HONEY DIJON GARLIC CHICKEN BREASTS



Honey Dijon Garlic Chicken Breasts image

Boneless skinless chicken Breasts quickly baked in an intensely flavoured honey, garlic and Dijon mustard glaze.

4 large boneless skinless chicken breasts, about 6 ounces each
3 tbsp butter
6 cloves minced garlic
pinch salt and pepper
1/3 cup honey
2 tbsp whole grain Dijon mustard

Steps:

  • Line an 8x8 inch baking pan with aluminum foil. Use a baking pan that is large enough to have a half inch of space around each chicken breast but no more. Using too large a baking dish can cause the glaze to be too shallow in the pan and burn easily. Place the empty pan in a 425 degree oven to heat up while you prepare the glaze.
  • Melt the butter in a small saute pan. Add the garlic and cook for only 30-60 seconds to soften it. Do not brown the garlic.
  • Add the honey, Dijon mustard and a pinch of salt and pepper. Stir well to blend and simmer over medium heat for one or two minutes begin to reduce the glaze.
  • Lightly season the chicken breasts with salt and pepper. Remove the hot pan from the oven and place the chicken breasts an equal distance apart in the pan. Pour the hot glaze evenly over the chicken.
  • Return the pan to the 425 degree F oven and bake for 15 minutes. Remove from oven and baste the breasts with the glaze in the bottom of the pan. return to the oven for an additional 15-20 minutes or until a neat thermometer inserted into the center of the thickest part of the breast reads 170 degrees F.
  • Allow the chicken to rest for 5 minutes before serving.

1 1/2 pounds boneless (skinless, chicken thighs (You can also use chicken breasts))
2 Tablespoons olive oil
6 garlic cloves (divided (3 minced, 3 whole) *)
1/4 cup honey
3 Tablespoons stone ground dijon mustard
salt and pepper to taste
green onions or fresh parsley for garnish

Steps:

  • In a medium sized skillet over medium heat add 1 tablespoon olive oil. Add 3 whole garlic cloves. Salt and pepper the chicken thighs and cook each side until the temperature reads 165 degrees. Remove and set aside on a plate.
  • Add 1 tablespoon olive oil and 3 garlic cloves minced. Cook until tender and whisk in honey and mustard. Add the chicken back to the pan and heat for a couple of minutes more. Garnish with green onions or fresh parsley.

12 boneless skinless chicken breasts
4 garlic cloves, minced
2 teaspoons dried thyme
salt
pepper
1 tablespoon vegetable oil
2 tablespoons cornstarch
1 1/2 cups pineapple juice
1/2 cup water
1/2 cup Dijon mustard
1/3 cup honey

Steps:

  • Rub chicken with garlic and thyme. Sprinkle with salt and pepper. In a large skillet, cook chicken in oil on both sides until no longer pink. In a bowl, combine the cornstarch, pineapple juice and water until smooth. Stir in mustard and honey. Add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Spoon half of the chicken and sauce into a greased 11-inch.x2-inch baking dish; cool. Serve with rice or noodles.
  • Cover and freeze the remaining breast for up to 3 months.
  • To use frozen chicken: Thaw completely in the refrigerator. Remove from refrigerator 30 minutes before baking. Cover and bake at 350 degrees F for 35 minutes or until heated through.

12 chicken drumsticks
1 Tbsp sea salt
1 Tbsp pepper
1 Tbsp garlic
1 Tbsp paprika
1 pkg ranch seasoning packet (i used hidden valley)
1 pkg garlic and herb seasoning packet (i used lipton)
1/4 c ranch dressing
2 c honey dijon dressing
2 Tbsp balsamic vinegar
1/2 c olive oil
2 c breadcrumbs

Steps:

  • 1. Wash chicken and pat dry. Put chicken in big mixing bowl with all the spices and seasonings. Mix together so all chicken is coated with the spices.
  • 2. In separate bowl, mix together the dressings, 1/4 cup olive oil and balsamic vinegar.
  • 3. Pour dressing mixture over chicken. Cover bowl with plastic wrap or plastic plate; let marinate in fridge for about 3-4 hours.
  • 4. (You can also put chicken in big ziplock bag and let it marinate in fridge that way. I like doing this because I can take out the chicken every once in a while and squeeze the bag to "mix the marinade").
  • 5. When ready to bake, preheat oven to 375*. Pour 1/4 cup olive oil into casserole dish, and put it in the oven to heat it up.
  • 6. In the meantime, pour breadcrumbs onto plate.
  • 7. After about 5-7 minutes, take out hot pan. Set aside.
  • 8. Take chicken out one by one with tongs, roll in breadcrumbs to coat lightly, and set into casserole pan.
  • 9. Bake uncovered for 35-40 minutes (till juices run clear). Enjoy!
