ROASTED GARLIC BEEF GRAVY

2 cups 500 mL CAMPBELL'S® Ready to Use 30% Less Sodium Beef Broth
2 tsp 10 mL balsamic vinegar
3 tbsp 45 mL all-purpose flour
1/4 tsp 1 mL dried oregano leaves, crushed
2 cloves roasted garlic*

Steps:

  • Remove roasted beef from roasting pan. Pour off fat,leaving drippings. Heat to a boil on stovetop and reduce in volume if needed to 1/4 - 1/2 cup (60 - 125 mL).
  • Combine broth,vinegar and flour in small bowl. Stir gradually into drippings; stir in oregano and mashed,roasted garlic. Return mixture to a boil,stirring constantly.
  • Simmer for 2 minutes,stirring often. Makes about 2¼ cups (525 mL)

2 tablespoons vegetable oil
2 tablespoon chopped onion
3 cloves garlic, minced
1/8 teaspoon dried parsley flakes
1/2 teaspoon ground black pepper
3 1/2 cups Swanson® Beef Stock
1 beef eye round roast (about 3 pounds)
1/3 cup all-purpose flour

Steps:

  • Heat the oil in a 10-inch skillet over medium-high heat. Add the onion, garlic, parsley and black pepper and cook until the onion is tender-crisp, stirring often. Stir the stock in the skillet and heat to a boil. Remove the skillet from the heat.
  • Place the beef in a roasting pan and brush with the stock mixture. Roast at 350 degrees F for 1 hour or to desired doneness, brushing occasionally with the stock mixture. Remove the beef from the roasting pan.
  • Stir the flour in the skillet. Stir the flour mixture in the roasting pan. Cook and stir over medium heat until the mixture boils and thickens. Serve the gravy with the beef.

One 3- to 4-pound whole beef tenderloin, kept at room temperature for 1 to 2 hours
Kosher salt and freshly cracked black pepper
10 cloves garlic
3 tablespoons olive oil
2 tablespoons Dijon mustard
1 tablespoon honey
1 1/2 cups beef broth
1 tablespoon fresh Italian parsley, chopped

Steps:

  • Preheat the oven to 475 degrees F.
  • Place the beef in a roasting pan with a rack. Sprinkle with salt and pepper all over.
  • Add the garlic, oil, mustard and honey to a food processor. Pulse until the garlic is finely chopped. Rub the mixture evenly all over the beef. Pour the beef broth in the bottom of the roasting pan.
  • Bake until the internal temperature is 130 to 135 degrees F, 30 to 35 minutes.
  • Transfer the beef to a carving board and allow to rest for 30 minutes. Heat the roasting pan over medium heat and scrape up any browned bits. Pour any pan drippings onto a rimmed platter. Carve the beef into thick slices and transfer to the platter. Sprinkle with the parsley. Serve warm or at room temperature.

5 cloves garlic, minced
1 tsp (5 mL) salt
1 tbsp (15 mL) vegetable_oil
3/4 tsp (4 mL) pepper
1/4 tsp (1 mL) dried thyme
1/4 cup (50 mL) red_wine (optional)
2 cups (500 mL) sodium-reduced beef broth
2 tbsp (25 mL) all-purpose_flour

Steps:

  • Place roast, fat side up, on rack in roasting pan. Mash garlic with salt into paste; stir in oil, 1/2 tsp (2 mL) of the pepper and thyme. Spread all over roast. Oven-sear roast, uncovered, at 450°F (230°C) for 25 minutes. Reduce heat to 325°F (160°C); roast for 80 minutes or until thermometer registers 140°F (60°C) for medium-rare, 155°F (68°C) for medium. Transfer to cutting board; tent with foil. Let stand for 10 to 15 minutes for temperature to rise 5°F (3°C) more before carving. Reserve juices. Meanwhile, place roasting pan over medium-high heat. Add wine (if using), whisking up brown bits. Add broth, remaining pepper and juices from roast; bring to simmer, stirring. Whisk flour with 1/4 cup (50 mL) water; whisk into pan. Bring to boil, whisking constantly. Reduce heat and simmer for about 3 minutes or until thickened; strain. Serve with beef.

