2 large cucumbers, chopped
1 small red onion, sliced
1/2 cup white wine vinegar, divided
2 pounds small red potatoes, halved
2 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoon celery seed
1/2 teaspoon coarsely ground pepper
1 package (6 ounces) fresh baby spinach
8 bacon strips, cooked and crumbled
1/2 cup snipped fresh dill
1/4 cup olive oil

Steps:

  • In a small bowl, combine the cucumbers, onion and 1/4 cup vinegar. Let stand for 20 minutes., Meanwhile, place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain. Transfer to a large bowl. Drizzle with remaining vinegar; sprinkle with garlic, salt, celery seed and pepper. Cool. , Add the spinach, bacon, dill, oil and cucumber mixture; toss to coat. Serve at room temperature or chilled.

3 pounds small red potatoes, quartered
1 pound fresh green beans, trimmed and cut in half
1/3 cup olive oil
1/4 cup red wine vinegar
1/4 cup minced fresh basil
2 tablespoons minced fresh parsley
1-1/2 teaspoons salt
1/2 teaspoon pepper
6 hard-boiled large eggs, sliced
1 cup grape tomatoes

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender, adding beans during the last 4 minutes of cooking. Drain. Transfer to a large bowl., In a small bowl, whisk oil, vinegar, basil, parsley, salt and pepper. Pour over potato mixture; toss to coat. 2 cloves garlic, peeled
2 1/2 teaspoons kosher salt
1/2 cup mayonnaise
2 1/2 tablespoons white wine vinegar
Freshly ground black pepper
8 cups water
2/3 cup dry white vermouth
3 cloves garlic, smashed
2 tablespoons kosher salt plus additional for seasoning
1 sprig fresh thyme
1 bay leaf
4 black peppercorns
2 pounds small red-skinned waxy potatoes, sliced into 1/8-inch-thick rounds
5 medium carrots, peeled and sliced into 1/8-inch-thick rounds
1 bunch radishes, sliced into 1/8-inch-thick rounds (about 8)
1/2 English cucumber or 1 large Kirby cucumber, sliced into 1/8-inch-thick rounds
1 cup grape or cherry tomatoes, halved
3 scallions (white and green parts), thinly sliced
Freshly ground black pepper
1/2 cup lightly packed chopped mixed fresh herbs, such as flat-leaf parsley, dill, or tarragon
6 lemon wedges

Steps:

  • For the dressing: Smash the garlic cloves, sprinkle with the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Put in a bowl and whisk with the mayonnaise, vinegar, and black pepper to taste.
  • For the salad: Put the water, vermouth, garlic, salt, thyme, bay leaf, peppercorns, and potatoes in a large saucepan and bring to a boil. Add the carrots, lower the heat, and cook until the vegetables are tender but not mushy, about 5 minutes. Stir in the radishes, then immediately drain all the vegetables in a colander in the sink. Remove and discard the garlic, thyme, bay leaf, and peppercorns. Cool slightly and toss the vegetables with the dressing. Cover and refrigerate about 30 minutes. (The salad can be prepared up to this point a day ahead.)
  • About 10 minutes before serving, toss the cucumber, tomatoes, and scallions in a small bowl with salt and black pepper to taste. When ready to serve, fold the cucumber mixture and herbs into the potato salad. Serve with lemon wedges.

1 1/2 pounds red potatoes (about 6 small)
1/4 cup plus 2 teaspoons extra-virgin olive oil
1 medium onion, chopped
1 large garlic clove, minced
2 large tomatoes, diced (about 2 1/2 cups)
5 teaspoons balsamic vinegar or red wine vinegar
1 tablespoon minced fresh basil or 1 teaspoon dried, crumbled
1/4 teaspoon dried oregano, crumbled

Steps:

  • Cook potatoes in large pot of boiling salted water until just tender. Drain and cool slightly. Cut potatoes into small pieces and place in large bowl.
  • Meanwhile, heat 2 teaspoons olive oil in heavy medium skillet over medium-low heat. Add onion and sauté until translucent, about 5 minutes. Add garlic and cook 1 minute longer. Add onion mixture to potatoes. Add remaining 1/4 cup oil, tomatoes, vinegar, basil and oregano. Toss to combine well. Season salad to taste with salt and pepper.

