1 carton (10 ounces) hummus
1/4 cup finely chopped red onion
1/2 cup Greek olives, chopped
2 medium tomatoes, seeded and chopped
1 large English cucumber, chopped
1 cup crumbled feta cheese
Baked pita chips

Steps:

  • Spread hummus into a shallow 10-in. round dish. Layer with onion, olives, tomatoes, cucumber and cheese. Refrigerate until serving. Serve with pita chips.

1 large cucumber
3/4 cup plain yogurt
3/4 cup sour cream
3 tablespoons olive oil
4-1/2 teaspoons minced fresh dill
4-1/2 teaspoons red wine vinegar
3 garlic cloves, minced
1/4 teaspoon salt
Pita bread wedges

Steps:

  • Peel cucumber; cut in half lengthwise and scoop out seeds. Grate cucumber; squeeze between paper towels several times to remove excess moisture. , Place cucumber in a small bowl; stir in the yogurt, sour cream, oil, dill, vinegar, garlic and salt. Refrigerate until chilled. If desired, drizzle with additional oil and sprinkle with additional dill. Serve with pita wedges.

1 can (15-1/2 oz.) chickpeas (garbanzo beans), drained
1/4 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
2 Tbsp. lemon juice
2 cloves garlic, minced
1/4 cup finely chopped cucumbers
1/4 cup loosely packed parsley, finely chopped
2 Tbsp. finely chopped red onions
1/2 tsp. hot pepper sauce

Steps:

  • Process first 4 ingredients in food processor until smooth; spoon into medium bowl.
  • Add remaining ingredients; mix well.
  • Refrigerate 1 hour.

2 (15-ounce) cans chickpeas, drained and rinsed
1/2 cup extra-virgin olive oil, or more as needed, plus more for garnish
1/2 lemon, juiced
2 tablespoons roughly chopped fresh parsley leaves, plus more for garnish
2 cloves garlic, peeled
1 1/2 teaspoon salt
1/2 teaspoon dark Asian sesame oil
1/2 to 1 teaspoon ground cumin
12 to 15 grinds black pepper
1/4 cup water
Paprika, for garnish

Steps:

  • In a blender combine all the ingredients except the parsley and paprika to be used for garnish. Blend on low speed until smooth. You'll have to stop the blender often to push down the ingredients. If the mixture is too dry and you're having trouble blending it, add a few more tablespoons of olive oil to help things along.
  • Scrape the hummus onto a plate. Sprinkle the paprika over the top, drizzle lightly with olive oil, scatter some parsley on top, and serve. You can make the hummus up to a couple of hours before you serve it. Cover the top with plastic wrap and leave it at room temperature.

Smoked paprika, charred scallions and sweet piquillo peppers are tempered by the richness of chickpeas and toasted almonds in this easy yet sophisticated dip that dresses up your typical store-bought hummus. Make it before your guests come and just top it when they arrive. If you can't find piquillo peppers, you can easily use a jar of any roasted red pepper.

2 tablespoons sliced skin-on almonds
1 large bunch scallions, trimmed
1 tablespoon extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground black pepper
Three 8-ounce containers prepared tahini hummus with garlic
1 teaspoon sweet smoked paprika, plus more for sprinkling
1/4 teaspoon cayenne pepper
One 8-ounce jar piquillo peppers, drained and diced
2 tablespoons chopped parsley leaves
Warm pita, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spread the almonds on a baking sheet and toast until light brown and fragrant, 7 to 10 minutes. Transfer the almonds to a bowl and reserve. Turn the oven up to broil. Toss the scallions with the oil and some salt and pepper on the baking sheet. Broil until the scallions are charred and black in spots but not burned, stirring halfway through, about 2 minutes. Let the scallions cool, then chop them and reserve.
  • Stir the hummus, smoked paprika, cayenne and half of the peppers together in a medium bowl until well mixed. Spread the mixture into a 2-quart earthenware crock and smooth the top.
  • Scatter the scallions, almonds, parsley and remaining peppers on top in stripes alternating red and green. Sprinkle with additional smoked paprika and drizzle with a little olive oil. Serve with warm pita.

The Mediterranean version of the ever popular Mexican layered dip. Instead of using garlic salt, I mix a large clove of pressed garlic with the hummus. Serve with toasted pita, flat bread or tortilla chips.

1/2 cup chopped tomato
garlic salt
1/4 cup chopped cucumber
fresh ground pepper
4 ounces crumbled feta cheese
2 tablespoons chopped kalamata olives
2 tablespoons chopped parsley

Steps:

  • Combine hummus and cumin, spread on the bottom of a 9 inch pie dish.
  • Top with a layer of tomatoes, seasoned with garlic salt.
  • Add the cucumbers and sprinkle with pepper.
  • Add a layer of feta topped with olives, then parsley.
