GARLIC SCAPE PESTO
The star of this pesto is the garlic plant's underappreciated second offering: the fleeting garlic scape. The ingredients are straightforward except for the substitution of sunflower seeds for pine nuts. The seeds are a fraction of the cost and do the job just as well. A food processor is a must for this recipe. For pesto, ingredient order matters. Start with the scapes and process for about 30 seconds. Add the seeds until they are broken down and mixed well with the scapes. Scrape the sides of the bowl with a rubber spatula for wandering bits. Next, pour in the olive oil. If you have Parmesan cheese in chunks, add it now, but if it is grated, wait until the scapes and seeds smooth out. If you're serving right away, add the basil and lemon juice. If not, hold back on the basil for now - otherwise the pesto will lose its vibrant color. Add generously to cooked spaghetti or spread on crusty bread.

PASTA WITH GARLIC-SCAPE PESTO
Steps:
- Make the pesto: Puree the garlic scapes, pistachios, Parmesan, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a food processor until very finely chopped. With the motor running, slowly pour the oil through the opening. Season the pesto with salt and pepper to taste. (The pesto keeps in the fridge, covered, for 1 week or frozen for a month.)
- In a large pot of heavily salted boiling water, cook the spaghetti until al dente. Reserve 1 cup of the pasta-cooking water, then drain the pasta. Whisk together 2/3 cup of the pesto and the reserved pasta water and toss with the pasta. Season with salt and pepper to taste and serve right away.
SPINACH AND GARLIC SCAPE PESTO
This is a great way to use garlic scapes - the curly green tops of garlic that you can get from the farm early in the growing season! The spinach cuts down some of the super-strong garlic flavor. Use as a sauce for hot pasta, a spread for sandwiches, mixed with mayo for a spread or dip, mixed with ranch dressing for salad. The possibilities are endless!

Wild salmon tops the list of fish that are high in omega-3 and low in mercury. So swap out farmed salmon, which contains food dyes, for the real thing. Frozen sides of wild salmon offer the best value. Garlic scapes are the young, soft stems and unopened flower buds of hardneck garlic. This variety of garlic tends to be prevalent at farmer's markets. The season for scapes is short-just a few weeks in June-so if you can't find them you can substitute scallions or baby leeks.

- Oil a grill with coconut oil and preheat the grill over high heat.
- Put the garlic scapes, kale, olive oil, cheese, salt, and pepper in a food processor or blender and process until finely chopped. Divide the pesto in half and reserve one- half for another use.
- Place the salmon on the grill, flesh side down, and grill 3 to 4 minutes. Turn the salmon, and place the squash slices on the grill. Brush the pesto over the salmon and the squash.

With motor running slowly add olive oil until it mixes to the consistency u like. taste and adjust s/p We love this tossed with pasta or spread pesto over a 10 inch tortilla , spread sliced tomatoes on top, sprinkle with a handful of cheese and bake until bubbly. Also , when you toss it with pasta, after u have cooked your pasta save some of the pasta water, mix a little with the pesto and toss in your pasta. Garlic scapes are the curly stems from hard-necked garlic plants. They have a milder flavor than the garlic bulbs. We enjoyed this pesto spread on Italian bread, but it would probably be good over pasta as well. You can substitute asiago cheese for the parmesan. I don't really know how many servings this makes, but I had to guess since I couldn't submit the recipe without filling in the serving amount. I've heard that it freezes well, but we didn't have any left to freeze!

Garlic Scape Pesto is a great way to use up those scapes in hurry. You can make several batches and freeze the pesto. I use an ice cube tray. Once they are frozen I remove them to a ziploc bag for storage. Take out one, two or three as I need them for other recipes.

- Chop or slice garlic scapes into small pieces. Place in blender or bullet. I have a both but prefer to make pesto in my bullet.
- Add all other ingredients except the parmesan cheese. Blend until a smooth paste is formed.
- Transfer to a small bowl and stir in the Parmesan cheese. I prefer to add the cheese in this manner so that the pesto doesn't get that gummy feel.
- Serve as dip for veggies or on bruschetta. Or use in other recipes such as Pizza, Pasta, Sandwiches, etc.