1 (3 -4 lb) boneless beef chuck roast (trimmed and seasoned with salt and pepper)

1/4 cup all-purpose flour
2 tablespoons tomato paste
1/2 cup dry white wine
1 1/2 cups low sodium beef broth
1 tablespoon Worcestershire sauce
2 cups sliced onions
6 medium carrots, peeled and cut into 2-3 inch pieces
3 large celery ribs, cut into 2-3 inch pieces
6 garlic cloves, chopped
3 -4 sprigs fresh thyme
2 bay leaves

Steps:

  • HEAT oil in a saute pan over medium high heat. Sear roast on all sides, 10 minutes total. Transfer roast to a 4-6 quart slow cooker.
  • STIR flour into saute pan; cook 1 minute. Add tomato paste and cook 1 minute more.
  • DEGLAZE saute pan with wine, cooking until liquid evaporates. Stir in broth and Worcestershire; bring mixture to a simmer, scraping up any brown bits.
  • TRANSFER broth mixture to the slow cooker; add onions, carrots, celery, garlic, thyme and bay leaves. Cover and cook until meat is fork tender, on high for 4-5 hours or on low for 8-9.
  • DISCARD thyme sprigs and bay leaves before serving.

1 kg beef, suitable for roasting (silverside, topside...)
2 tablespoons of chunky plum jam
1 dash of l&p Worcestershire sauce
1 large onion, finely chopped
1 tablespoon flour (for oven bag)
750 g potatoes
1/2 cup butter
1 tablespoon of mashed garlic
2 sprigs fresh rosemary, finely chopped

Steps:

  • Pre-heat oven to 180 degrees Celsius.
  • Put 1 tbsp of flour in oven bag and shake it around.
  • Place beef- uncut- in oven bag.
  • Add Plum jam, Worcestershire sauce and chopped onion.
  • Seal oven bag.
  • Place in baking dish.
  • Cook for 40 minutes.
  • Whilst Roast is cooking, peel potatoes.
  • Boil until soft.
  • Mash with butter, garlic and rosemary until smooth puree.
  • Cut meat into slices (should be pink- but not bloody- in the centre).
  • Scoop a cup of mash onto the centre of a dinner plate.
  • Place meat on top.
  • Spoon plum gravy over meat.
  • Add sprig of fresh rosemary to garnish.

2 tablespoons olive oil
1 (3 pound) beef sirloin tip roast
1 onion, chopped
4 cloves garlic, minced
2 cups brewed coffee
1 ½ cups water
2 cubes beef bouillon
6 basil leaves
1 tablespoon salt
1 teaspoon ground black pepper
½ cup all-purpose flour
½ cup water
salt to taste

Steps:

  • Heat olive oil in stock pot over medium heat; sear roast in the hot oil until slightly browned, about 2 minutes per side. Remove roast from pot and place on a plate. Cook and stir onion and garlic in the hot oil until onion is lightly browned, 10 to 15 minutes.
  • Return seared roast to the stock pot; pour coffee and 1 1/2 cup water over roast. Add beef bouillon, basil leaves, 1 tablespoon salt, and pepper.
  • Bring broth to a boil; reduce heat to medium low, cover stock pot, and simmer until meat is falling apart, 2 to 3 hours. Remove and discard basil leaves. Transfer roast to a serving dish and cover with a lid or aluminum foil, keeping the broth in the stock pot over medium heat.
  • Whisk flour and 1/2 cup water together in a bowl until smooth. Slowly whisk flour mixture into broth until gravy is smooth and somewhat clear; season with salt. Pour about half the gravy over the roast and pour the rest into a gravy boat for serving.
