1 tablespoon butter
1 tablespoon canola oil
8 large eggs
2 tablespoons water
4 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes

Steps:

  • In a large nonstick skillet, melt butter and oil over medium-high heat. Whisk the eggs, water, garlic, salt and pepper. Add egg mixture to skillet (mixture should set immediately at edges). , As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set; fold in half. Invert omelet onto a plate to serve. Sprinkle with red pepper flakes.

This is the kind of quick, simple dish Italians often throw together after an all-night party or when spirits are flagging and an infusion of food is called for. Other types of long, thin pasta, like vermicelli, linguine or taglierini, may be substituted. If anchovies are omitted, adjust the salt in the sauce.

4 to 6 plump garlic cloves
1/2 cup extra virgin olive oil
Sea salt to taste
1 pound spaghetti
3 to 4 anchovy fillets, coarsely chopped (optional)
1 small dried hot red chili pepper, crumbled, or 1/2 teaspoon hot red pepper flakes or more to taste
1/2 cup minced flat-leaf parsley

Steps:

  • Bring 5 to 6 quarts water to rolling boil.
  • Peel garlic cloves, removing green sprout at center, if necessary, and chop coarsely. In pan large enough to hold all the drained pasta, cook garlic in oil very gently over medium-low heat. Cook just until garlic softens and starts to turn golden. Do not brown.
  • Add at least 2 tablespoons salt to vigorously boiling water. Add spaghetti, stirring.
  • If using anchovies, add them to oil and garlic. Cook briefly, mashing anchovy pieces into oil with fork. Stir in chili pepper and half of the parsley, and carefully add a ladleful of the pasta cooking water. Let simmer, and reduce slightly while pasta finishes cooking.
  • Start testing pasta after it has cooked for 4 minutes. When it is still a little chewy in the center, drain and add it to pan with sauce. Turn heat up slightly, and cook, mixing pasta and sauce together well for 1 to 2 minutes, or until pasta is done to taste. Turn pasta into preheated serving bowl, sprinkle with remaining minced parsley, and serve immediately.

4 large eggs
1 tablespoon olive oil
Optional: 1/2 onion (diced)
1 red bell pepper (or yellow bell pepper, thinly chopped)
1 green bell pepper (thinly chopped)
1 tablespoon butter (or margarine)
Kosher salt (to taste)
Freshly ground black pepper (to taste)
Optional: 1/2 teaspoon garlic powder

Steps:

  • Gather the ingredients.
  • Crack eggs into a medium bowl. Add salt, pepper, and garlic powder, if using. Vigorously beat together with a fork, incorporating as much air as possible. Reserve.
  • Heat a 10-inch nonstick skillet or omelet pan over medium heat and add the olive oil. Add the diced onion, if using, and sauté for 3 to 5 minutes until tender.
  • Add the chopped peppers and cook for 3 to 4 minutes or just until the bell peppers are slightly tender. Turn off the heat.
  • Let the vegetables cool slightly, then add them to the reserved beaten eggs and combine well.
  • Using several paper towels, carefully wipe off the skillet and place it back over medium-low heat.
  • Add the butter and move the pan around to make sure the butter coats the entire bottom.
  • Pour the egg mixture into the pan.
  • Tilt the pan as you lift the edges of the omelet to allow the uncooked parts in the middle to flow out to the edges. This helps the eggs to cook quicker and more evenly.
  • Allow your vegetable omelet to cook until the bottom of the eggs is solid but not brown at all.
  • Using a rubber spatula, flip it over entirely and let it cook for 1 to 2 minutes before transferring to a plate. Or, fold the omelet in half and slide it off the pan onto a plate. The interior should be moist but not raw. Cut in half for 2 servings and enjoy!

Roasted peppers, chopped herbs and a little bit of Parmesan make for a quick omelet in the spirit of a pipérade. I often make the classic Basque pipérade, eggs scrambled with stewed peppers and tomatoes. This time, I kept it a little simpler and used my roasted peppers to fill an omelet. I added chopped, fresh herbs and a little bit of Parmesan to the mix. If your peppers are already roasted (I had plenty on hand as I'd been working with roasted peppers all week) this is a 2- to 5-minute dinner. As always, the better the eggs (farm-fresh, pastured), the better the omelet.

