QUICK AND SIMPLE GRILLED SALMON WITH RUB



Quick and Simple Grilled Salmon with Rub image

A simple, fast, and nutritious entree the entire family will love. Grilling the salmon really takes it to a whole new level.

Number Of Ingredients 9

1 Filet Salmon (The fresher the better!)
1 1/2 tbsp olive oil (extra virgin)
1/8 tsp black pepper ((or to taste))
1/2 tsp white sugar
1 tsp garlic salt
1/2 tsp crushed red pepper
1 tsp parsley
1 tsp lemon zest
1 tsp basil

Steps:

  • Mix up the rub first by combining black pepper, sugar, salt, crushed red pepper, parsley, lemon zest, and basil.
  • Cut salmon filet into 4 equal portions.
  • Pour equal portions of the oil over each cut salmon piece. Using clean hands; rub oil into each piece of salmon. (Do not skip this step; otherwise your salmon will stick to the griddle)
  • Sprinkle equal portions of the rub over each salmon piece; rub into salmon with clean hands or the back of a spoon.
  • Place griddle on top of grill. Heat grill (gas or electric) or charcoal to medium heat.
  • Place salmon on griddle. Keep the lid closed.
  • Grill about 5 min. per side; perhaps longer if your filet is thicker. Salmon is cooked when it easily flakes. To be sure; use a meat thermometer; cooking to 145 degrees Fahrenheit.
  • Transfer to serving platter and enjoy! Pairs well with grilled asparagus and rice or veggie skewers!

GENE'S SALMON RUB



Gene's Salmon Rub image

My friend Gene here in the Puget Sound (who also happens to be my ex) made a wonderfully delicious King salmon recently, and I pried this rub recipe out of him. ;) All the amounts are approximate... he adds necessary amounts by aroma.

Yield 1 2/3 cup, approx

Number Of Ingredients 7

1 1/4 cups brown sugar, to taste
1 1/2 tablespoons sweet Hungarian paprika, to taste
1 tablespoon regular paprika, to taste
1 teaspoon sea salt
1/2 teaspoon fresh ground black pepper (1 tsp if not freshly ground)
1 teaspoon white pepper
1 tablespoon crushed dried thyme, to taste

Steps:

  • Mix all ingredients together.
  • Use as a rub on your approx 12-lb prepared salmon half.
  • Note: Gene rubbed the salmon with the above and baked it with a drizzle of olive oil in one of those handy baking-bags and it was moist and delicious!
  • Note 2: he mentioned that he used "regular" paprika because he was out of smoked paprika - I would've used sweet Hungarian and smoked Spanish, myself.

SALMON WITH SWEET AND SPICY RUB



Salmon with Sweet and Spicy Rub image

Yield 6 servings, serving size: 1 salmon fillet

Number Of Ingredients 8

Nonstick cooking Spray
2 tablespoons packed light brown sugar
1 tablespoon chili powder
1 teaspoon ground cumin
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
6 (6-ounce) salmon fillets, skin and any pin bones removed
1 tablespoon olive oil

Steps:

  • Coat your grill or a grill pan with cooking spray and preheat over medium heat. While the grill is heating, combine the brown sugar, chili powder, cumin, salt, and pepper. Brush each salmon fillet with 1/2 teaspoon of the oil, then rub each fillet with about 1/2 tablespoon of the spice mixture.
  • Grill the salmon, flesh side down, until charred, 4 to 5 minutes. Flip the salmon and cook another 5 to 6 minutes for medium doneness. For well done fish, cook an additional 1 to 2 minutes. Remove to a platter and serve immediately.