This potato salad combines earthy, waxy fingerling potatoes with crunchy spring vegetables and mayonnaise flavored with fresh herbs.

3 pounds fingerling potatoes
1 tablespoon plus 2 teaspoons coarse salt
2 tablespoons white-wine vinegar
1 bunch asparagus, ends trimmed
1 cup fresh shelled peas
1/2 cup fresh mint leaves, plus sprigs for garnish
1/2 cup fresh basil leaves, plus sprigs for garnish
3/4 cup mayonnaise
2 tablespoons freshly squeezed lemon juice, (1 lemon)
1/2 teaspoon freshly ground pepper
8 ounces sugar snap peas, strings removed and cut in half
1 fennel bulb, finely diced (10 ounces, 2 cups diced)

Steps:

  • Place potatoes in a large pot with enough water to cover by several inches. Bring to a boil over high heat, add 1 tablespoon salt, and lower to a gentle boil. Cook until potatoes are tender when pierced with a knife, about 15 minutes. Drain into a colander. Using gloves or paper towels to protect your hands, slice hot potatoes into 3/4-inch-thick rounds. Drizzle with vinegar, and set aside.
  • Fill a large bowl with ice and water. Fill a large straight-sided saute pan with water, and place over high heat. Bring to a boil; add 1 teaspoon salt and the asparagus. Cook until just barely tender, about 3 minutes. Transfer to ice bath until cool. Dry, and cut diagonally into 2-inch pieces. Place peas in boiling water, and cook until bright green, about 1 minute. Drain into a colander; transfer to ice bath to stop cooking. Dry on towels.
  • Place mint, basil, mayonnaise, lemon juice, remaining teaspoon salt, and pepper in the bowl of a food processor, and pulse until smooth. Transfer to a large bowl, add reserved potato mixture, asparagus, peas, sugar snap peas, and fennel, and toss to combine. Garnish with basil and mint leaves, and serve.

1 bay leaf
3 cloves garlic, smashed
2 pounds small red-skinned potatoes, cut into 1/4-inch-thick rounds
Kosher salt
4 medium carrots, cut into 1/4-inch-thick rounds
3/4 cup fat-free plain yogurt
1/4 cup low-fat mayonnaise
1 tablespoon plus 1 teaspoon whole-grain or dijon mustard
3 scallions, minced, whites and greens separated

Freshly ground pepper
2 stalks celery, cut into 1/4-inch-thick slices
1 small Kirby cucumber, cut into 1/4-inch-thick rounds

Steps:

  • Peel a 2-inch-long strip of zest from the lemon; tie into a bundle with the parsley and thyme sprigs and bay leaf using kitchen twine. Put in a saucepan with the garlic, potatoes, 2 tablespoons salt and 8 cups water. Bring to a boil, then reduce to a simmer and cook about 10 minutes. Add the carrots and cook until the potatoes are tender and the carrots are crisp-tender, about 5 more minutes. Reserve 1/4 cup of the cooking water, then drain the vegetables and discard the herb bundle. Let cool. Meanwhile, finely grate 2 teaspoons lemon zest and squeeze 3 tablespoons juice into a large bowl. Whisk in the yogurt, mayonnaise, mustard, scallion whites, chopped parsley, reserved cooking water, 1 teaspoon salt and 3/4 teaspoon pepper. Add the potatoes, carrots, celery and cucumber to the dressing and toss. Chill about 4 hours. Top with the scallion greens.

Really really tasty when warm and also yummy cold! You can half the recipe easily or double it! Haricot vert is French for green beans. Haricot meaning beans and vert meaning green. French green beans are longer and thinner than most American varieties. They are also more tender and have a more complex flavor. For the most part, they are interchangeable with American green beans which are also called string beans or snap beans. If you are unable to find haricot verts, substitute with the thinnest young green beans you can find. Made for the CrazeE contest 2009

3 lbs new potatoes
1 lb fresh French haricots vert, trimmed, cut in 1-inch pieces
1 small zucchini, trimmed, cut in 1/2-inch pieces (optional)
2 scallions, sliced thin (or about 4 tbls. chopped chives)
2 hard-boiled eggs, sliced (or chopped)
1/4 cup fresh parsley, finely chopped
1/3-2/3 cup mayonnaise
1/8-1/4 cup plain yogurt
2 -4 tablespoons whole grain mustard (Dijon is good)
3 -6 tablespoons red wine vinegar (or 2 tbls. red wine vinegar and 1 tbls. balsamic vinegar)
1/4-1/2 teaspoon fresh ground black pepper (or more to taste)
1 -2 tablespoon fresh tarragon, finely chopped (or 1/2 tsp. dried, chopped fine)
chives (to garnish)

