HEARTY GERMAN FARMER'S BREAKFAST (BAUERNFRUHSTUCK)
Great hearty rib-sticking meal for breakfast, lunch or supper! Very popular in my household. This is a versatile one-pan recipe-- you can sub or add ingredients as desired-- try ham, mushrooms, tomatoes, or chives. (Note: For an equally delicious simplified version of Bauernfruhstuck using frozen Potatoes O'Brien, please see my recipe #278230). Delicious! P.S. Any leftovers you have make a wonderful breakfast the next day--reheat a few seconds in the microwave (although I've been known to eat this cold), and serve with toast or stuff into a flour tortilla for a quick breakfast on-the-go.

Steps:
- In a skillet over low heat, cook bacon until crisp. Remove to paper towel. Reserve 2 tablespoons drippings; add potatoes, green pepper, onion, salt and pepper. Cook and stir over medium heat until the potatoes are golden brown.
- Stir in eggs and milk, and cook and stir until eggs are almost set, about 2 minutes.
- Reduce heat to low. Add cheese and bacon, stirring gently until heated through and eggs are set.
- Serve immediately.
- Leftovers are tasty the following day. Good wrapped in a flour tortilla for a breakfast burrito, breakfast on the go.
- Serves 4 to 6.
EASY BAUERNFRUHSTUCK (GERMAN FARMER'S BREAKFAST SKILLET)
Here's a quick and simplified version of my Hearty German Farmer's Breakfast - Bauernfruhstuck recipe #120363, and just as delicious! Uses pre-cut frozen potatoes (I use the Ore Ida brand Potatoes O'Brien), onions, bell peppers, and precooked sausage, ham or bacon. Leftovers (if any) are awesome, and may be eaten either warm or cold. Makes a great breakfast wrap, too. Serve with some fresh fruit and your favorite beverage for a delicious breakfast, lunch or supper.

Steps:
- Heat skillet on medium heat with the olive oil.
- Add frozen potatoes in a single layer. Cook 6 minutes, turn, and continue cooking another 6 minutes.
- Reduce heat to medium-low. Stir in the chopped onions, bell peppers, and the butter. Cook for 8-10 minutes, stirring often and scraping the bottom of the pan, until onions are softened and peppers are almost done.
- Reduce heat to low; stir in the chopped sausage (or ham or bacon), and the tomatoes, if using.
- In a small bowl whisk eggs, milk, and the salt & pepper together. Add the chives, if using.
- Pour egg mixture over potatoes, stirring to incorporate. Cook for a few minutes more, stirring occasionally, until eggs are done.
- Sprinkle with cheese and snipped chives.
- Serve with fresh fruit and your favorite beverage.
- Note: Leftovers, if any, are wonderful--makes a tasty breakfast wrap!

Beat eggs and milk; pour into the same skillet. Cook and stir gently over medium heat until eggs are completely set, about 3-5 minutes. Add the potato mixture; cook and stir gently until heated through.

GERMAN FARMER BREAKFAST
This sounds like a good, heavy breakfast my husband would love! I haven't fixed this yet, I'm submitting it for the Zaar World Tour 2006. But I'm a-thinkin' I'll be fixing it for him soon! I wonder about whether to stir this concoction near the end, the recipe doesn't say! I would just eyeball and do what I think is right for me. (Edit: This recipe has gone into my "Tried and True" file, we love it! )

- Boil unpeeled potatoes until tender, drain and let cool.
- Slice or dice potatoes.
- In large frying pan cook bacon until translucent.
- Add the potato slices, cook until lightly browned.
- Meanwhile, blend eggs with milk and salt.
- Stir in cubed ham.
- Add tomatoes to egg mixture.
- Pour the egg mixture over the potatoes in the skillet.
- Cook until eggs are set.
- Sprinkle with chopped chives and serve at once.
GERMAN FARMER'S BREAKFAST
This is a hearty one-dish meal, the perfect comfort food for breakfast, lunch or dinner. Quick to make if you cook the potatoes the night before. or you can microwave them at the last minute, but that changes the consistency a bit.

- Remove bacon from pan and drain on a paper towel.
- Pour bacon grease out of pan and add butter.
- Saute onion until soft.

GERMAN FARMER'S BREAKFAST RECIPE

- 1 Boil the potatoes in a saucepan of lightly salted water for 10-15 minutes until just cooked (test for doneness). Drain, rinse with cold water to cool. Cut into 1-inch squares. Set aside. 2 Heat 2 Tbsp bacon fat (or olive oil) in a large skillet on medium high heat. Add the onions and chopped bell peppers. Increase the heat to high. Brown the onions and bell peppers, stirring frequently, about 2-3 minutes. 3 Push the vegetables to the side of the pan, add the potatoes and another Tbsp of bacon fat (or olive oil) to the pan. Brown the potatoes for about 2 minutes, stirring frequently. Sprinkle on salt to taste as you cook. Add the ham to the potatoes and cook, stirring frequently until the ham is heated through, 1-2 minutes. 4 Mix all of the vegetables, potato and ham together and mix in the parsley. Add the eggs, stirring to distribute the eggs among the vegetables and ham. As soon as eggs begin to firm up, remove from heat. Serve immediately. Great with ketchup on top. Serves 4.
