3/4 cup chopped onion
2 tablespoons canola oil
1 cup ketchup
1/2 cup water
1/2 cup cider vinegar
2 tablespoons sugar
2 tablespoons Worcestershire sauce
2 tablespoons honey
2 teaspoons ground mustard
2 teaspoons paprika
3/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce
1 large lemon, sliced
2-1/2 to 3 pounds miniature hot dogs or smoked sausage links

Steps:

  • In a saucepan, saute onion in oil until tender. Stir in the next 11 ingredients. Add lemon. Bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 20-25 minutes, stirring occasionally. Discard lemon slices. Place hot dogs in a 13x9-in. baking dish. Top with sauce. Bake, uncovered, at 350° until heated through, 18-20 minutes. Keep warm; serve with toothpicks.

2 tablespoons margarine or butter
1 large onion, chopped (1 cup)
2 medium carrots, thinly sliced (1 cup)
2 cans (14 1/2 ounces each) ready-to-serve vegetable or chicken broth
3/4 cup uncooked brown or regular long grain white rice
4 new potatoes, cut into fourths
1 large red bell pepper, cut into 2 x1/2-inch strips
1 medium zucchini, thinly sliced (1 cup)
1 medium yellow summer squash, thinly sliced (1 1/2 cups)
1 cup fresh or frozen whole kernel corn
1 tablespoon chopped fresh or 2 teaspoons dried basil leaves
1 teaspoon chopped fresh or 1/2 teaspoon dried thyme leaves
1/4 teaspoon pepper
1 can (15 to 16 ounces) garbanzo beans, rinsed and drained

Steps:

  • Melt margarine in 4-quart Dutch oven over medium heat. Cook onion and carrots in margarine, stirring occasionally, until onions are tender.
  • Stir in broth and rice. Heat to boiling; reduce heat to low. Cover and simmer 20 minutes.
  • Stir in remaining ingredients. Cover and simmer 10 to 15 minutes or until vegetables are tender.

1 tablespoon olive or vegetable oil
1 medium zucchini, cut into 1/4-inch slices (1 cup)
1 medium yellow summer squash, cut into 1/4-inch slices (1 cup)
1 cup sliced mushrooms
1 cup grape tomatoes or cherry tomatoes, cut in half
2 tablespoons chopped fresh chives
1/2 teaspoon garlic salt

Steps:

  • Heat oil in 10-inch nonstick skillet over medium-high heat. Cook zucchini, yellow squash and mushrooms in oil 4 to 5 minutes, stirring frequently, until vegetables are crisp-tender.
  • Stir in tomatoes. Sprinkle vegetables with chives and garlic salt. Cook 2 to 3 minutes, stirring frequently, just until tomatoes begin to soften.

The name says it all! I've never made this but when I shared it in a recipe newsgroup, I got a lot of good feedback on it.

1 cup vegetable oil
3 eggs
1 1/2 cups sugar
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
1 cup finely shredded carrot
1 cup finely shredded zucchini
1/2 cup finely shredded beet
1 1/2 cups semi-sweet chocolate chips
6 ounces cream cheese, softened
1/2 cup butter or 1/2 cup margarine, softened
2 teaspoons vanilla extract
4 1/2 cups powdered sugar

Steps:

  • In large bowl, beat oil, eggs, sugar and vanilla.
  • Combine dry ingredients; add to egg mixture and mix well.
  • Stir in vegetables.
  • Add chocolate chips and mix well.
  • Pour into a greased and floured 13x9-inch baking pan.
  • Bake at 350°F for 35-40 minutes or test done.
  • For frosting, beat cream cheese, butter and vanilla until light and fluffy.
  • Gradually beat in powdered sugar until smooth.
  • Spread over cooled cake.
  • Store in the refrigerator.

2 (10 ounce) packages frozen broccoli, chopped, cooked and drained
1 (17 ounce) can whole kernel corn
1/4 cup parmesan cheese, grated
1 1/2 cups cottage cheese
1/2 cup sour cream
1 tablespoon flour
3 eggs
2 tablespoons onions, minced
1 1/2 teaspoons salt
1/4 teaspoon pepper

Steps:

  • Beat or blend cottage cheese, sour cream, flour, eggs and seasonings.
  • Fold into veggies.
  • Pour into a 2-quart casserole.
  • Top with parmesan cheese.
  • Bake at 325°F for 45 minutes.

GARDEN SPREAD FINGER SANDWICHES

Three 8-ounce packages cream cheese, slightly softened
1/4 cup finely diced red onion
1 tablespoon chopped chives, or more to taste
1 tablespoon chopped fresh dill, or more to taste
6 green onions, sliced
1 large carrot, peeled and finely diced
1 stalk celery, finely diced
1 clove garlic
1/2 red bell pepper, finely diced
12 thin slices nutty wheat bread

Steps:

  • Combine the cream cheese with the red onion, chives, dill, green onions, carrot, celery and garlic in the bowl of a food processor. Pulse until mixed together and the spread reaches the consistency you want.
  • On 4 slices of bread, top one side of each with 2 tablespoons of the mixture. Top each with another slice of bread. Spread the tops of the second round of bread slices with 2 tablespoons more of the garden spread, then top with the remaining bread slices. Wrap the sandwiches and refrigerate for 1 hour.
  • When ready to serve, cut off the crusts, then cut each sandwich into 3 even fingers or 4 triangles.