Steps:

  • Place the potatoes in a pot. Cover with water, sprinkle with 1/4 teaspoons salt, and bring to a boil. Cook about 15-20 minutes, or until tender when pierced with a fork. Drain, rinse under cold water.
  • Meanwhile, bring another pot of salted water to a boil. Cook the haricots verts and zucchini for about 2-3 minutes, until beans turn bright green. Strain them and rinse and drain in colander with cold water to stop the cooking process.
  • In bowl, mix mayonnaise, yogurt, mustard, vinegar(s), black pepper, and tarragon until smooth. Use the larger amount for lots of creamy dressing.
  • Peel potatoes, cut into bite size chunks(1/2"-1"),.
  • Place potatoes, zucchini and beans, scallions, eggs, and parsley into a serving bowl and toss gently with mayonnaise dressing. Garnish with chopped chives and serve warm or cold.
  • Note:.
  • If serving cold the next day, make a little more dressing and add some in when ready to serve. The potatoes absorb alot of the liquid and the salad may be a little dry.

3 large shallots, cut into chunks
1/4 cup plus 2 tablespoons extra-virgin olive oil

1 cup sugar snap peas, trimmed
2 tablespoons tarragon vinegar or white wine vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1 cup heirloom cherry tomatoes, halved if large
2 Persian cucumbers, diced
3 radishes, thinly sliced
1/2 cup chopped fresh parsley
1/4 cup chopped fresh chives
2 tablespoons chopped fresh tarragon

Steps:

  • Put a rimmed baking sheet in the lower third of the oven and preheat to 425 degrees F. Toss the potatoes and shallots with 2 tablespoons olive oil, 1/4 teaspoon salt and a few grinds of pepper. Spread on the hot baking sheet and roast, tossing halfway through, until tender and golden, 25 to 30 minutes. Let cool.
  • Meanwhile, bring a medium saucepan of salted water to a boil. Add the snap peas and cook until bright green but still crisp, 1 to 2 minutes. Transfer to a bowl of ice water; let cool. Drain and pat dry.
  • Whisk the vinegar, mustard, honey, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Slowly whisk in the remaining 1/4 cup olive oil. Add the roasted potatoes and shallots, peas, tomatoes, cucumbers, radishes, parsley, chives and tarragon. Season with salt and pepper and toss.

Steps:

  • Whisk oil, vinegar, orange juice, mustard, shallot, orange zest and pepper. Reserve 1/4 cup dressing in measuring cup.
  • Bring 6 cups water to a boil in large sauce pan. Add green beans and salt. Cook uncovered, until green beans are slightly tender but still crisp, about 4 minutes.
  • Using slotted spoon, transfer beans to plate lined with paper towels to drain briefly, then add to bowl with dressing. Toss to coat.
  • Add potatoes to still simmering water. Bring back to a boil and cook until paring knife can be inserted into potatoes with no resistance, 7 to 10 minutes. Using slotted spoons transfer potatoes to colander and drain briefly. Add hot potatoes to bowl with beans and dressing.

2 hard boiled eggs
1 celery stalk chopped

1 small dill pickle
2 hefty broccoli florets, chopped

1/2 cucumber, chopped
1/2 c plain greek yogurt
1/2 c mayo
1/2 c sour cream
2 large baby carrots, sliced
1 small tomato, chopped
1 tsp garlic salt
1 Tbsp fresh dill, chopped
1 Tbsp fresh parsley, chopped
1 tsp prepared horseradish
1 tsp cajun seasoning
1 Tbsp dijon mustard
fresh cracked pepper to taste
2 Tbsp heaping, feta cheese

2 pounds red potatoes, cubed (about 5 cups)
1 cup reduced-fat mayonnaise
2 tablespoons white wine vinegar
2 garlic cloves, minced
3/4 teaspoon pepper
1/2 teaspoon salt
1/4 cup minced fresh or dried chives
2 tablespoons snipped fresh dill or 2 teaspoons dill weed
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
1 tablespoon capers, drained

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10-15 minutes or until tender. Drain; cool completely., In a large bowl, whisk mayonnaise, vinegar, garlic, pepper and salt until blended. Stir in herbs and capers. Add potatoes; toss to coat. Refrigerate, covered, until cold.

