Cut away chunks of pumpkin from the lid and inside scraps of your jack-o'-lantern, or use a separate pumpkin for roasting in this delectable fall side dish. Because I no longer buy pumpkins for Halloween, I've substituted butternut squash in this recipe.

2 cups butternut squash (or pumpkin cut into about TWO-bite-size pieces)
3 beets (cleaned and cut into ONE-bite-size pieces)
1 medium onion (sliced into slivers)
2 garlic cloves (minced)
1 tablespoon fresh rosemary (minced)
salt and pepper
4 tablespoons butter (melted)

Steps:

  • Preheat oven to 400F degrees.
  • In a large bowl, toss together the butternut squash, beets, onion, garlic, rosemary, and melted butter. Place the mixture in a 13x9 Pyrex casserole dish and sprinkle with salt and pepper.
  • Roast in the oven for 35-40 minutes, or until the squash (or pumpkin) and the beets are tender.

This recipe from Canadian Living magazine has been in my "recipes to try file" since Nov 2003. I finally did so last night & wish I had done so much sooner. Its so easy & the flavour combination is so good!

2 heads garlic
6 medium beets, scrubbed & trimmed (about 1 1/4 lbs)
1 tablespoon extra virgin olive oil
1 tablespoon chopped fresh tarragon (or 1 tsp dried)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Separate garlic cloves from head & peel.
  • Place garlic & beets in a sheet of aluminum foil that has been lightly spritzed with cooking spray; roast in preheated 375F oven until tender, about 1 1/2 hours or 1 hour for smaller beets.
  • Let beets cool enough to handle & cut into wedges; set garlic & beets aside.
  • Heat oil in a large skillet over medium heat; cook tarragon, salt & pepper, stirring constantly, for 2 minutes.
  • Add beets & garlic; toss gently to coat & heat through, about 2 minutes.

6 large garlic cloves, unpeeled
4 medium beets (about 1 pound)
1/2 pound boiling potatoes
1 1/2 tablespoons balsamic vinegar
1 tablespoon whole milk
1/4 teaspoon fresh lemon juice
4 to 6 tablespoons water

Steps:

  • Preheat oven to 450°F.
  • Wrap garlic cloves together tightly in foil. Trim beet stems to 1 inch if necessary and scrub beets. Wrap beets together tightly in foil. Roast garlic and beets in middle of oven until garlic is soft, about 30 minutes. Remove garlic from oven and continue to roast beets until very tender, about 45 minutes more. In a saucepan cover potatoes with cold salted water and simmer until tender, about 30 minutes. Drain potatoes and keep warm, covered.
  • Unwrap garlic and peel skin from cloves, transferring garlic to a food processor. Unwrap beets carefully and, when cool enough to handle, slip off skins and stems and discard. Reserve 1 beet. Quarter remaining beets and add to processor. Peel and halve potatoes. Add potatoes to processor with vinegar and milk and pulse until mixture is just smooth (do not over-process or potatoes will become gluey).
  • Transfer purée to cleaned saucepan and stir in lemon juice, 2 tablespoons water, and salt and pepper to taste. Heat purée over low heat, stirring, until hot. Stir in 2 tablespoons water and add enough remaining water to reach desired consistency. Cut reserved beet into 8 wedges and serve with purée.

A departure from the standard pairing of beets with goat cheese is a dressing of walnuts, garlic and fresh orange juice. Note that all of these have some bitterness or acidity, which counter the sweetness of beets beautifully.

2 pounds red beets, about 4 large, trimmed of greens
1/4 cup olive oil
6 cloves garlic, peeled
1/2 cup walnuts
2 tablespoons to 1/4 cup freshly squeezed orange juice
Salt
black pepper to taste
1/4 cup chopped fresh parsley leaves, for garnish

Steps:

  • Preheat oven to 400 degrees. Wash beets well. While still wet, wrap them individually in foil and place on a cookie sheet or roasting pan. Bake beets, undisturbed, for 60 to 90 minutes, until a thin-bladed knife pierces each with little resistance. (They may cook at different rates; remove each one when it is done.)
  • Meanwhile, put oil in a skillet over medium-low heat. When it is warm, add garlic and cook until fragrant and beginning to soften, about 6 minutes. Add walnuts and continue to cook until they begin to color, about another 4 minutes. Let mixture cool slightly and then put it in a small food processor; process until you have a relatively smooth paste. Add orange juice to taste and sprinkle with salt and lots of pepper.
  • After beets have cooled, peel off skins. Slice beets into wedges or cubes and toss with dressing. Taste and adjust seasoning, garnish with parsley and serve.

