It was necessary for at least two recipes from [b]River Road Recipes, the Textbook of Louisiana Cuisine (1959)[/b], River Road Spinach Madeleine and Garlic Cheese Grits. - Grate Sharp Cheddar and Medium Cheddar cheese. Add cream cheese. Let it set at room temperature for 4 hours. Mix all ingredients. Shape into rolls ( i call them logs) about 6 or 8 inches long and about as wide as an egg i would say. This recipe will make about 6 logs. Roll them into the paprika until they are well dusted. Wrap them in foil and place in fridge overnight. They will keep for 4 weeks in fridge. After chilling, slice and serve them with crackers.
- Note* Aside from the 4 hours you have to set it out, it take about an hour to do the rest, but is well worth it!

GARLIC CHEESE ROLLS FOR BREAD MACHINE
I've been making this recipe for several years but I don't remember where I found it. It's very good with Italian dishes.

Steps:
- Place first 7 ingredients in bread pan and select dough cycle.
- When cycle is finished, turn dough onto a floured countertop or cutting board (use flour sparingly).
- Gently roll and stretch dough into a 24 inch rope.
- Grease two 8 inch pie pans or one 13x9 pan.
- With a sharp knife, divide dough into 24 pieces.
- Shape into balls; place into prepared pans.
- In small bowl, combine butter and garlic; pour over rolls.
- Sprinkle with parmesan cheese.
- Cover and let rise for 30-45 minutes until doubled.
- Bake at 375º for 10-15 minutes until golden brown. Remove from oven, cut apart, and serve warm.
CHEESE-FILLED GARLIC ROLLS

- Divide dough into 24 portions. Shape each portion around a cheese cube to cover completely; pinch to seal. Place each roll in a greased muffin cup, seam side down. Cover with kitchen towels; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 350°., In a small bowl, mix butter, parsley, garlic, Italian seasoning and pepper flakes. Brush over rolls; sprinkle with cheese. Bake until golden brown, 15-18 minutes., Cool 5 minutes before removing from pans. Serve warm.

GARLIC CHEESE ROLL WANNABE
I wanted to make a recipe for southern grits and one of the ingredients was "garlic cheese roll". When I checked the internet, I couldn't believe how many people were bemoaning the fact that Kraft no longer was making this important ingredient for lots of southern dishes!! As a kid, we'd take a cheese roll and a box of Triscuits when we went on a road trip. Yum! This is an attempt to replicate the original.

Steps:
- Grate the cheddar cheese on large holes of box grater. (You can use pre-shredded cheese, but the anti-clog stuff they put on it will make it less creamy when you mix it together.)
- Let cheeses sit out to soften, then mix all together well.
- Shape into four rolls and wrap tightly in plastic wrap. Cover each roll in foil.
- They can be kept for several weeks in the fridge.
