1/3 cup sour cream
1/4 cup crumbled feta cheese
2 garlic cloves, minced
1/2 teaspoon each garlic powder, dried oregano and basil
Bagels, split

Steps:

  • In a small bowl, beat the cream cheese until smooth. Add the sour cream, feta cheese, garlic and seasonings; mix well. Toast bagels if desired; top with spread.

Easy, easy! Just watch them closely so they don't burn! Great for snacking on, topping salads, soups, etc. They're lower in sodium than store-bought bagel chips. I make them wheat-free/gluten-free with bagels from www.kinnikinnick.com

Number Of Ingredients 3

4 tablespoons butter
1 -4 clove garlic, minced,as many as you like (1-4 is a good start for most people)
1 1/2 large bagels, sliced into 1/8 inch rounds (For Gluten-Free 2 Multi-Grain Bagels from Kinnikinnick)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large saute' pan, melt butter over medium heat.
  • Stir in garlic; cook and stir for 1 minute.
  • Add bagel slices, and toss to coat.
  • Spread on a baking sheet.
  • Bake for 15 minutes, or until crispy and dry.
  • Check frequently to prevent burning.
  • Cool.

4 whole wheat bagels
2 teaspoons crushed fresh garlic
2 teaspoons italian seasoning
2 tablespoons grated parmesan cheese
olive oil flavored cooking spray

Steps:

  • Slice bagels diagonally into 1/4" thick slices.
  • Coat the inside of a large bowl with garlic, and sprinkle the Italian seasoning over the garlic coating.
  • Place the bagel chips in the bowl, and toss gently until the chips are coated with garlic and herbs.
  • Sprinkle the cheese over the chips, and again toss gently to coat.
  • Coat a baking sheet with olive oil and arrange the chips on the sheet in a single layer.
  • Spray the tops very lightly with the cooking spray.
  • Bake at 350 for 6 minutes.
  • Turn the chips over and bake an additional 5- 8 minutes, or until lightly browned and crisp.
  • Cool to room temperature.
  • Serve with dips and spreads.

Homemade Bagel Chips with Creamy Garlic and Vegetable Spread image

4 plain bagels
1/4 cup olive oil
2 cloves garlic, peeled and smashed
1/2 teaspoon Essence, recipe follows
Creamy Garlic and Vegetable Spread, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
1 (8-ounce) package cream cheese, softened
1/4 cup sour cream
1 1/2 teaspoons minced garlic
2 ounces sun-dried tomatoes, softened in hot water, drained and chopped
3 tablespoons chopped black olives
2 tablespoons chopped chives
1/2 teaspoon fresh lemon juice
Salt, to taste

Steps:

  • Preheat the oven to 300 degrees F. Line 2 baking sheets with parchment paper.
  • With a sharp knife, very carefully slice the bagels one at a time as thinly as possible, for 8 to 10 thin slices per bagel. Spread in 1 layer on the prepared sheets.
  • Heat the oil in a small saucepan over medium heat. When oil starts to get warm, about 1 minute, remove from the heat and add the garlic and Essence. Let sit until the garlic perfumes the oil, about 10 minutes. Remove the garlic from the oil.
  • With a pastry brush, lightly brush the oil on the bagel chips. Bake until golden brown. Turn and bake on the second side until just crisp, about 5 minutes. Remove from the oven and cool on wire racks.

3 bagels, sliced into 5 to 7 thin slices
3 -5 tablespoons butter, melted
1 tablespoon crushed red pepper flakes
1 teaspoon ground black pepper
1 teaspoon paprika
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon basil
6 ounces packages cream cheese, at room temperature
1 teaspoon fresh lemon juice
1/2 teaspoon black pepper
1/2 teaspoon paprika

Steps:

  • Preheat toaster oven or a conventional oven to 350°F.
  • Cut each thin bagel slice into 4 pieces.
  • Lay out all of the pieces on a plate.
  • Next, Mix the red pepper, black pepper, paprika, oregano, garlic powder, and basil with the melted butter.
  • Pour butter mixture over bagel pieces, try to get each piece to have the butter mix on it.
  • After that you can add a dash of salt if you like.
  • Transfer Bagel pieces to ungreased cookie sheet, and bake for 5 minutes, then flip over bagel chips and bake another 5 minutes or until crispy.
  • To make the dip, take cream cheese and mix in the lemon juice, paprika, and black pepper.
  • Enjoy!
