GERMAN FRIED POTATOES
My Grandmother got this recipe when she and my mom lived in Germany. This is my all time favorite way to fix potatoes.

Steps:
- Wash potatoes.
- Sometimes I peel the potatoes and sometimes I don't. It's good either way.
- Slice the potatoes into 1/8-inch thick slices.
- I take frozen bacon because it's easier to cut and cut strips down the side to get my one inch pieces.
- Put enough olive oil in a large deep skillet (cast iron is good) to cover bottom of pan about 1/4 inch deep. Add all of the potatoes to the pan, along with cut up bacon which hasn't been cooked yet; diced onions, parsley and salt and pepper.
- Cook on medium high heat, stirring and watching so that potatoes don't burn because they will stick to the bottom of pan as they are cooking and you will need to scrape them up as they are browning.
- You can cover the pan for the first 20 minutes of cooking and cook on low and then turn up the heat for the last 15 minutes or so in order to brown some of the potatoes.
- Good with steaks and a salad.
- Estimated on servings time to make.

GERMAN SAUERKRAUT & BRATWURST & BACON ONION POTATOES
This is authentic! I lived in Germany for 3+ years, and this is the way my German neighbor taught me to make delicious sauerkraut. Takes a bit more time than just opening up a briny can of kraut and heating thru on the stove ... but it is SO worth it. Add some nicely browned Bratwurst, some applesauce (Apfelmousse), some fries...

Steps:
- 1. Melt 3 T. butter in large skillet. Over medium heat, brown the apples and onions in the melted butter, until they are nicely caramelized and tender, stirring constantly.
- 2. Put WELL-RINSED AND DRAINED sauerkraut in the pan with the apples and onions. Sprinkle the brown sugar over all, and toss well in the browned butter that's in the pan.Turn to LOW, add the beer, black pepper and [optional] caraway seed. Cover. Cook the sauerkraut/apple/onion/brown sugar/beer mixture over very low heat, stirring occasionally, until it's caramelized and a nice, golden brown color. I have actually let mine cook for as much as a couple of hours, on VERY LOW heat. Stir occasionally, to bring the browned stuff up from the bottom and give the rest of it a chance to brown. Don't let it burn, but a very slight scorch is a good thing. When it's browned to your satisfaction, slide it off the heat, and let it sit.
- 3. ABout 1/2 hour before you want to eat, prepare the bratwurst: In a large skillet, place the bratwurst, water, and 2 T. of butter. Bring to a boil, then turn heat down to med., and cook 10 - 12 minutes, turning occasionally, until water evaporates and bratwurst begin to brown. The water will cook the brats through, and then all boil out, but the butter will cling to the brat skins, and brown them nicely. Turn, as needed, to keep them from burning on one side.
- 4. While brats are simmering/browning, do the Bacon Onion Potatoes: preheat a large saute' pan on medium, 2 - 3 minutes. Cook the bacon until crispy, and chop it into small pieces. Pour off most of bacon grease, but do not wipe out pan. Place bacon pieces, onions and vinaigrette in pan and cook 5 - 6 minutes, stirring frequently, until onions are caramelized. Add remaining ingredients, cover and simmer on LOW until potatoes are cooked through, approx. 25 minutes. Keep covered so the won't cook dry. You can add a splash of beer, if necessary, and if desired, to keep potatoes moist and to "steam" cook them. Stir occasionally, gently, to keep from breaking potatoes apart.
- 5. IF YOU DESIRE: after the brats are nicely browned, you can put them IN with the kraut, and smother them together for awhile, to let flavors blend, OR serve separately.
- 6. Serve with dark brown bread and butter, some applesauce, and dark brown mustard. A real authentic German meal, as prepared in the Hessen style. The photos are mine, just as I made it two nights ago. It was fabulous!
GERMAN CABBAGE AND POTATOES
Typical German comfort food. Use either Savoy Cabbage or simple green cabbage. Usually it is served with fried sausages or pork chops or topped with sliced heated kielbasa . - The original recipe calls for caraway instead of cumin.

Steps:
- NOTE: My mother cooks this with 2 cups water and mashes the potatoes and cabbage after cooking, before adding the bacon. Though this tastes good it does not look very tempting. :).
- FOR CABBAGE: Remove outer dark or dry cabbage leaves, cut cabbage into eights and cut the core away.Cut cabbage crosswise in 1/8 inch strips. Wash and drain cabbage, removing any thick "ribs".
- Wash, peel and cut potatoes in 3/4 inch dice.
- Put potatoes, salt, cumin, bay leaf and water in a large pot, cover and boil potatoes for 15 minutes until just tender.
- Add cabbage, stir thoroughly and boil over medium heat about 7 - 10 minutes, stirring occasionally. You want the cabbage to have some bite and most of the liquid to have cooked off. You might need to add a little hot water if all liquid has cooked off before the cabbage is done.
- Depending on the size of your pot it might be necessary to add the cabbage in batches. Cover the pot between batches and let reduce volume before adding rest of cabbage.
- FOR BACON MIXTURE: When potatoes are almost done heat oil in a small pan over medium heat, fry bacon until pale golden, add onions and cook until bacon is crisp and onions golden, about 12 minutes. Remove from heat and pour off most of the fat.
- TO ASSEMBLE: The cabbage should be only moist. If there is too much liquid raise heat and cook it off, stirring often. Remove from heat, add cayenne, lemon juice and most of bacon mixture. Stir to mix and adjust seasoning.
- To serve: Top cabbage with rest of bacon mixture (and parsley)as garnish.

