DRY GARLIC SPARERIBS
Posting this for ZWT 2006 Asian region. This is a classic Chinese treatment for Spareribs which can be doubled easily and is so delicious. To purists, this is NOT American style BBQ ribs so don't gasp at the boiling ok? Hehehe. I like to add some red pepper flakes and a little Ginger to the sauce to add a bit of heat.

Steps:
- Bring a large pot of water to boil.
- Cut the ribs apart in large or small pieces as you wish; add the spareribs to the boiling water, cover, and allow to simmer for 30 minutes until tender.
- While the spareribs are simmering, mix together the sauce ingredients.
- Remove the spareribs from the pot.
- If you like, set aside the pork broth to use in another recipe; clean out the pot.
- Add the sauce ingredients to the pot and bring to a gentle boil; add the spareribs, bring back to a boil, and simmer for 10 - 15 minutes.

HONEY GARLIC SPARERIBS (1960)
This recipe for honey garlic ribs was in an old recipe box I bought at a garage sale around 1960. It is very easy to make with bottled VH garlic sauce.

Steps:
- Place rib pieces in a roasting pan with a couple cups of water.
- Bake at 350 degrees Fahrenheit for about 30-45 minutes.
- Drain any water left in pan.
- Transfer ribs to a large saucepan.
- Sprinkle ribs with salt and pepper to taste.
- Mix together the garlic sauce and honey.
- Pour sauce over the ribs.
- Simmer slowly until tender and well done, stirring occasionally.
- Or, bake ribs in a roasting pan in a 250 degree Fahrenheit oven until tender and well done, stirring occasionally.

Steps:
- Combine soy sauce, wine vinegar, garlic salt, pepper and sesame oil in a large glass bowl.
- Add the cut ribs and toss well.
- Marinate at least 6 hours, overnight is perfect.
- When ready to cook, heat oil-at least 2 inches deep-to 375 degrees.
- In a strong bag combine the flour and cornstarch.
- Drain the ribs and add to flour mixture and toss well.
- Fry ribs in batches, depending on the size of your skillet until well browned and crisp.

SUPER EASY HONEY GARLIC SPARERIBS
These are tender and delicious. Serve with rice and a veggie-stir fry. They take awhile to cook in your oven, but don't use much of your time to prepare. Good for a day when you have a lot of other things to do around the house.

Steps:
- Preheat oven to 350F.
- Place two 18" pieces of tinfoil shiny side together.
- Fold 1/4" over along the entire length of one side.
- Then fold again.
- Open the tinfoil to make one large sheet and place on a large cookie sheet or baking pan.
- Place the ribs in a single layer on the foil and sprinkle with 1 teaspoon garlic powder.
- Flip and sprinkle with a second teaspoon of garlic powder.
- Close the tinfoil over the ribs and double fold to seal.
- Close both ends and double fold.
- Bake for one hour.
- Remove the ribs from the foil and cut into individual ribs.
- Place in a large casserole dish and cover with the sparerib sauce.
- Place the lid on the casserole or cover with tinfoil.
- Bake for 70-80 minutes or until very tender.
- Before serving, stir to coat with sauce.
GARLIC SPARERIBS OR CHICKEN WINGS
These ribs or wings can be made a day ahead and reheated gently the next day. You can cook them in a saucepan or in an electric fry pan. Garnish the ribs with toasted sesame seeds if you like. A good appetizer with carrot sticks, celery sticks and blue cheese dressing for dipping. Also good with a tossed salad or cole slaw for dinner.

- Cut spareribs into individual ribs. Cut wings in half.
- Half fill a large saucepan with water. Add vinegar and salt. Bring to a boil.
- Add the ribs or wings and simmer for 30 minutes. Drain.
- Sauce:.
- Combine chicken stock, soy sauce, corn syrup or maple syrup, brown sugar, garlic and ginger in a large saucepan or electric fry pan.
- Add the ribs or wings and cook over low heat until sauce is absorbed into the meat (about 30 - 40 minutes). Stir occasionally.

GARLIC SPARERIBS (1950)
This treasured 1950 recipe for ribs is easy to make and tasty. The garlic powder, curry powder and ground ginger make it a little different from the usual garlic ribs. You can adjust seasonings to taste. The original recipe called for one half of a small bottle of garlic powder; I have estimated the amount in the recipe. Great as an appetizer or serve with steamed rice for dinner.

- Brown ribs in a little oil in a large heavy-bottom saucepan. Remove excess fat. (I use my turkey baster to remove the fat.).
- Add the water; cover and simmer ribs until almost tender, about 1 hour, stirring occasionally.

- Place spareribs in a large pot, cover with water and bring to a boil. Simmer for 30 minutes, or until meat is cooked.
- Pepare sauce while ribs are cooking. Mix the nex 5 ingredients together. Place the cooked spare ribs on a foil covered cookie sheet. Pour sauce over ribs.
- Bake at 350F for 20 minutes. Baste ribs with sauce as they are cooking.
- Garnish with chives.

Steps:
- 1. In a large mixing bowl whisk together the tamari, white wine vinegar, garlic salt, sesame oil and pepper.
- 2. Add the pork rib pieces-mix well to coat.
- 3. Cover bowl or pour into a large freezer bag and seal. If using the freezer bag place that into a bowl-just in case you spring a leak.
- 4. Marinate AT LEAST 12 hours, up to 24 hours.
- 5. When ready to cook-
- 6. In a large mixing bowl whisk together the flour and cornstarch.
- 7. In a large skilled heat 2 inches of oil to 375 degrees (medium-high heat)
- 8. Drain ribs.
- 9. Add ribs to flour mixture and toss well to coat every rib.
- 10. Toss again to be sure.
- 11. Cook ribs in batches-with a large skillet It takes me 3 rounds so I can be sure each piece is well browned, crispy and cooked through. Each batch should take about 6 minutes.
- 12. Serve hot as is or with your favorite dipping sauce.