This Garden Vegetable Potato Salad is a fresh mix of red potatoes, tomatoes, peppers, and red onion sprinkled with oregano and tossed in a simple oil and vinegar dressing.

10 petite red potatoes, boiled, quartered
1 cup grape tomatoes, quartered
1 green bell pepper, diced
1 small red onion, diced
½ tablespoon dried oregano
3 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 garlic clove, minced
salt and fresh-ground pepper, to taste

Steps:

  • Bring a pot of water to a boil; add potatoes and cook for 10 to 12 minutes, or until fork tender.
  • Cut each potato into fourths.
  • Combine potatoes and the rest of the salad ingredients in one large mixing bowl; set aside.
  • In a small bowl, whisk together olive oil and balsamic vinegar.
  • Add minced garlic, salt, and a few grinds of black pepper.
  • Continue to whisk until thoroughly combined.
  • Adjust the salt, pepper, or the proportion of oil and vinegar to taste.
  • Gently stir dressing into salad.
  • Cover salad with plastic wrap and set in fridge for 30 minutes to 1 hour.
  • Mix and serve.

  • For the dressing: Smash the garlic cloves, sprinkle with the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Put in a bowl and whisk with the mayonnaise, vinegar, and black pepper to taste.For the salad: Put the water, vermouth, garlic, salt, thyme, bay leaf, peppercorns, and potatoes in a large saucepan and bring to a boil. Add the carrots, lower the heat, and cook until the vegetables are tender but not mushy, about 5 minutes. Stir in the radishes, then immediately drain all the vegetables in a colander in the sink. Remove and discard the garlic, thyme, bay leaf, and peppercorns. Cool slightly and toss the vegetables with the dressing. Cover and refrigerate about 30 minutes. (The salad can be prepared up to this point a day ahead.)About 10 minutes before serving, toss the cucumber, tomatoes, and scallions in a small bowl with salt and black pepper to taste. Yukon Gold Garden Potato Salad With Apples and Herbs image

Made with petite new potatoes, crisp red apple, and fresh garden herbs! A lovely alternative to regular potato salad, with the addition of tarragon and lovage! Lovage is a wonderful old-fashioned herb, very similar to celery, but a little stronger in taste and with a hint of anise -- a new addition to my herb garden and it is quickly becoming one of my favorites! You may substitute celery for the lovage, if you wish.

2 lbs petite yukon gold potatoes, washed and scrubbed, but not peeled
1/3 cup mayonnaise
2 tablespoons onions, finely chopped
1 small red apple, chopped
4 tablespoons fresh lovage, chopped (stems and leaves, or use celery)
1/2 teaspoon celery seed (or lovage seeds)
2 teaspoons finely minced fresh tarragon (or 1 teaspoon dried tarragon)
1 tablespoon tarragon vinegar
2 hardboiled egg, chopped
salt and pepper, to taste
fresh tarragon, to garnish (optional, or fresh lovage)

Steps:

  • Bring unpeeled scrubbed potatoes to a boil in enough salted water to cover. Lower heat to a simmer and cook until potatoes test done with a fork, about 15 minutes.
  • Drain potatoes in a colander, and allow to cool. When cool, slice potatoes lengthwise and then into 1/4-inch slices.
  • Mix together the remaining ingredients in a large bowl. Add the sliced potatoes, stirring gently to combine. Garnish with a sprig of fresh tarragon or lovage.
  • Serve immediately, or cover and chill until serving time.

2 lb. new potatoes, halved
1/4 cup KRAFT Zesty Italian Dressing
1 cup halved cherry tomatoes
1 cup fresh corn kernels, cooked
1/2 cup thin red pepper strips
1/4 cup thin red onion slices
1/4 cup chopped fresh basil
1/4 cup sour cream
1 Tbsp. GREY POUPON Dijon Mustard

Steps:

  • Cook potatoes in boiling water in saucepan 15 min. or just until tender; drain.
  • Place warm potatoes in large bowl. Add dressing; toss to coat.
  • Add remaining ingredients; mix lightly. Refrigerate several hours or until chilled.
