GORDY'S FRESH HOMEMADE CHILI

6 to 7 large fresh green bell peppers, seeded and chopped
3 large ribs fresh celery, chopped
1/2 pound butter
10 pounds fresh choice ground beef
5 pounds fresh sweet yellow onions, chopped (6 to 8 jumbo), plus more for serving
1/4 cup salt, plus more for seasoning
1/4 cup ground black pepper, plus more for seasoning
1/3 cup chili powder
1 gallon premium diced tomatoes in juice
1 gallon chili sauce
2 gallons dark red kidney beans with juice
Freshly grated Cheddar
Hot pepper sauce of choice

Steps:

  • Put the chopped green peppers, chopped celery and butter in a large skillet over medium heat. Cover and saute for 20 minutes, stirring several times during the cooking.
  • Chunk the ground beef with your hands and put it into a frying pan over medium heat.
  • Add the chopped onions, and season with the salt and pepper, to taste. Cook until the meat has browned and is fully cooked, about 1/2 hour. In a large soup pot or kettle, add the beef and onions, celery and peppers, the chili powder, diced tomatoes with juice, chili sauce, kidney beans with all the juice, the 1/4 cup salt and 1/4 cup of pepper. Stir to combine, then bring to a boil over medium heat. Lower the heat, cover, and simmer the chili for 45 minutes.
  • It will lose its chunkiness and mellow in flavor the longer you cook it. Keep it on all day, if you like, stirring it from time to time.
  • Serve in a large bowl garnished with grated Cheddar and freshly chopped onions. Add your favorite pepper sauce for some heat.

I have tried many chili recipes, trying to find one that suits our family's taste. This is it! I found this in my 1970 Southern Living cookbook. My family doesn't like spicey chili, so I only add 2 teaspoons of chili powder. I have noted my other changes in the ingredients. I leave out the shortening to cut the fat and we aren't big on a lot of celery in our food, so I cut it down to one stalk. This is the only chili that I make now. Prep time is approximate. Servings are generous, so you may be able to serve more than six with this recipe. I freeze leftovers.

1 lb lean ground beef
salt and pepper
1 onion, chopped
3 tablespoons chili powder, divided
1 tablespoon shortening (I leave this out)
2 cups tomato juice
2 stalks celery, diced (I use one stalk)
1 green pepper, diced
1 can tomatoes (I use crushed)
1 can kidney bean (I use 2 cans)

Steps:

  • Season ground beef with salt and pepper to taste.
  • Brown beef and onion, mixed with 1 tablespoon chili powder, in the shortening.
  • Add tomato juice, celery, green pepper, and remaining 2 tablespoons chili powder.
  • Simmer slowly for 45 minutes, or until vegetables are tender.
  • (If mixture cooks down, add more tomato juice or water).
  • Add tomatoes and simmer 15 minutes longer; then add kidney beans and simmer a few minutes more or until beans are tender.

2 pounds lean ground beef
1 can (46 fluid ounce) tomato juice
1 can (29 ounce) tomato sauce
1 can (15 ounce) kidney beans, drained and rinsed
1 can (15 ounce) pinto beans, drained and rinsed
1 1/2 cups onion, chopped
1/4 cup green bell pepper, chopped
1/8 teaspoon ground cayenne pepper
1/2 teaspoon white sugar
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
1 teaspoon salt
1 1/2 teaspoons ground cumin
1/4 cup chili powder

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and crumble. In a large pot over high heat combine the ground beef, tomato juice, tomato sauce, kidney beans, pinto beans, onions, bell pepper, cayenne pepper, sugar, oregano, ground black pepper, salt, cumin and chili powder. Bring to a boil, then reduce heat to low. Simmer for 1 1/2 hours. Note: If using a slow cooker, set on low, add ingredients, and cook for 8 to 10 hours.