About 1/3 cup chopped or sliced roasted peppers (about 3 ounces)
Salt and freshly ground pepper
2 to 3 teaspoons chopped fresh parsley, thyme, marjoram or basil (optional)
2 large or extra-large eggs

2 teaspoons extra virgin olive oil

Steps:

  • Make sure peppers are nicely seasoned. Stir in chopped herbs if using.
  • Break eggs into a bowl and beat with a fork or a whisk until frothy. Whisk in salt and pepper to taste and milk if desired.
  • Heat an 8-inch nonstick omelet pan over medium-high heat. Add olive oil. When oil feels hot when you hold your hand above it, pour eggs into the middle of the pan, scraping every last bit into the pan with a rubber spatula. Swirl pan to distribute eggs evenly over the surface. Shake pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with the spatula in your other, to let eggs run underneath during the first minute of cooking.
  • As soon as a few layers of egg are set on the bottom, spoon peppers down the middle of the egg "pancake" and sprinkle on Parmesan. Jerk pan quickly away from you then back toward you so the omelet folds over on itself. If you don't like your omelet runny in the middle, jerk pan again so omelet folds over once more. Cook for up to a minute longer. Tilt pan and roll out onto a plate.

4 cloves garlic, cut into slivers
8 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1 tablespoon butter
1/4 teaspoon red pepper flakes

Steps:

  • Whisk the eggs, garlic, salt, pepper and 2 Tbs of cold water until mixed.
  • Warm the oil and butter in a 10" omelet or frying pan over medium heat.
  • When the butter begins to foam, turn up the heat to medium high and pour in the egg mixture.
  • With a fork, dray the edges of the eggs toward the middle and tilt the pan so that the uncooked egg flows underneath.
  • Continue until the omelet is just set and top is creamy and moist, about 4 minutes.
  • Take the pan from the heat at once and loosen the omelet edges with a fork.
  • Fold the omelet in half and turn out on a warm platter.
  • Sprinkle with the red pepper flakes and serve.

12 large red bell peppers
1/4 cup olive oil
6 large garlic cloves, thinly sliced crosswise
1/4 cup Sherry wine vinegar
2 tablespoons extra-virgin olive oil
1/4 cup chopped fresh parsley

Steps:

  • Preheat oven to 450°F. Toss peppers with 1/4 cup olive oil in bowl. Transfer peppers to large rimmed baking sheet. Roast peppers until partially charred, turning every 10 minutes, about 50 minutes.
  • Transfer peppers to reserved bowl; cover tightly with plastic wrap. Cool 15 minutes. Peel and seed peppers over bowl. Tear each pepper lengthwise into 6 strips. Transfer pepper strips to heavy large skillet. Strain liquid from bowl into skillet. Add garlic, vinegar, and 2 tablespoons extra-virgin olive oil to skillet. Simmer over medium heat until liquid becomes syrupy, stirring frequently, about 25 minutes. Cool. (Can be made 4 hours ahead. Cover; let stand at room temperature.)
  • Transfer pepper mixture to platter. Sprinkle with parsley and serve.

Steps:

4 hot red or orange chili peppers, such as habañero
2 red bell peppers ( 3/4 pound), roughly chopped
5 garlic cloves, roughly chopped
3/4 cup distilled white vinegar
1/2 teaspoon kosher salt

Steps:

  • Wearing rubber or latex gloves, roughly chop the chilies. Combine all ingredients in a small pot over medium-high heat. Once mixture is simmering, reduce heat to low, cover and continue to simmer until peppers are tender, 7 to 10 minutes. Do not inhale vapors; they will sting.
  • Transfer mixture to a blender and purée. Pour into a medium jar and allow to cool uncovered. Cover tightly and refrigerate for three days. Keep stored in refrigerator; sauce will last for several weeks or months.

I have made these garlic pickles for the last 8 years and friends love them. The original recipe was in "Company's Coming" but I have made a few changes to suit my taste. It is a good recipe.

1 1/2 lbs garlic, peeled,large cloves cut in half
5 hot peppers
4 cups white vinegar
1 1/3 cups granulated sugar
1 sweet red pepper, cut in strips (Optional)

Steps:

  • Combine vinegar & sugar over medium heat, stirring until the sugar dissolves, bring to a boil and boil 5 minutes Add Garlic and hot peppers,also add sweet red pepper if using.
  • Bring to a boil and boil 5 minutes.
  • Put a hot pepper into each sterilized jar, add the cloves of garlic to within 1" of the top of the jar (add the sweet red pepper if using) Fill with boiling sugar/vinegar mixture to within 1/4" of the top of the jar.
  • Release air bubbles, ensure the rim is clean and seal the jars.
  • Let the pickled garlic rest for 2 weeks and believe me you will enjoy.