3 cups cubed peeled red beets
2 cups cubed peeled carrots
3 tablespoons butter or 3 tablespoons ghee
3 garlic cloves, mashed
1/2 teaspoon dried rosemary
sea salt, to taste
fresh ground black pepper, to taste

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Place the beets in a large mixing bowl, and the carrots in a 9 inch by 13 inch glass baking dish. (Mixing the roots separately keeps the carrots from turning pink from beet juice.).
  • Place the butter or ghee in a microwave-safe coffee mug and add the garlic. Microwave until the butter is melted. Stir in the dried rosemary.
  • Pour half of the melted butter mixture over the beets, and pour half over the carrots. Sprinkle generously with sea salt and freshly ground black pepper. Toss each of the root vegetables to coat them with the butter mixture.
  • Dump the beets into the baking dish with the carrots.
  • Roast for 55 minutes, stirring halfway through.
  • Serve.

3 tablespoons fresh lemon juice
5 garlic cloves
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons drained capers

Steps:

  • Cook beets in large pot of boiling salted water until tender when pierced with skewer, about 30 minutes. Drain. Cool slightly. Peel and cut beets into 1/4- to 1/2-inch-thick slices; set aside. Combine beet greens and 3 tablespoons water in large skillet. Cover and cook over medium-high heat until greens are wilted, about 1 minute; set aside. Cook potato in small saucepan of boiling salted water until tender, about 15 minutes. Drain. Return to saucepan and mash.
  • Blend walnuts, breadcrumbs, 2 tablespoons lemon juice, garlic, and 2 tablespoons water in processor until smooth. Transfer to bowl. Mix in 1/2 cup mashed potato, 1/4 cup olive oil, and 1 tablespoon lemon juice. Season with salt and pepper. If thick, thin sauce with 2 to 3 tablespoons water.
  • Spoon sauce onto center of platter; drizzle with 2 tablespoons oil. Surround with beet greens and beet slices; drizzle with vinegar. Sprinkle with capers.

1/3 cup white wine vinegar (or plain white vinegar)
1 teaspoon salt

Steps:

  • Wash beets and cut off greens. Wash and cook the greens by boiling in water, or they can be sauteed with a little olive oil.
  • Wrap beets in foil and place in a sheet pan and bake in a 350 degree oven for 1 hour.
  • Test with knife for soft center.
  • Let cool slightly. Unwrap and peel beets. Cut into quarters or slice.
  • Place in a bowl and add garlic, olive oil, vinegar.
  • Add the salt and pepper to taste.
  • Serve warm or cold.
  • Can be made 1-2 days ahead of time.

  • Place unpeeled potatoes in small pot and bring to a boil. Reduce heat to cook until ready. Test with knife for soft center.
  • When cooled slightly, peel. and place potatoes and garlic in medium bowl and mash.
  • Add vinegar, salt and pepper.

  • Can be served at room temperature or cold.
  • Can be made ahead 1-2 days.

Chilled Beets and Asparagus with Garlic Chive Blossoms image

2 bunches baby beets, peeled and quartered
1 bunch asparagus, trimmed and cut on the bias
1 cup water
1/2 cup orange blossom water
1 1/2 cups sugar
1 tablespoon fresh lemon juice
1 bunch garlic chives with blossoms, roughly chopped
4 ounces goat cheese
About 8 cups cleaned mixed greens, for serving

Steps:

  • First, a note on beets: they'll stain anything! Make sure you wear gloves as you're peeling the beets unless you want your hands to be an attractive magenta color!
  • Place the quartered beets in a large saucepan and cover with cold water. Place over medium high heat and bring to a boil. Immediately lower the heat to medium and let the beets cook for about 20 minutes or just until fork tender. Drain the beets and run them under cold water. Drain and set aside. As you're doing this, get another pot of water boiling and drop the prepped asparagus into it for just 2 minutes. Drain the asparagus and run it under cold water immediately. This is called blanching. Drain and add to the beets.
  • In yet another saucepan, add the water, orange blossom water, sugar and lemon juice. Bring to a boil, reduce the heat to medium and simmer until the glaze has reduced by half and has thickened slightly. Toss with the vegetables, and add the roughly chopped garlic chives. Top with the chive blossoms and crumbled goat cheese and serve as a first course on a bed of mixed greens.

4 TB olive oil
1 lb raw beets, peeled and quartered
1 TB finally chopped thyme or 1 1/2 t dried herbs de provence
1-2 fresh red chilies, seeded and chopped roughly
4 large garlic cloves unpeeled

Steps:

  • Put the oil in a small roasting pan and place in the oven at 400 for 5 minutes until very hot. Add the beets, turning well to coat. Season generously with salt, pepper, and thyme. Roast for 45 minutes, turning occasionally, then add the chili and garlic. Roast for another 40 minutes until the garlic is very soft and puree like. Remove garlic skin and stirr puree into the oil. Transfer to a warm serving dish, and pour the oil from the pan over the beets. Garnish with fresh thyme. Serve with a green salad and maybe a side of coucous.
