This is a typical German recipe for Rice Pudding. For this recipe, you don't want to substitute brown rice as it won't get creamy. It is typical to sprinkle a cinnamon and sugar on top of each serving, though some prefer to add fruit, with cherries a popular choice.

1 cup short grain white rice
1/4 cup sugar
3 cups milk
1 cup cream
1/8 teaspoon salt
2 inches piece vanilla beans, split open (or 1 teaspoon vanilla extract)

Steps:

  • Mix the rice, sugar and salt in a large saucepan. Stir in the milk and cream, and add the whole piece of vanilla bean. Place over medium heat and bring to a boil, stirring often.
  • Reduce heat and simmer the rice for 30 minutes, or until soft and milk/cream mixture becomes thick. Stir often.
  • Scratch out vanilla seeds and stir into pudding. Discard vanilla bean pod.
  • Serve warm with cinnamon and sugar or fruit compote, or both.

¼ cup olive oil
1 ½ pounds fresh bratwurst links, casings removed
1 onion, halved and thinly sliced into half rings
1 teaspoon minced garlic
2 teaspoons fennel seed
1 (14.5 ounce) can Bavarian-style sauerkraut, undrained
3 cups uncooked white rice
1 tablespoon chicken soup base (paste)
6 cups water
1 teaspoon ground black pepper
¼ cup raisins

Steps:

  • In a large pot over medium heat, heat the olive oil, and cook the skinned bratwurst until browned, breaking the sausage up into chunks as it cooks, about 10 minutes. Stir in the onions and garlic, and cook until the onions are translucent, about 5 more minutes. Mix in fennel seed and sauerkraut with juice, and allow the mixture to pan-fry for 2 minutes without stirring.
  • Mix in the rice and soup base, and stir until the rice is colored and the soup base is incorporated, about 2 more minutes. Stir in water, black pepper, and raisins, and bring to a boil; cook for 5 minutes, stirring frequently. Reduce heat to a simmer, and cook until rice is tender and almost all the water has absorbed, about 30 minutes.

1 large onion
1 stick margarine or butter, divided
1-1 1/2 pounds ground pork sausage
1 cup Minute Rice
1 cup water
1 qt jar or 2 cans sauerkraut (rinsed and drained)
1 small container (8 oz.) sour cream
Paprika

Steps:

  • Sauté diced onion with 1/2 stick of the margarine/butter until soft.
  • Meanwhile brown sausage in skillet. When this is browned add the cup of Minute Rice & cup of water and let cook until rice is soft, about 5 minutes, stirring during this cooking. Add sautéed onion, rinsed & drained sauerkraut, the additional 1/2 cup butter/margarine with the paprika to taste and simmer all to heat through. Add sour cream and mix through.
  • Pour into greased casserole dish, sprinkle paprika on top and bake at 350 degrees F for 30 minutes or until top is browned. Enjoy!

2/3 c. sugar
1/4 tsp. salt
2 c. water
3 c. milk
2 tbsp. butter

Steps:

  • Spray a 2 quart saucepan with Pam. Add dry rice and water. Cook over medium low heat until most of water has been absorbed. Add milk and continue cooking slowly, stirring frequently. Remove from heat while rice is still rather soft. Add sugar, butter and salt and mix well. Should be cooked in last 30 to 40 minutes before serving. If rice becomes too stiff, add a small amount of milk and heat through.

Delicious, creamy and simple. You can add rum-soaked raisins when you add the milk if you wish. I serve it with crushed-berry syrup or applesauce. This is the way all of my husband's family (in Germany) makes it. They generally serve it as a main dish rather than a desert, but cut down the sugar a bit.

2 cups short or medium grained white rice (uncooked)
4 cups water
1/2 tablespoon salt
4 cups milk (divided - 3 cups/1cup)
1/2-1 1/2 cup sugar (to taste)
1 1/2 tablespoons vanilla
2 eggs, room temperature
3 tablespoons butter

Steps:

  • Bring rice, water and salt to boil. Cover and reduce heat to low.
  • Cook 20 minutes, until all water is absorbed.
  • Add 3 cups milk, sugar and vanilla to rice.
  • Simmer on low, stirring often, about 20 minutes, until most of milk is absorbed.
  • Beat eggs until smooth, add 1 cup milk and beat until thoroughly combined.
  • Slowly pour egg mixture into rice and continue cooking until desired consistency (about 5 minutes). Remove from heat.
