I love garlic olives, especially the ones they serve at my local bar. I could sit there all night just eating olives! :) I am hoping this recipe will be close (Betty Crocker's Cookbook, 1972).

8 1/2 ounces ripe olives, whole, pitted, & drained
7 ounces pimento stuffed olives
1/2 cup vinegar
1/2 cup olive oil
1/2 cup salad oil
1 small onion, sliced
2 garlic cloves, finely minced

Steps:

  • Split olives slightly and place in large jar with remaining ingredients.
  • Cover tightly & shake.
  • Refrigerate at least 24 hours. To serve, remove olives with slotted spoon.

1 (8 ounce) jar kalamata olives, drained
1 (7 ounce) jar of whole green olives, drained
3 garlic cloves, sliced
1/3 cup olive oil
1 tablespoon of chopped fresh rosemary
1/2 teaspoon fresh ground pepper

Steps:

  • Combine all of the ingredients.
  • Cover and let stand at room temperature 2 hours before serving.
  • This can be made 5 days ahead of time (keep in refrigerator). Let stand at room temperature for 1 hour before serving.

1 (7 ounce) jar green olives, large, pitted
4 dried red chilies, peppers
2 large garlic cloves, sliced
1 1/2 tablespoons white wine vinegar
1 teaspoon dill weed, dried whole

Steps:

  • Drain the olives, reserving the liquid. Place the olives in a small bowl, and set aside.
  • Place the olive liquid in a small saucepan. Add the chiles and the remaining ingredients; stir well. Bring to a boil; reduce heat, and simmer, uncovered for 5 minutes. Pour the hot vinegar mixture over the reserved olives. Let cool.
  • Cover and chill thoroughly. Drain before serving.
