Caramelized Cumin-Roasted Carrots image

A great savory side dish. Recipe from one of my old Bon Appetite magazines.

Number Of Ingredients 5

nonstick cooking spray
12 carrots, peeled and cut on the diagonal into 1/2 inch pieces (medium to large carrots)
2 Tbsp extra-virgin olive oil
1 1/2 tsp cumin seeds
2 tsp kosher salt

Steps:

  • 1. Preheat oven to 400 degrees. Spray a large rimmed baking sheet with nonstick spray.
  • 2. Combine carrots and all remaining ingredients in a large bowl; toss to coat. Spread in a single layer on prepared baking sheet. Roast carrots until tender and lightly caramelized, turning carrots over once. Roast for 35-40 minutes.
