1/2 cup butter, softened
2 tablespoons minced fresh parsley
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon dill weed
1/4 teaspoon each dried basil, thyme and marjoram
Assorted crackers or fresh vegetables

Steps:

  • In a small bowl, beat the cream cheese, butter, parsley, garlic and seasonings until blended. Refrigerate overnight. Serve with crackers or vegetables.

This spread is irresistible not only for its near-life-size football shape, but for its creamy fluffy texture and bright herb flavor. A layer of ground toasted walnuts and some sour cream stitching complete the look, making this the world's most delicious football.

12 ounces cream cheese, softened
3/4 cup heavy cream
1/2 cup plus 2 tablespoons sour cream
1/4 cup mixed chopped fresh herbs, such as chives, parsley and dill
1 small clove garlic, minced
Kosher salt and freshly ground black pepper
1/2 cup walnut halves, very finely chopped
Assorted crackers, for serving

Steps:

  • Beat the cream cheese with an electric mixer on medium-high speed until fluffy, about 2 minutes. Reduce the speed to low and slowly beat in the heavy cream. Increase the speed to medium and beat until smooth. Beat in 1/2 cup of the sour cream. Beat in the herbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper.
  • Line a medium strainer about 7 1/2 inches in diameter with a few layers of cheesecloth, letting the ends hang over the edges of the strainer. Set the strainer over a bowl. Pour the cream cheese mixture into the strainer and fold the ends of the cheesecloth over the top. Gently flatten with your hands and shape into an oval football. Gather the edges of the cheesecloth up and twist until tight, trying to keep the oval shape of the spread. Place the strainer and bowl in the refrigerator 8 hours or overnight.
  • To serve, unwrap the spread and invert onto a serving dish so the rounded side is facing up. Use the cheesecloth to gently reshape the oval and taper the ends to look like a football, then discard the cheesecloth and any liquid in the bottom of the bowl.
  • Put the walnuts in a medium skillet set over medium heat and cook, stirring, until they are toasted, about 5 minutes; watch carefully so that they do not burn. Remove from the heat and cool. Sprinkle and press the nuts into the spread so it is covered. Put the remaining 2 tablespoons sour cream in a small resealable plastic bag and snip about 1/8 inch off the end of one corner. Pipe the sour cream over the spread to create the laces of a football. Serve with assorted crackers.

I got this recipe from a 1990's church cookbook. I love Blue Cheese and had to try it. The results were so good I just had to post it.

SPREAD:
1 1/4 c cottage cheese (low fat ok to use)
1 1/4 c blue cheese, crumbled (about 5 ounces)
1 large clove garlic
1 Tbsp lemon juice
2 green onions, with tops, finely chopped
1/4 c finely chopped fresh basil
2 Tbsp slivered toasted almonds
BREAD:
2 french bread baguettes, sliced into 16 pieces each
1 stick butter, melted
1/2 tsp garlic powder
1/4 tsp salt

Steps:

  • 1. SPREAD: Combine cottage cheese, blue cheese, garlic, and lemon juice in a food processor or blender. Process until smooth. Add green onions, basil, and almonds. Blend until mixed but still lumpy and not smooth. Pour dip into serving bowl and refrigerate until ready to serve.
  • 2. BREAD: Spread melted butter on both sides of bread slices. Lay on a non-stick cooking sheet. Stir together garlic powder and salt. Sprinkle on one side of buttered bread. Turn on broiler and allow it to heat up a moment. Broil bread about 6-8 inches from heating element for 30-45 minutes per side. Serve warm with Blue Cheese Herb Spread on the side.

3 teaspoon(s) minced garlic (3 cloves if you are going fresh)
1/2 teaspoon(s) salt
1/2 teaspoon(s) black pepper

1/4 teaspoon(s) onion powder

Steps:

  • Remove lid from cream cheese and soften in microwave, about 20-30 seconds. Save the container.
  • Put in medium mixing bowl and whisk in milk until creamy.
  • Stir in the rest of the ingredients until well mixed, making sure to scrape any stray ingredients from side of bowl.
  • Put mixture back in the container (if you bought a stick of cream cheese just use a tupperware container with lid). Close and refrigerate at least an hour to let harden and to let flavors soak in.

4 oz fresh goat cheese chevre, room temperature
15 oz whole milk ricotta cheese
1 1/2 tsp kosher salt
1/2 tsp ground white pepper
1 tsp dried garlic powder
1 1/2 tsp dried onion powder
1/2 tsp minced fresh thyme leaves
1 Tbsp finely minced baby chives

Steps:

  • 1. Place ricotta and goat cheese in the bowl of a stand mixer and whip until completely combined, light and fluffy. About 1 minute.
  • 2. Turn mixer on low and add salt, pepper, garlic, onion, thyme and baby chives. Scrape down sides when needed to mix thoroughly.

I got this recipe from a friend, who came up with it when trying to replicate an expensive mix she had tried. The mix makes a fantastic cheese spread. The great thing is you can prepare a large quantity of the dry mix to keep on hand for a quick appetizer or dish to pass. The mix also makes a great gift to give to friends and family at the holidays that isn't perishable. I also use this mix in my stuffing, burgers, and added into a creamy sauce I make to go over fish. The possibilities are endless.
