This is our family version/replacement of the traditional green bean casserole that everyone always brings. I am seriously in trouble if this is not on the holiday table!

4 cups chopped fresh broccoli
1 (10.75 ounce) can cream of mushroom soup
1 cup shredded Cheddar cheese
¼ cup mayonnaise
2 cups dry bread crumbs
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Put broccoli in a large microwave-safe bowl with a small amount of water in the bottom; cook in microwave until tender, about 5 minutes. Drain liquid from bowl. Stir mushroom soup, Cheddar cheese, and mayonnaise with the broccoli until evenly mixed; pour into prepared casserole dish.
  • Mix bread crumbs and melted butter together in a separate bowl; spread evenly over the broccoli mixture.
  • Bake in preheated oven until the surface is bubbling, 20 to 30 minutes.

For the longest time, my mum would make this amazing broccoli casserole. It is more like a crustless quiche, but has converted many broccoli haters into broccoli lovers! I have not ever tweaked this recipe - not even to add minced garlic, sauteed onion, pimento, etc; it's too simple and delicious on its own to need tweaking. This can be made ahead and refrigerated before cooking. It freezes well and can be thawed prior to cooking.

1 head broccoli, chopped
2 teaspoons vegetable oil, or as needed
1 (16 ounce) container cottage cheese
3 eggs
½ (8 ounce) package shredded sharp Cheddar cheese
¼ cup butter, melted
3 tablespoons all-purpose flour
salt and ground black pepper to taste

Steps:

  • Fill a large bowl with ice water to create an ice bath.
  • Bring a large pot of lightly salted water to a boil. Add broccoli and cook, uncovered, until bright green and tender, about 3 minutes. Drain in a colander and immediately immerse in the ice bath for several minutes to stop the cooking process. Drain.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish with vegetable oil.
  • Combine broccoli, cottage cheese, eggs, Cheddar cheese, butter, flour, salt, and pepper in a large bowl. Spread into the prepared casserole dish.
  • Bake in the preheated oven, uncovered, until a knife inserted into the center comes out clean, 60 to 90 minutes.

This easy broccoli bake with cheddar cheese and breadcrumbs is a creamy broccoli casserole that can be a main dish or a side at Thanksgiving.

3 tablespoons unsalted butter (divided)
3/4 cup Panko breadcrumbs
1/4 cup freshly grated Parmesan cheese
5 cups coarsely chopped broccoli florets ((about 1 1/4 pounds))
1/4 cup white whole wheat flour
1 3/4 cups non-fat milk
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon dry mustard
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper (optional)
1/2 cup freshly grated extra sharp cheddar cheese

Steps:

  • Preheat your oven to 400 degrees F. Melt 1 tablespoon butter in a wide, deep cast iron (or other ovenproof) skillet. Once melted, pour the butter into a small mixing bowl, then combine with the Panko breadcrumbs and the Parmesan cheese. Set aside.
  • Meanwhile, bring a large pot of water to a boil. Add the broccoli and cook until crisp-tender, about 3 minutes. Drain and set aside.
  • Melt the remaining 2 tablespoons of butter in the same skillet. Sprinkle the white whole wheat flour over the top, then whisk constantly for 1 minute, until the butter smells fragrant and the flour turns slightly golden. Very slowly pour in the milk, whisking constantly, adding a little at a time so that you break up the clumps of flour as you go. Continue whisking until the sauce thickens, about 3 minutes, allowing the mixture to bubble. Stir in the garlic powder, salt, mustard, black pepper, and cayenne (if using). Remove the skillet from the heat, then stir in the cheddar until smooth.
  • Add the reserved broccoli, stir to coat, then pat the broccoli into an even layer in the skillet. (Alternatively, if you feel your skillet is not large enough to easily stir in the broccoli without it spilling out, you can combine the two in a separate bowl, then transfer the mixture back into the skillet.)
  • Sprinkle the Panko mixture evenly over the top of the broccoli. Bake until hot and the topping is crisp and light golden brown, about 20-25 minutes. (Tip: For an even crisper topping, place the skillet under your broiler for a few minutes at the end, watching carefully so that it doesn't burn.) Let stand 5 minutes, then serve.

An easy to make, healthy, delicious side dish. One of my friends tried it with frozen spinach and loved it, so either broccoli or spinach will bring you a fabulous vegetable dish minus the cheese, but if you must have cheese add about 1/2 cup Cheddar cheese on the top of the casserole before baking.

2 pkg (10 ounce) frozen chopped broccoli, defrosted
1/2 small onion, chopped
1 can(s) (10 ounce) cream of mushroom soup
1/2 c mayonnaise
1 c crushed ritz crackers (optional)

  • 1. Mix all ingredients except crushed Ritz crackers and put into a greased 2 quart casserole. Top with 1 cup of crushed Ritz crackers.

1 pound fregola or orzo pasta, or Israeli couscous
1/4 cup extra-virgin olive oil
2 cups (about 10 ounces) cipollini onions, peeled and halved, or quartered if large
Kosher salt and freshly ground black pepper
3 cloves garlic, minced
1 pound broccoli, cut into small florets
1/3 cup water
1 (15-ounce) can cannellini beans, rinsed and drained
1/2 cup grated Parmesan
2 large lemons, zested and juiced
1/2 cup extra-virgin olive oil
2 tablespoons honey
3 1/2 teaspoons kosher salt, divided
1 1/4 teaspoons freshly ground black pepper, divided
1 cup (about 1 ounce) chopped fresh chives

Steps:

  • For the salad: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and place in a large serving bowl. In a medium saucepan, heat the oil over medium-high heat. Add the onions and season with a pinch of salt and pepper. Cook, stirring occasionally until golden and tender, about 10 minutes. Add the garlic and cook for 30 seconds until aromatic. Add the broccoli and saute for 1 minute. Add the water and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Cover the pan and cook until the broccoli is tender, about 4 minutes. Add the beans and cook for 1 minute until warmed through. Transfer the onion mixture to the serving bowl. Add the Parmesan cheese and toss with the fregola.
  • For the dressing: In a small bowl, combine the lemon zest, lemon juice, olive oil, honey, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Whisk until smooth. Stir in the chives.
  • Pour the dressing over the fregola and toss well until coated. Season with the remaining 3 teaspoons of salt and 1 teaspoon pepper and serve.
