Number Of Ingredients 5

30 queen anne sized green olives, separate the Olives from the brine keep both
2 heads garlic (although amounts will very depending on the jar of olives)
italian mix herbs
red chili pepper flakes
olive oil

Steps:

  • Peel Garlic, cut the rough ends.
  • Place in oven safe container.
  • Cover with olive oil.
  • Shake Italian mix: Oregano, Basil, Parsley, and Red Chile Flakes to taste.
  • Place in oven at 375 400 for 5 to 10 minutes, allow oil to boil for 2 minutes.
  • Allow the garlic to cool while taking the pimento out of the olives (use a tooth pick).
  • Stuff cloves into the olives and place the olives back into the brine (the olive container with the juice).
  • ** The oil that the garlic is cooked in can be used as a dipping sauce for toast when finished**.

1 can jumbo black olives (or colossal)
garlic, cloves (enough to fill olives)
olive oil (enough to cover)
1 tablespoon italian seasoning
1 red chili pepper

Steps:

  • Drain olives.
  • Peel garlic, stuff into olives.
  • Large cloves may be cut to fit.
  • Put stuffed olives into a jar (we use a pickle or mason jars).
  • Add enough olive oil to cover.
  • Add seasonings and chili.
  • Seal, shake to mix.
  • Let marinate for a few hours (or a day).

These savory bites of olives stuffed with feta and roasted garlic are always a hit at parties. The crunchy panko bread crumbs add the right amount of texture to this party friendly finger food. You'll be amazed at how the olives stay crunchy even after they've cooled down!

2 can(s) extra large pitted black olives
1 - head of garlic
1 tablespoon(s) olive oil, extra virgin
2 teaspoon(s) salt (divided)
1/2 cup(s) all purpose flour
1/4 cup(s) corn starch
2 tablespoon(s) instant potato flakes, dry
1 1/8 teaspoon(s) cayenne pepper
1 cup(s) chilled club soda
2 cup(s) panko bread crumbs
2 cup(s) vegetable oil
1 pint(s) feta cheese (crumbled)

Steps:

  • Preheat oven to 400 degrees.
  • Remove olives from the can, line a pan with papertowl, and place the olives on the pan. Dry each olive, make sure they are as dry as they can be. Then set aside.
  • Cut the top quarter off the top of the head of the garlic bulb. Place it in a pie pan and drizzle the top with the olive oil. Sprinkle with 1 tsp salt and pepper. Cover them with foil and bake until the garlic is roasted and soft, about 30 minutes.
  • Meanwhile, place panko bread crumbs in a shallow bowl and heat oil in a deep fryer or large saucepan to 350 degrees.
  • Once the garlic is done roasting, squeeze the the roasted garlic bulbs out and mix with feta in a food processor until smooth.
  • Using a pastry bag fitted with a plain large round tip, fill each olive with the garlic and feta mixture.
  • Place a toothpick width-wise through each olive. Dip each filled olive into the wet batter, then into the panko bread crumbs, and set aside until all olives are covered in the panko.
  • Deep fry each olive for about 3-5 min until the olives turn a nice golden color. Remove from oil, sprinke with salt immediately, then set aside to cool for 5 min, then serve.

Meatballs Stuffed with Garlic Olives image

You know how some dishes are so good you just can't stop until every drop is gone, well this is one of those. Deliciously seasoned and so hearty, it satisfies with every bite!

2 lb hamburger
1 c panko bread crumbs
1/2 c ketchup
2 Tbsp aged balsamic vinegar
1/3 c shallots minced
1 1/2 Tbsp garlic powder
1 1/2 Tbsp onion powder
1 1/2 tsp salt
1 tsp pepper
2 eggs
1/2 c whole milk
2/3 c parmesan cheese

Steps:

  • 1. Preheat oven to 400 degrees. Spray a sheet pan with a cooking non-stick spray. Set aside.
  • 2. In a large bowl combine hamburger, ketchup, panko crumbs, parmesan cheese, minced shallats, garlic powder, onion powder, salt, pepper, and aged Balsamic vinegar. Mix well with clean hands or a large spoon.
  • 3. Stir together eggs and milk until smooth, add to meat mixture. Mix well to combine all ingredients.
  • 4. Shape mixture into large balls ( the size of your palm) Press a Garlic Stuff Olive ( Mezzetta, Napa Valley Bistro - Garlic Stuffed Olives, get them at Kroger)into the center of the meatball, close with meat and form into a ball. Place on sheet pan 1 inch apart. Set in center of oven and bake for about 20 to 25 minutes until brown and cooked through.
  • 5. Remove the meatballs from the sheet pan, place meatballs in sauce of your choice. Dress meatballs with sauce, serve with pasta and sprinkle with parmesan cheese. ENJOY!!
