ROASTED-GARLIC MASHED POTATOES



Roasted-Garlic Mashed Potatoes image

This is based on a recipe from the Williams-Sonoma Potato cookbook. These have been our "company" or "holiday" mashed potatoes for many years. They can be made up to 2 hours ahead: cover loosely and allow to stand at room temperature; then reheat gently over low heat, stirring often, just before serving.

2 large garlic heads
2 tablespoons olive oil
5 large yukon gold potatoes, about 2 1/2 pounds, peeled and cut into rounds 1/4 inch thick
4 tablespoons unsalted butter, at room temperature
6 tablespoons whole milk, plus more if needed
kosher salt
fresh ground pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Expose the cloves of garlic head by slicing off the top 1/2 inch.
  • Place them in a small baking dish, and drizzle with olive oil.
  • Cover tightly with aluminum foil and bake about 55 minutes, or until very tender when pierced with a small knife.
  • Remove from oven, uncover, and allow to cool.
  • Break apart the garlic heads.
  • Squeeze each garlic clove into a small bowl and mash with a fork until almost smooth. You should end up with about 1/3 cup. Reserve any olive oil remaining in the baking dish.
  • Pour 1-inch of water into a large pot and bring to a boil.
  • Place the potatoes into a collapsible steamer basket and set the basket over the boiling water. (Do not allow the water to touch the bottom of the steamer basket). Cover and steam about 15 minutes, or until the potatoes are tender when pierced with a small knife. Transfer potatoes to a bowl.
  • Empty the pot and wipe dry.
  • Return the potatoes to the warm pot.
  • Add the butter and 4 tablespoons of the roasted garlic and mash well with a potato masher.
  • Add the 6 tablespoons milk, 1 teaspoon kosher salt, and 1/2 teaspoon pepper.
  • Continue to mash, adding more milk, 1 tablespoon at a time, in order to reach the desired consistency.
  • Taste and add more of the roasted garlic, if desired.
  • Serve at once, drizzled with the reserved garlic oil.

6 garlic cloves, UNPEELED
2 tablespoons olive oil
1 tablespoon fresh rosemary or 1 tablespoon fresh thyme, finely chopped
3 baking potatoes, about 1 1/2 lb. total, peeled or unpeeled, cut into 2-inch chunks
4 tablespoons unsalted butter
1/2 cup milk
salt and pepper, to taste
1/4 cup fresh chives, snipped (optional)

Steps:

  • Preheat an oven to 325°F.
  • Place the garlic cloves in a small baking dish. Drizzle with the olive oil and sprinkle with the rosemary. Cover with aluminum foil and bake until very soft, 35 to 40 minutes. Remove from the oven and, when cool enough to handle, squeeze the garlic from the skins into a small bowl. Mash with a fork. Strain the oil through a fine-mesh sieve held over the garlic and mix well.
  • Meanwhile, place the potatoes in a saucepan and add water to cover by 1 inch. Bring to a boil and cook, uncovered, until tender, about 20 minutes.
  • Just before the potatoes are ready, in a small saucepan over low heat, combine the butter and milk and heat until the butter is melted and the mixture is hot. Drain the potatoes, transfer to a warmed bowl, and mash well with a fork or potato masher.
  • Add the butter mixture to the potatoes and stir until smooth. Mix in the garlic and season with salt and pepper. Stir in the chives and serve immediately.

This classic potato dish is always on everyone's favorites list for a Thanksgiving side.

8 medium russet potatoes (about 4 pounds)
1 head peeled garlic cloves (about 15)
Coarse salt
1 1/2 cups milk
1/2 cup butter (1 stick), cut into small pieces

Steps:

  • Peel potatoes and quarter lengthwise; cut crosswise 1/2 inch thick. In a 5-quart saucepan, combine potatoes and garlic cloves; cover with water (about 8 cups) by 1 inch. Add 1 tablespoon salt.
  • Bring to a boil; reduce heat, and simmer until potatoes are easily pierced with the tip of a paring knife, 25 to 30 minutes.
  • Drain; return garlic and potatoes to pan. Stir over medium-high heat until dry, 1 to 2 minutes. Remove from heat.
  • In a small saucepan, bring milk to a boil; pour over potatoes. Add butter and 1 teaspoon of salt. Mash until smooth and creamy.

These garlic mashed potatoes are rich and very tasty! For a creamier texture, use heavy cream in place of the milk. These are also terrific topped with green onions.

½ cup milk
¼ cup butter
2 cloves garlic, minced
salt to taste
1 pinch ground white pepper
2 tablespoons sesame seeds

Steps:

  • Bring a large pot of water to boil; add potatoes, and boil until soft, about 20 to 25 minutes. Drain, and place in a large bowl.
  • Combine potatoes with milk, butter, garlic, salt, and pepper. Mix with an electric mixer or potato masher to your desired consistency. Sprinkle with sesame seeds.
