- Heat oil and garlic in a small saucepan over low heat until garlic becomes golden- several minutes (do not burn garlic); allow oil to cool.
- Bend asparagus gently at a natural point and when it snaps, discard end pieces.
- Place asparagus on a lipped roasting pan and toss with infused olive oil and garlic, coating all pieces.
- Line up asparagus and push together, season with salt and pepper, then sprinkle with grated Parmesan.
- Roast in a preheated oven at 400°F for 12 minutes or until cooked to your liking.
- Serve at once.

- On a baking sheet covered in foil, put 6 slices of bacon. Put sheet in cold oven, then turn on preheat to 400. Allow bacon to slowly cook for about 10-12 minutes. It should still be rather rare but partially cooked. Take it out and put it aside. Important: KEEP THE FOIL, do not throw it away - see below.
- Meanwhile, put the other ingredients including asparagus into a gallon size ziplock bag and shake to coat thoroughly.
- Wrap 4-5 stalks of asparagus about halfway down with the bacon. Place seamside down on the same foil and sheet you cooked the bacon on (right on the bacon grease spots). Cook for 10-20 minutes at 400 degrees, depending on how tender you want your asparagus (I like super tender at 20 minutes).

- In a 12-inch skillet, over medium, heat the oil.
- Add the garlic and cook until crisp and golden brown, about 5 minutes. Careful not to burn. Burnt garlic tastes bitter. Use a slotted spoon to transfer the garlic to a paper towel-lined plate. Set aside. Add the butter to the skillet and set over medium-high. When the butter has melted, add half of the asparagus with the tips pointing in one direction, and the remaining spears pointing in the opposite direction. (This improves browning.) Sprinkle the asparagus with 1/4 teaspoons salt; using tongs, arrange the spears in an even layer. (They won't quite fit into a single layer.) Cover and cook until the spears are bright green and still crisp, about 5 minutes.
- Season with salt and pepper, then transfer the asparagus to a serving plate. Sprinkle with the toasted garlic and Parmesan cheese. Serve with lemon wedges.

- Bring a pan of water to the boil, drop the asparagus in and cook for about 2 minutes or until just, just tender crisp. Plunge into iced water to stop them cooking, then drain.
- Melt the butter in a large frying pan over medium heat, add the garlic and cook for a minute until fragrant.
- Season with salt and pepper, the add the asparagus to the pan, tossing and turning gently in the butter until hot.
- Divide amongst 4 plates, then sprinkle each serve with the cheese.
- We liked crusty bread to mop up the rest of the garlic butter, but it's up to you!
PAN-ROASTED ASPARAGUS WITH TOASTED GARLIC AND PARMESAN

- 1. Heat the olive oil and sliced garlic in 12-inch skillet over medium heat; cook, stirring occasionally, until garlic is crisp and golden but not dark brown, about 5 minutes. Using slotted spoon, transfer garlic to paper towel-lined plate. 2. Add the butter to the oil in the skillet. When butter has melted, add half of asparagus to skillet with tips pointed in one direction; add remaining spears with tips pointed in one direction. Using tongs, distribute spears in even layer (spears will not quite fit into single layer); cover and cook until asparagus is bright green and still crisp,about 5 minutes. 3. Uncover and increase heat to high; season asparagus with salt and pepper. Cook until spears are tender and well browned along one side, 5 to 7 minutes, using tongs to occasionally move spears from center of pan to edge of pan to ensure all are browned. Transfer asparagus to serving dish, sprinkle with grated Parmesan and toasted garlic, adjust seasonings with salt and pepper, and, if desired, squeeze lemon half over spears. Serve immediately. ASPARAGUS PARMESAN GARLIC SPEARS
This is a wonderful recipe for asparagus, you can cook the asparagus hours or even a day in advance and refrigerate, just warm the spears slightly in the microwave before placing them in the baking dish and broiling them. Adjust the amount of garlic to taste.

- Butter a shallow broiler-proof casserole dish.
- Cook the fresh asparagus in boiling lightly salted water until crisp-tender (about 3-4 minutes) drain and plunge into cool water, drain again and pat dry well with paper towels.

- Set oven to broil heat.

- 1. You want to work as quickly as possible to keep the dough from drying out so you don't need to do the whole moist towel cover up thing.
- 2. Rinse asparagus and dry well.
- 3. Cut the bottom ends off and discard. If you have thick asparagus you can use a potato peeler and peel about 1/2 way up the stalk so it's not fibrous when eating.
- 4. Lay the phyllo dough flat on your workspace, spray completely with butter spray.
- 5. Lay 3 or 4 pieces of asparagus (depending on their size) at the far right of the dough with 1/3 the stalk over the top edge.
- 6. Sprinkle with Parmesan cheese.
- 7. Then fold the bottom of the 2 or 3 pieces of dough (I like 2 and my husband likes 3 so it's more bready less vegetable flavor) up over the asparagus like tucking into bed.
- 8. Then, from right to left, roll it all the way to make the bundle.
- 9. Spray outside totally with butter spray and lay on parchment lined baking tray and repeat until you use all the dough and asparagus. It usually works out just about right but towards the middle, I decide if I need to increase the asparagus to dough ratios so I use the whole thing because they heat up nicely the next day too.
- 10. Sprinkle all with garlic powder (not garlic salt cause the cheese and butter make it salty enough).
- 11. Then sprinkle cheese on top of the pastries.
- 12. Bake at 350 until golden brown about 15-20 minutes.
OVEN ROASTED ASPARAGUS WITH GARLIC, LEMON AND PARMESAN RECIPE

- Preheat oven to 425 degrees Trim asparagus. Grab both ends and bend asparagus until the woody end snaps off. Do this with all the asparagus spears. Discard the woody ends. Transfer the asparagus spears to a baking sheet. Drizzle them with the olive oil, lemon zest, salt, pepper and red pepper flakes. Toss to make sure the asparagus is fully coated. - Preheat oven to 400 F.
- Place trimmed asparagus onto a parchment paper-lined large sheet pan. Brush with olive oil and sprinkle with salt and pepper. Distribute half the amount of minced garlic on top of the asparagus and then sprinkle 1/2 Tablespoon of thyme leaves as well as about 3-4 Tablespoons of the cheese on them.
- Bake for 8 minutes. Meanwhile, place shrimp on wood skewers, about 5 shrimp on each skewer.
- Remove pan from the oven and scoot asparagus over to the side(s) to make room for the shrimp skewers.
- Brush shrimp with olive oil and repeat the same process of sprinkling on the spices and cheese using the remaining amount of ingredients.
- Bake for 5 minutes or until shrimp turns pink. Squeeze lemon juice on top of the shrimp and asparagus and serve immediately by itself or accompanied by your favorite sauce, a fresh salad, or even noodles. Enjoy!

- Preheat oven to 400 degrees F. Coat a large baking sheet with Pam spray. Place flour in a shallow dish. Place beaten egg in a second dish. in a food processor combine panko, cheese, and pepper. Cover and pulse until fine. Transfer this to a third dish.
- Roll asparagus spears in flour, dip in egg, then roll in panko mixture to coat. Place 1/2 in. apart on baking sheet. Sprinkle with any remaining panko mixture and lightly coat with Pam.
- Bake 12- 15 minutes or until asparagus is tender and coating is golden brown. Serve warm with Garlic Dipping Sauce.
