My mother always made London Broil with top round and flank steak was stuffed with bread and braised and just yuck! Grilling flank steaks allows it's beefy flavor to shine. This recipes is spicy and sweet.

4 tablespoons chipotle chiles in adobo, minced
2 tablespoons honey
6 garlic cloves, finely chopped
4 tablespoons olive oil
1 (2 1/2 lb) flank steaks
2 teaspoons kosher salt
fresh cilantro, chopped for garnish
lime wedge, for serving

Steps:

  • In a bowl, whisk together the minced chipotles, honey and garlic; whisk in the oil.
  • Season the steak all over with salt, then massage in the chipotle mixture evenly over the entire steak; let marinate at least 1 hour at room temperature, or up to overnight, refrigerated (bring to room temperature before grilling).
  • Preheat grill; brush off any bits of garlic or chile from the meat and grill, covered, until the steak is a bit charred on the outside and done to your taste on the inside, 4 to 5 minutes per side for medium-rare.
  • Let meat rest for 5 minutes or so, before slicing across the grain.
  • Garnish with cilantro and serve with lime wedges.

3-4 lb london broil, cubed in 3/8" cubes
8 slice applewood smoked bacon cubed 3/8"
2 large yellow onions diced
8 stalk(s) celery 3/8" dice, leaves includes
4 jalapeno peppers seeded and diced
2 poblano peppers seeded and diced
2 green bell peppers seeded and diced
2 anahiem peppers seeded and diced
1 head garlic minced
1 can(s) diced tomatoes 28 oz.
1 can(s) stewed tomatoes 28 oz.
24 oz beer brand of your choice
15 oz canned black beans drained
15 oz canned red beans drained
30 oz canned dark kidney beans drained
2 Tbsp new mexico chili powder
2 Tbsp ancho chili powder
1 Tbsp california chili powder
1 Tbsp chili de arbol powder
2 Tbsp smoked paprika
6 bay leaves fresh if available

  • 1. Saute bacon, onions, garlic, peppers until bacon is soft and releasing juices. Add beef and brown. Add rest of ingredients and simmer 4 hours or longer.

4 tablespoons minced chipotle in adobo sauce
2 tablespoons honey
6 garlic cloves, finely chopped
4 tablespoons extra-virgin olive oil
1 London broil, top round or flank steak 2 1/2 pounds, about 1-inch thick
2 teaspoons kosher salt
Chopped cilantro
Lime wedges

Steps:

  • In a bowl, whisk together the chipotle, honey and garlic. Whisk in the oil.
  • Season the steak all over with the salt. Pat the meat evenly with the chipotle mixture and let rest for at least an hour at room temperature, or as long as overnight in the refrigerator. If you've chilled it, let the steak come to room temperature before grilling.
  • Light the charcoal or preheat the grill. Brush off any bits of garlic or chile from the meat and grill, covered, until the meat is charred on the outside and done to taste inside, 4 to 5 minutes per side for medium-rare. Let the meat rest 5 minutes before thinly slicing. Sprinkle with cilantro and serve with lime wedges.
