CREAMY GARLIC MASHED POTATOES
Six garlic cloves and Parmesan cheese add savory depth to Alton Brown's Creamy Garlic Mashed Potatoes, from Good Eats on Food Network.

Steps:
- Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan, add the salt, and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.
- Heat the half-and-half and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside.
- Remove the potatoes from the heat and drain off the water. Mash and add the garlic-cream mixture and Parmesan; stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.

Steps:
- Bring some water to the boil and drop in the garlic.
- Boil for 2 minutes, drain and peel.
- Melt half the butter in a small saucepan over a low heat and add the garlic.
- Cover and cook for 20-25 minutes, shaking the pan often.
- Meanwhile, cook the potatoes in boiling salted water until tender-15-20 minutes.
- Drain well.
- Mash the potatoes, and return them to the pan with the remaining butter, salt and pepper.
- Mash the cooked garlic with a fork, and stir in the cream, heat this mixture, then beat it into the potato mix.
- Fold through most of the chives-reserving a few for garnish-and serve.

Steps:
- Put olive oil, sea salt, and garlic cloves in mortar (or an aluminum or steel mixing bowl).
- Grab a pestle and mash the raw garlic cloves with the oil and salt until you have a pureed consistency (you should not be able to see pieces of garlic, but rather, pureed).
- Prepare the mashed potatoes as directed in the package of the "Simply Potatoes".
- Pour the oil concoction into the mash potatoes, along with the sour cream, until well blended and very creamy.
- I would add fresh ground pepper, but I was only allowed to add four other ingredients (gotta have my fresh ground pepper!).
- And, voilá! It's a very simple recipe packed with flavor!
