This makes an easy weekend breakfast or a quick supper. Came up with it on my own after trying corned beef hash for the first time in a pancake house in Georgia. We prefer it with the added spice but it is optional n'est ce pas.

3 tablespoons vegetable oil
1 medium onion, diced (Vidalia when available)
1 green bell pepper, diced
1 red bell pepper, diced
1 (340 g) can corned beef, cubed
1 (750 g) package frozen hash browns
1 tablespoon cajun seasoning (optional) or 1 teaspoon chili powder (optional)

Steps:

  • In electric frying pan or large skillet saute onions and peppers until onions soften.
  • Add corned beef; continue to cook until cubes fall apart.
  • Add frozen hash browns.
  • Add seasoning if desired.
  • Cook, stirring often until potatoes are done and start to brown.

1 1/2 lbs chicken, preferably white meat,trimmed and cubed
1 1/2 lbs pork, trimmed and cubed
3 -5 potatoes, peeled and cubed
1 can tomatoes
2 -3 carrots, skinned and grated
1 onion, diced

Steps:

  • Heat a small amount of vegetable oil in a stock pot, ad d onions and garlic, season thoroughly with salt and lots of pepper, cook until clear, then add meat.
  • Sear well, stirring to make sure all pieces heat evenly.
  • Add tomatoes and appx 4-6 cups of water.
  • Bring to a boil, add carrots.
  • Boil for appx 1 hour, then add potatoes.
  • Add seasonings if desired (I use a barbecue rub, or simply add my favorite bbq sauce, 1/2 cup or so. The real flavor comes from the meat and tomatoes, though).
  • Cook, loosely covered, on medium heat for appx 3 hours until meat has fallen apart, tomatoes are completely cooked away, and potatoes have cooked apart.
  • Stir continuously while cooking to keep from burning.
  • Serve over rice.
