4 large unpeeled russet potatoes, cut into 1/4-inch strips
¼ cup olive oil
3 cloves garlic, minced
½ teaspoon ground dried thyme
¼ teaspoon seasoned salt
½ cup grated Parmesan cheese, divided
¼ cup chopped fresh parsley
¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
  • Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. Sprinkle the fries with the remaining 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt to serve.

1 cup grated Parmesan cheese

1 tablespoon onion powder

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Pour olive oil into a large resealable plastic bag and add potatoes. Seal the bag and shake to coat every piece with oil.

1/4 cup olive oil
8 garlic cloves, smashed
2 rosemary sprigs, plus additional for garnish
6 small russet potatoes, peeled
1 teaspoon paprika
Kosher salt

Steps:

  • Preheat the oven to 450 degrees F with a large rimmed baking pan inside.
  • Put the olive oil, garlic and rosemary in a small saucepan and warm over medium heat until just starting to bubble. Turn off the heat and let steep 20 minutes. Discard the rosemary sprigs and garlic.
  • While the oil is steeping, cut the potatoes into 1-inch-thick wedges. Put the potatoes in a large bowl and toss with the oil, paprika and 1 teaspoon salt.
  • Carefully remove the baking pan from the oven and spread the potatoes on the hot pan in a single layer. Sprinkle with another pinch of salt and roast until the undersides are golden brown, about 20 minutes. Flip the potatoes and continue to cook until golden brown all over, 15 to 20 minutes more.
  • Serve garnished with a rosemary sprig.

3 russet potatoes, scrubbed and cut lengthwise into about 12 wedges
3 tablespoons vegetable oil
Salt and freshly cracked black pepper

3 tablespoons unsalted butter
2 tablespoons grated fresh garlic
1 tablespoon chopped fresh parsley
2 teaspoons chopped fresh chives
1 teaspoon fresh thyme leaves, chopped

Steps:

  • Preheat the oven to 475 degrees F.
  • Soak the potato wedges in a bowl of water for 10 minutes. Drain the potatoes and then fully pat them dry with paper towels or a lint-free dish cloth.
  • Layer a baking sheet with 2 tablespoons oil and generously sprinkle with salt and pepper.
  • Add the potatoes to the pan and drizzle with the remaining 1 tablespoon oil. Sprinkle with salt and pepper and spread them evenly in a single layer on the pan. Cover tightly with foil and bake for 5 to 10 minutes. Remove the foil and bake until the bottoms are golden brown, about 10 minutes. Flip with a spatula and cook until the other side is golden brown, another 10 to 13 minutes.
  • In a small saute pan, melt the butter with the garlic and let the garlic gently cook over medium-low heat until fragrant, 5 to 7 minutes.
  • When the potatoes are cooked, toss them with the garlic butter and fresh herbs.

ROASTED PORTOBELLO BURGERS WITH ROSEMARY GARLIC OVEN FRIES

2 to 2 1/2 pounds red or white boiling potatoes, washed
3 tablespoons EVOO (extra-virgin olive oil), plus some for drizzling
2 fresh rosemary sprigs, leaves finely chopped
Salt and black pepper
2 tablespoons finely chopped garlic
8 large portobello mushrooms, stems removed
2 tablespoons balsamic vinegar (eyeball it)
4 cups arugula leaves, washed
2 jarred roasted red peppers, seeded
4 slices prosciutto di Parma
4 slices fresh mozzarella cheese

Steps:

  • Preheat the oven to 450°F.
  • Cut the potatoes into wedges and drop them onto a cookie sheet. Drizzle the potatoes with about 3 tablespoons of EVOO and toss to coat them thoroughly in the oil. Season the potatoes with the rosemary, salt, and pepper. Roast them for 25 minutes in all. Halfway through the roasting add the garlic, stir to distribute, and flip the potatoes, then continue to roast. The potatoes should be brown and tender.
  • While the potatoes roast, place the portobello mushroom caps on a cookie sheet. Season them with salt and pepper and arrange the mushrooms gill side up. Drizzle the gill side with a little EVOO and the balsamic vinegar. Transfer them to the oven and roast for 12 minutes, or until they are cooked through. Don't turn off the oven.
  • While the mushrooms are roasting, coarsely chop the arugula and roasted red peppers and combine them in a bowl. Season them with a little salt and pepper.
  • Top 4 of the cooked mushroom caps with a mound of the arugula and roasted pepper mixture, a slice of prosciutto, and a slice of mozzarella. Return the mushrooms to the oven to melt the cheese, about 2 to 3 minutes. Once the cheese has melted, remove the mushrooms from the oven and top each one with a second roasted mushroom cap to make a sandwich. Serve the roasted portobello burgers with the rosemary garlic oven fries. It's easiest to eat these burgers with a fork and knife.

