mix well and let rise once. Knead down and let it rise again. Shape into loaves and place into greased pans or shape into rounds. Don't let the dough rise too long, about 45 minutes.
  • 3. Bake at 400 for 45 to 60 minutes.