Steps:
- Halve larger potatoes and leave small potatoes as is, cover with water, bring to a boil, season with salt and cook until tender, about 8 to 10 minutes.
- Place sausages in a cast iron skillet, add 1/2-inch of water and a drizzle of oil. Bring to a boil, reduce heat to medium and let the sausages heat through as the water evaporates. Shake pan and let the casings crisp up until they burst, 3 to 4 minutes, and are golden brown. Remove from the heat and set aside.
- While sausages and potatoes cook, cut cabbage half into half again and trim away the core with an angled cut. Shred the cabbage very thinly with your knife and reserve. Place the shredder blade in your food processor. Peel the carrots and trim the root end. Trim the celery, and peel and quarter the red onion lengthwise. Peel the apple and quarter lengthwise then cut away the core as you did the cabbage. Using the processor, shred the carrots, celery, onion and apple, through the feed tube, removing from bowl as necessary.
- In a large skillet heat 2 tablespoons of olive oil over medium-high heat. Add cabbage and vegetable mixture and toss to combine. Season the mixture with bay leaf, grill seasoning or coarse salt and pepper, and caraway seeds. Saute 7 to 8 minutes, tossing frequently.
- While cabbage cooks, put a medium skillet on the stove with a drizzle of olive oil and heat over medium-high heat. Add chopped bacon and render 2 to 3 minutes then stir in the yellow onion and cook for 5 minutes with the bacon to soften.
- Add hard cider to cabbage mixture and reduce for 30 seconds. Stir in the mustard and turn off the heat. Discard the bay leaf.
- When potatoes are cooked, drain and add to bacon and onion. Douse the pan with vinegar and sprinkle with sugar. Pour stock evenly over pan, add the parsley and some pepper and turn off the heat. Stir the potatoes 1 minute to form a starchy sauce and combine flavors.
- Halve crispy sausages and serve on generous bed of cabbage, with the potatoes alongside.
- Serve with hard cider or white Belgian ale with orange wedge.

GERMAN PORK CHOPS & POTATOES
This is my version of an old family recipe from my German relatives, which started out as what they call Schnitzel. I've added the fried potato part, and it sure is tasty, as with most fattening things. This is not for anyone diet conscious! If you need to add some pounds, this is the recipe for you! Oh, I'm sure someone will figure out how to cut the fat from this.

Steps:
- Use egg and a tablespoons of water stirred for egg wash in a shallow bowl for dipping pork chops.
- Create special bread crumb mix by taking 1-1.5 cups dry bread crumbs (I use Italian flavor, but any will do) - add salt, pepper, garlic powder (I like Lawry's), parmesan cheese, paprika, and lemon pepper - a few shakes of each to color and season crumbs.
- Dip pork chops in egg wash, then coat with bread crumb mixture, then place in hot frying pan with a tablespoons or two of garlic olive oil and butter mixed for flavor. Fry till just slightly golden on each side, don't worry about how done they are yet, they will get more cooking later.
- Remove pork chops and set to side. Use same frying pan to add sliced onion, and fry with some garlic oil until they turn golden and caramelized. Add sliced potatoes and fry along with onion, seasoning all with salt and pepper as you like.
- Preheat oven to 350 degrees. Add fried onion-potatoes to bottom of 9x12 casserole dish. Place browned breaded pork chops on top of potatoes. Cover all tightly with foil.
- Place dish with pork chop, potato-onion mixture in oven. Bake covered for about 45 minutes Take off foil.
- Can take foil off last few minutes and bake to crisp top a bit, if you like. Pork Chops will be incredibly moist and soft, potatoes will taste sweet and a bit greasy, but in a good way. Flavor from pork chops will have added to potatoes.

VEGETARIAN BRATKARTOFFELN (GERMAN FRIED POTATOES) W/ FETA CHEESE
My vegetarian German friends gave me this recipe. I cooked this today and really loved it, though I didn't have any feta on hand so I used a little mozzarella. Still, I love feta and I'm positive the feta can only make the recipe taste even better! The vegetarian sausages, hot dogs, or vegetarian bacon are optional, but it really make the potatoes taste more authentic and gives it great flavor. You can also add Baco bits which are vegetarian. Serve with a fresh green side salad.

Steps:
- Boil potatoes in their skins until they are cooked, but not too soft (about 10-15 minutes), then peel and dice them.
- In a skillet fry the onions in oil for a minute then add the vegetarian sausages or bacon if using it. Remove the sausages and onions from the skillet and set aside.
- Fry the diced potatoes by laying the potatoes flat against the pan (you may need to use two pans if yours isn't large enough for all of them to lay flat and touch the pan) with oil and let them stand without mixing until they turn golden brown which should be after 3 or more minutes. After they turn golden brown flip the potatoes to the other side to do the same thing.
- Once both sides are golden brown, add the onions and veggie sausage or vege bacon if using it, mix and then add the feta cheese stirring only once carefully.
- Once the cheese has melted you are finished cooking the Bratkartoffeln.

GERMAN POTATOES WITH PEAS, CARROTS, AND CORN
Kartoffelgemüse mit Erbsen, Mohrrüben und Mais in German. Potatoes accompany many German meals. You'll often find a side of carrots and peas in a creamy sauce on your plate as well. It makes a very tasty combination together with potatoes. So it 's not surprising that someone thought of a recipe that combines both of these sides in one dish. Not only is it tasty but it is also easy to make and you'll only end up with only one dirty pan. As a little bonus, you'll also find some corn added to this dish. I've changed the dish to use vegetable broth instead of water to give more flavor but it's good with the water too.

- Boiled potatoes and raw potatoes have a different taste when they are fried. I love them both, and it's your own personal preference what you choose.