  • Preheat oven to 475°F.

ADOBO, GARLIC & PARMESAN POTATO OVEN FRIES

There are many oven fry recipes but this combibation gives a tasty slightly crunchy fry. I do not use any oil on the potatoes but the spices & cheese stick better if you do. I will suggest spraying them in the recipe but it is not necessary. Holding the fries in the ice cold water until baking prevents them from discoloring. I use a Baking stone but a cookie sheet works too. If you wish leave the skin on but scrub them well.

DELICIOUS OVEN BAKED ROSEMARY & GARLIC FRIES / CHIPS

This is a recipe I kind of just discovered one day and it is now a firm family favourite in our house, I also make roast potatoes the same way - delicious!!! Be careful not to set the over too high and watch the amount of oil you put in, I have been thinking about using a spray oil but haven't yet tried it, perhaps you can and let me know how they turn out!!! Also, you can use dried herbs but I prefer fresh as I grow my own and they taste so much better, you can also use a different strength of olive oil if you wish, but I prefer extra virgin. I wouldn't recommend using anything other than olive oil mind you, it adds to the flavour! I also like to add a little bit of BBQ seasoning to mine but this is optional, if you want it, add it before cooking...

3 sprigs fresh rosemary
2 sprigs fresh thyme
3 garlic cloves
extra virgin olive oil

Steps:

  • Slice the potatoes into fries (chips for those in the UK!) LEAVE THE SKINS ON! Then, rinse under cold water and leave to drain on one side.
  • Pull leaves off of thyme and rosemary and discard stalks.
  • Slice and chop garlic cloves.
  • Slice up thyme and rosemary a little to release the flavours.
  • Add a couple of tablespoons of oil to a roasting dish and place in the over for 5 minutes to heat.
  • Once heated, pop the fries into the rosting pan and drizzle a bit more oil over, and sprinkle the herbs and garlic over before shaking to coat nice and evenly.
  • Pop back in the over, at the top of the oven for about 25-30 mins, checking every 10 minutes and shaking to coat.
  • Drain them on kitchen towel before serving.

4 or 5 medium potatoes
1 tbsp salt
1 tbsp cornstarch
1 egg white
1 clove of garlic, finely minced
1 tsp sriracha (or more/less depending on preference)
1-2 tsp thyme leaves (fresh or dried)
2-3 tbsp olive oil
salt and pepper for seasoning

Steps:

  • Preheat your oven to 350 degrees F (180 degrees C), line a large, rimmed baking tray with parchment paper, and lightly grease with some of the olive oil. Wash the potatoes to remove any dirt (leave as much skin on them as poss.). Halve the potatoes lengthways and place into a medium pot of cold water, add the salt and bring to a boil. Cook for 6-8 minutes to parboil the potatoes. Drain the potatoes and leave in the colander for 5 minutes so they can dry off. Slice each potato-half lengthways into 4 wedges. Place into a large bowl, sprinkle over the cornstarch and toss with your hands to coat (see notes). 2 -3 tablespoons olive oil
kosher salt
3 fresh thyme sprigs

Steps:

  • Preheat oven to 500 degrees. Line a baking sheet with foil and place pan in the oven.
  • Cut potatoes into 1/4 inch thick wedges.
  • In a large bowl, toss the potatoes with the garlic cloves, olive oil, plenty of salt and thyme.

6 medium floury potatoes, peeled and cut into wedges
3 large garlic cloves, chopped
1 bunch fresh basil
1/2 lemon, juice of
1/2 teaspoon black peppercorns
1/2 teaspoon salt
1/2 cup virgin olive oil
oil, for greasing oven pan

Steps:

  • Place garlic, salt, peppercorns and lemon juice in pestle and mortar and blend well into a paste, pepper should be like cracked pepper.
  • Blend olive oil and basil well in a liquidiser.
  • Mix paste and basil oil together in a large bowl.
  • Add potatoes to this mix, turn until well coated and leave in mixture until needed ( no more than 4 hours).
  • When ready to cook, grease a heavy baking tray with olive oil and tip potatoes and marinade into pan.
  • Cook in preheated oven mark 180 degrees C for approx 50 mins or until cooked through and edges crispy (time will depend on thickness of potatoes).
