- Preheat oven to 350 degrees F (175 degrees C).
- Open pita bread halves and roughly cut into approximately 2 inch pieces. Arrange on a medium baking sheet.
- In a small saucepan over medium heat, melt butter and mix in garlic and dried Italian-style seasoning. Pour the mixture over pita bread pieces.
- Sprinkle bread with Parmesan cheese, adjusting the amount as desired. Bake in the preheated oven 10 minutes, or until lightly browned.

- Cut the head of cauliflower in half. Pluck bite-sized florets from each half. Trim bottoms of florets as necessary.
- In a medium bowl, mix the parmesan crust ingredients.

- Preheat oven to 400°. In a microwave-safe bowl, combine mozzarella cheese and cream cheese; microwave, covered, on high until melted, 30-60 seconds. Stir until smooth. Stir in egg. - Preheat the oven to 400°F (200ºC). Line a baking sheet with parchment paper and set a wire rack inside.
- Drain and rinse the artichokes. Pat them dry.
- In a medium bowl, combine the bread crumbs and vegetarian Parmesan cheese.
- Dip the artichoke hearts in the melted butter, making sure they are evenly coated. Then coat well with the bread crumb mixture.
- Place the artichoke bites on the wire rack.

- **This is Homemade Cajun Seasoning mix. Feel free to use your own recipe or store bought, we just use about 2-3 Tbsp of seasoning. Use more for more spice.
- Combine cajun seasoning in mixing bowl. Add the steak bites and toss to evenly coat.
- Heat 2 teaspoons oil in a skillet or pan over medium-high heat until hot.
- Sear the steak bites in batches for 2-3 minutes each side (about 3-4 for more well-done bites) until edges are crispy and browned, adding extra oil as needed. Remove from pan (I use tongs to place them on a cutting board/bowl--this will also allow the meat to cool a bit, soaking in its juices!).
- Reduce heat to medium. Add butter to the skillet and heat until melted. Sauté the chopped garlic until fragrant (about 30 seconds), while scraping up any browned bits from the pan.
- Take the pan off heat. Throw the steak bites back in and toss through the garlic butter to evenly coat.
- Serve warm.

- In a 12- to 14-inch non-stick skillet over medium heat, heat 1 tablespoon oil. Add the garlic and cook, stirring, until fragrant, about 1 minute. Add the greens and cook, tossing occasionally, until wilted and softened, about 5 minutes. Transfer to a large bowl and set aside.
- Wipe out the skillet and heat 2 cups oil over medium heat until a potato added to the oil sizzles gently. Add half the potatoes and onion to the pan. Cook, stirring occasionally, until the potatoes are soft but not browned, 15 to 20 minutes. Remove potato mixture with a slotted spoon and transfer to the bowl with the greens. Repeat with remaining potato mixture, reserving oil. Season potato mixture with 1 1/2 tablespoons salt and a few grinds of pepper. Add the eggs and stir carefully to combine, keeping the potatoes intact.
- In the same skillet over medium-high heat, add 1/4 cup reserved oil and swirl to coat. When the pan is hot, add the egg mixture and reduce the heat to low. Give it a shake and gently agitate the eggs in the middle of the pan with a spatula. As the tortilla sets, occasionally shake the pan and run the spatula along the rim to keep the tortilla from sticking. Cook until the eggs are almost set, 25 to 35 minutes.
- Meanwhile, make the pimentón aioli. In a small bowl, stir together mayonnaise, pimentón, Tabsaco, and garlic. Refrigerate until ready to use.
- When you can easily lift the side of the tortilla up with the spatula and see underneath, it is ready to flip. Place a plate, platter, or inverted or rimless baking sheet larger than the skillet on top of the tortilla in the skillet, then flip the skillet over so the tortilla transfers onto the plate. Slide the tortilla back into the skillet and add any runny egg that was left on the plate. Continue to cook until tortilla is light golden on the underside, pushing the edges under to give it a nice round shape, 5 to 7 minutes more.
- Flip tortilla onto a wire rack to cool. To serve, thinly slice around the perimeter to square off the sides (save those for a cook's treat). Cut the tortilla in 6 equal rows lengthwise and widthwise to make 36 bites. Serve tortilla with aioli for dipping.
- DO AHEAD: The tortilla can be made 3 days in advance, kept whole, wrapped tightly in plastic, and refrigerated. The aioli can be made 3 days in advance and refrigerated.

Halloween is a favorite holiday around here, so every year, I look out for new recipes to add to the seasonal rotation. This was inspired by a really cute photo I saw on MyRecipes. Cooking time is chilling time.

- Preheat the oven to 375. Cut the top off the head of garlic and place it on a baking sheet covered with foil and pour olive oil over it. Bake for 30-40 minutes or until golden brown and cloves are soft & mushy. (this can also be done in the toaster oven :O)
- Cut the raw sausage open and throw away the sausage casing, brown the sausage in a skillet until completely cooked.
- Chop 1-2 cloves raw garlic, about 1 1/2 teaspoons.
- In a large bowl combine cooked sausage, cream cheese, roasted garlic, raw garlic a pinch of red chili flakes, and seasoning- I just shook in a bit of the garlic powder, garlic salt, & pepper (probably around 1/4 tsp each, maybe a bit more) and mix with a hand held electric mixer until all ingredients are well combined.
- Spray a mini-muffin tin with non-stick cooking spray. Add a won-ton wrapper one cup of the muffin tray and fill with about 1 to 1 1/2 Tbsp of the garlic cheese mix. Pinch the won ton wrapper together to seal, then spray with non-stick cooking spray, repeat until the whole tin is full of lil' garlic bites!
- Bake at 375 for about 30 minutes or until they are golden brown and gorgeous!
- The tops will open up a bit- but I thought they were reminiscent of little garlic cloves and was happy with how they came out.
