SUN-DRIED TOMATO & GARLIC DIP

This is so tasty I could eat it by the spoonful. The recipe comes from my Kraft What's Cooking Magazine. If at all possible use homemade sundried tomatoes (I used Mirj's recipe #14681 - awesome!), they add so much more flavour.

1 (250 g) container cream cheese spread
1/2 cup Miracle Whip
1/2 cup sun-dried tomato, chopped
2 tablespoons fresh chives or 2 tablespoons green onions, finely chopped
1 garlic clove, minced
1 teaspoon black pepper, freshly ground

Steps:

  • Mix all ingredients until well blended.
  • Refrigerate until ready to serve.
  • Serve with your favourite crackers.
  • Warning: it's addictive!

1/2 cup sour cream
1 tablespoon 2% milk
1-1/2 teaspoons Worcestershire sauce

Steps:

  • In a small bowl, beat cream cheese, sour cream, milk, Worcestershire sauce, garlic, salt and pepper until blended. Serve with vegetables or pretzels.

SUNNY'S SPICY TOMATO DIP

2 tablespoons olive oil
2 pints cherry tomatoes
2 tablespoons capers
1/4 cup chopped onions
1/2 teaspoon red chile flakes
Kosher salt and coarsely ground black pepper

1 teaspoon tomato paste
2 to 3 fresh basil leaves
1 clove garlic, sliced in half lengthwise

Steps:

  • Heat the oil in a medium pot or pan over medium-high heat. When the oil begins to swirl, add the tomatoes and capers and cook, stirring intermittently, so the tomato skins begin to sear and brown. Once the skins begin to burst, add the onions and red chili flakes. Season everything with a pinch of salt and a few grinds of black pepper. Cook, lightly stirring, until the onions are tender and the tomatoes release their juices, mashing them gently as you stir. Add the tomato paste, basil and garlic. Stir and cook until the tomato paste blends into everything, about 5 minutes. Lower the heat and simmer until the garlic is tender, about 10 minutes.
  • Remove the basil leaves and discard. Pour the contents into a blender or use an immersion blender to blitz everything until smooth. Refrigerate and serve chilled as a dip.

CREAMY TOMATO AND PEPPER DIP

1/4 cup packed fresh tarragon leaves
2 small, ripe tomatoes, stemmed and roughly chopped
1 small red bell pepper, stemmed, seeded and roughly chopped
1 garlic clove
Kosher salt
Assorted cut up vegetables, for serving

Steps:

  • Put the mayonnaise, tarragon, tomatoes, pepper, garlic and 1/2 teaspoon of salt in a blender or food processor and blend or pulse until creamy and smooth. Serve with assorted vegetables for dipping. The dip will keep in the refrigerator in an airtight container for up to 3 days.

1 teaspoon garlic powder
2 tablespoons fresh basil, chopped, divided
1 medium tomatoes, seeded, chopped
1/2 cup mozzarella cheese, shredded
1 (2 1/4 ounce) can black olives, drained, sliced
Wheat Thins sun-dried tomato and basil crackers

Steps:

  • Mix cream cheese, garlic powder, and half of the basil until well blended.
  • Put into bottom of 9-inch pie plate; top with tomatoes, mozzarella cheese, olives, and remaining basil.

8 small bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 tablespoons unsalted butter
1 medium yellow onion, chopped
6 garlic cloves, roughly chopped
1/2 teaspoon crushed red pepper flakes
1/4 cup dry white wine
One 26.46-ounce carton chopped tomatoes, such as Pomi
Two 3.8-ounce cans sliced black olives, drained
1 tablespoon fresh oregano leaves
3 tablespoons chopped flat-leaf parsley

Steps:

  • Preheat the oven to 375 degrees F.
  • Sprinkle the chicken with salt and pepper. Heat the oil in a large braiser or high-sided saute pan oven over medium-high heat. Add the chicken skin-side down and cook, undisturbed, until golden brown, 3 to 4 minutes. Remove the chicken to a plate.
  • Reduce the heat to medium-low and add 1 tablespoon butter along with the onions, garlic and crushed red pepper. Cook, stirring often, until softened, about 5 minutes. Add the wine and simmer until reduced by about half, about 3 minutes. Add the tomatoes, olives, oregano and the remaining tablespoon butter and bring to a simmer; season with salt and pepper.
  • Nestle the chicken in the sauce skin-side-up and transfer to the oven. Bake until the chicken is just cooked through, about 40 minutes. Sprinkle with the parsley and serve immediately.
