Tomatoes, olives and goat cheese really brighten up this white pizza. I like to cook extra chicken for this recipe while making another meal. Just make sure the tomatoes are well drained to keep the crust nice and crispy. -Teri Otte, Cannon Falls, Minnesota

1 tube (13.8 ounces) refrigerated pizza crust
2 tablespoons olive oil
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, well drained
1 large onion, thinly sliced (about 1 cup)
1/3 cup pitted kalamata olives, halved
2 cups cubed or shredded cooked chicken
1-1/3 cups crumbled goat cheese
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1/2 teaspoon garlic salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 400°. Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. baking pan. Bake 8-10 minutes or until edges are lightly browned., Mix oil and garlic; brush over crust. Top with tomatoes, onion, olives, chicken and goat cheese. Sprinkle with rosemary, garlic salt and pepper. Bake 10-12 minutes or until crust is golden.

This is a great alternative to traditional pizza. It is the homemade version of my favorite pizza parlor's White Garlic Pizza.

Yield 2 12inch pizzas

Number Of Ingredients 11

1 (1/4 ounce) package yeast
1 cup warm water
2 1/2 cups flour
2 tablespoons oil
1 teaspoon salt
1 teaspoon sugar
melted butter
1/2 cup ranch dressing
2 tablespoons minced garlic
2 cups grilled chicken, cut into thin strips
2 cups mozzarella cheese

Steps:

  • Crust: Dissolve yeast in warm water.
  • Add flour, oil, salt and sugar.
  • Stir together to form dough.
  • I have used either my dough hook or bread machine for this.
  • Let dough rest 20 minutes.
  • Divide in half and press each into a 12 inch pizza pan.
  • Prick all over with a fork, bake at 425°F for 8 minutes.
  • Remove from oven and brush with melted butter.
  • Spread ranch dressing over butter and sprinkle with garlic, chicken and cheese.
  • I like to add just a little cheddar with the mozzarella.
  • Put back in oven until desired doneness.

1 large prepared pizza crust, like Boboli
1 large boneless, skinless chicken breast, cut into bite-sized cubes
1 tablespoon olive oil
8 oz, marinated artichoke hearts, drained and chopped
3 cloves garlic, chopped
2 green onions, chopped
1/2 cup blue cheese salad dressing
5 slices provolone cheese
1/2 cup shredded Parmesan cheese

Steps:

  • In a large skillet heat oil over medium-high heat. Add chicken and chopped garlic. Cook just until chicken is no longer pink, about 4-5 minutes. Remove from heat. To layer pizza: brush or spread blue cheese dressing evenly over pizza crust. Top with the provolone cheese. Evenly distribute the green onions, chicken/garlic mixture and chopped artichoke hearts over the cheese. Finish by sprinkling the shredded Parmesan cheese over all. Bake in a preheated 450 degree oven for approximately 15 minutes, or until cheese is bubbly and top ingredients just begin to brown. Slice into 6-8 wedges and serve immediately.
