- Cut Yukon Gold and sweet potatoes into 1/8-in. slices; toss with oil and sprinkle with salt and pepper. Divide between 2 greased 15x10x1-in. baking pans. Roast at 425° for 17-20 minutes or until tender., Meanwhile, in a small skillet, heat butter over medium heat. Add garlic and thyme; cook and stir for 1 minute. Transfer roasted potatoes to a large bowl. Drizzle with butter mixture; toss to coat. Sprinkle with cheeses and, if desired, additional thyme; toss to combine.

GARLIC BUTTER
Sometimes the basics are the best! I've used this simple recipe for years to make garlic bread, and any leftovers go great on barbequed steaks, pasta, rice or potatoes. You can use any butter or margarine you like. Also, fresh or minced garlic in a jar works well. Adjust the amount of garlic to your taste.

- Preheat the oven to 200 degree celsius.
- Wash, scrub and cut the potatoes into thin chips. Transfer to a large mixing bowl and add melted butter, garlic, salt, pepper and parsley. Mix well.
- Transfer to a baking sheet lined with parchment paper and bake for 30 minutes. Gently flip/ turn the potatoes and bake for 15 more minutes until golden brown and crispy. Serve.

- Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a baking sheet with olive oil.
- Slice bagels into 1/8 inch thick rounds using a serrated knife. Arrange them in a single layer on the greased baking sheet.
