This is the recipe I use when making my homemade bread stuffing. I also use this recipe to make homemade coutons. It is incredibly fragrant while baking and will fill your house with it's fabulous aroma! This loaf is excellent for any cold meat sandwich you can dream up! With it's many uses, I hope you enjoy it as much as I have! I found this recipe in Electric Bread. 12-16 cup pan capacity; or one regular size loaf

1 1/4 cups water
2 tablespoons butter
3 cups white bread flour
2 tablespoons dry milk
2 tablespoons sugar
1 1/2 teaspoons salt
2 teaspoons chives
2 teaspoons marjoram
2 teaspoons thyme
1 teaspoon basil
1 1/2 teaspoons fast rise yeast or 2 teaspoons active dry yeast

Steps:

  • Using the instructions from your bread machine, combine ingredients accordingly.
  • Success Hints:* Use dried herbs that are flaked and not ground.
  • If using fresh herbs, double the amount.
  • *To make Rosemary Bread, use half as much marjoram and thyme and replace the chives and basil with fresh chopped rosemary.
  • *Any combination of spices may be substitiuted according to your tastes.
  • *The recipe can be made with the white, rapid or delay bake cycles.

Although written here for mixing by hand (they are afraid to buy a bread maker for fear of turning into a 3-loaf-of-bread-per-week family. I understand their angst! ;D) you could pile everything into the Automatic Bread Machine and relax

Number Of Ingredients 15

1 1/4 cups water (room temp to warm, not ice cold)
2 teaspoons yeast (or one packet)
1 tablespoon sugar
1 tablespoon extra virgin olive oil
1 tablespoon garlic, minced
3 1/4 cups bread flour (my favorite is still King Arthur)
1 tablespoon sugar
1 tablespoon Italian herb seasoning, blend (or 1 t each of basil, thyme and rosemary)
1 teaspoon sea salt
1 teaspoon black pepper, cracked
1/4 cup parmesan cheese
1 tablespoon oil
1 egg
1 tablespoon water
1 tablespoon sesame seeds (optional)

Steps:

  • In a bowl or large measuring cup combine the water, sugar and yeast. Stir to mix. Set aside for about 10 minutes.
  • In a large mixing bowl, combine the flour, sugar, herbs, salt, pepper and Parmesan. Stir to mix.
  • Add the oil and the garlic to the yeast-water mix. Stir to mix.
  • Add the liquids to the dry ingredients. Stir to mix thoroughly. A dough ball will form.
  • Knead dough in bowl or lightly floured surface for about 8 minutes.
  • When finished kneading, coat all sides of the ball of dough with the 1T extra olive oil. Let rest in a draft free place (inside the oven will work) for about 1 1/2 to 2 hours -- until the dough has doubled in volume.
  • After that, 'punch down' the dough and knead briefly.
  • Form into loaf, place in baking pan (I line the pan with parchment paper so it doesn't stick to the pan) and let rest again for about 40 - 50 minutes.
  • Pre-heat oven to 350 degrees Fahrenheit.
  • Combine egg and water by whisking with fork. This is your 'egg wash'.
  • Using a soft basting brush or pastry brush, paint loaf with egg wash. If you are using the sesame seeds, sprinkle them on top now. Make 1 long superficial slice down the middle of the loaf or 4 diagonal slices.
  • Bake for about 33 - 35 minutes. Bread is done when it sounds hollow when tapped.
  • Enjoy with Italian foods, as toast or later on, dry and use as croutons.

You can easily increase the amounts of seasonings to your taste. (NOTE: Many people seem to be needing to add extra water, so I'm adding an adjustment to the recipe.)

My local bakery occasionally makes an absolutely fabulous olive bread which I have attempted to clone. This is the closest I can come to it and it is a very nice version though not as great as the original. As usual, the best ingredients make the best bread so get the best olives you can find - it really makes the difference.

4 cups white bread flour
1 1/3 cups water (Iukewarm)
1 teaspoon sugar
1 teaspoon salt (can add a bit more if you like)
7 -8 g dried yeast
1 1/2 tablespoons olive oil
2/3 cup kalamata olive (not the sliced ones)
2 slices onions (around 2 tbs)
1/2 teaspoon oregano
1 garlic clove (pressed)
1 teaspoon tomato paste
black pepper

Steps:

  • First prepare the onion. Sprinkle the slices with salt and allow to sit for 5 minutes. Then rinse and squeeze to drain. The onion will be softer and not as sharp tasting. Finely chop, you should have around 2 tablespoons.
  • Pit the olives with a sharp knife and roughly chop.
  • Add the olives, chopped onion, oregano, garlic and tomato paste together and grind in a little black pepper to taste.
  • Set the bread machine on the basic cycle which is around 3 hours.
  • Add the remaining ingredients into the bread machine in the order recommended by the manufacturer, (mine is liquid first then solid) and then add the olive mixture at the beep for extras.
  • Bake with a medium crust or dark if you like it that way.
  • This bread is wonderful with a Greek salad or spread with tarama or eggplant dip.

2 tablespoons water
1 tablespoon vegetable oil
3 cups bread flour
2 tablespoons sugar

1 1/4 tablespoons bread machine yeast
3/4 cup olive, pitted and coarsely chopped

Steps:

  • Place the ingredients, except olives, in the bread pan in the order recommended by your machine's manufacturer.
  • Process on the appropriate cycle.
  • Add olives at the raisin/nut signal or 5 to 10 minutes before last kneading cycle ends.
  • I prefer to make it with the dough cycle; shape it in 2 loaves and let is rise for 30 minutes.
  • Bake in a pre heated375* oven for 30 minutes.
  • Option:.
  • Add 1 1/2 cup old or sharp shredded cheddar cheese with the flour for a Cheese Olive Bread; fantastic.
  • Tip:.
  • For my bread to rise, I heat 2 cups of water in microwave for 5 minutes; this creates steam. Leave water in microwave. Sit your bread in microwave OFF for 30 minutes.Your bread will rise really nice.

1/2 c red wine
1/2 c shortening
1/4 c olive oil, extra virgin
3 Tbsp wildflower honey
DRY INGREDIENTS
3 3/4 c bread flour
1 tsp kosher salt
2 Tbsp chopped garlic
1 c parmesan cheese
2 sprig(s) rosemary sprigs
1 small bundle of dill
